  • ishkhan or river trout- 1 PC.
  • pita bread - 2 sheets
  • onions - 1 head
  • lemon - 1/2 pc.
  • dill - 1 bunch
  • butter - 80 g
  • salt - 1 tablespoon
  • black pepper, coriander, other spices - to taste.

Cooking method

Note to the hostess:

  • Ishkhan in pita bread can be served as a separate dish or supplemented with an omelet with tarragon, rice. To that an exquisite dish I recommend serving as a side dish.
  • When serving, the trout can be garnished with fresh tarragon, pomegranate seeds, and poured over sweet and sour sauce narsharab.

  • Translated from Armenian, ishkhan means prince, lord. It is the largest trout found throughout the former Soviet Union. Ishkhan is an endemic species of Armenia, but it was artificially relocated to the Kyrgyz Lake Issyk-Kul, where it successfully took root.
