    • Let's start by making mitlof. We will form a meatloaf, but we will not send it to the oven, but set it aside. I recommend sending it to be baked an hour before the start of the feast, so that it would be hot. 20 minutes.
    • We take out the cake, decorate with yogurt. I buy ready-made sugar figurines in the form of snowflakes or decorate as in the recipe. 15 minutes.
    • We drain the liquid from olives, mozzarella, make a snack on skewers. I recommend assigning this part to children, then you will spend 5 minutes.
    • Place the fish paste on the crackers. We decorate. 10 minutes.
    • Cooking mayonnaise, seasoning Olivier. 10 minutes.

As you can see, it will only take you an hour to cook on December 31st. If you want, you can form a mitlof in the morning, put it in the refrigerator. This will further shorten the preparation time before the holiday.

If you have a little more time, you can bake a truffle cake. He's really amazing. Cakes for him can be prepared 3-5 days before the holiday. If you have 1-2 more guests, pick up some more New Year's salads.

Menu for a company of 8 people


If you are going to celebrate with a big company, you want to surprise your guests and not inflate your budget. Therefore, I have made a relatively budget menu. The main thing with this option is not to cook many dishes, but simply increase the amount of each. You can also ask for help with the preparation of one of the guests. Either ask to bring some of the salads or cake with you. The main emphasis in this menu is made not only on its budget, but also on the fact that on the 31st you only need to put the finishing touches. And you still only spend an hour cooking. I quite boldly suggest that you include barley salad instead of the usual Olivier in the New Year's menu for the company. And for those who do not recognize salads with mayonnaise - potato salad. It can also serve as a kind of side dish. The number of ingredients for the salad does not need to be increased, each guest will get it. but make boiled pork from a piece of meat at the rate of about 150 grams per person. For a sweet end to the evening, I suggest buying tangerines and sweets for the cake. The recipe gives you a cake for about 8 people.

Cooking plan:

  1. In 3-4 days. We bake cakes for the Pincher cake. I draw your attention to the fact that for such a large company you need to take a double portion of the recipe ingredients. We are also engaged in cakes for a mushroom cake snack.
  2. December 30th.
    • Boil vegetables for a hamsa snack and salads.
    • We cut the salads, but do not put onions in them and do not season.
    • We clean the hamsa (anchovies) and put them in a glass container with a lid. Sprinkle the hamsu lightly with oil so that it does not dry out.
    • Marinate the boiled pork.
    • Making the cake cream and finishing the Pincher cake.
    • We collect a snack cake with mushrooms.

    On this day, you will spend about 4 hours cooking. Therefore, I once again recommend that you invite helpers or entrust the preparation of some of the dishes to guests.

  3. 31th of December. We will cook in less than an hour!
    • Put the boiled pork in the oven 2-3 hours before the meal. She will have time to cook and walk and cool a little in the oven. 10 minutes of clean time. Don't forget to set a timer on your oven or phone to turn off the oven.

Fasting and Vegetarian Menus


I have combined these two menu options into one. Those who observe the Fast may not celebrate the New Year at all. But still, many celebrate it symbolically. Vegetable cabbage rolls can be prepared a couple of weeks before the holiday.

Cooking plan:

  1. A week before. Cooking vegetable cabbage rolls. We keep it for 3-4 days at room temperature and put it in the refrigerator. Cabbage rolls are prepared in general for about an hour or two, depending on your ability to roll stuffed cabbage rolls.
  2. In 3-4 days. Cooking lean cookies with marmalade. Let the finished cookies cool and put them in an airtight box. The total cooking time is about 1.5 hours.
  3. 31th of December.
    • Let's start by preparing the salad. If you use attachments for a meat grinder, food processor or blender to grate vegetables, everything will take about 15 minutes. If there are no attachments, to speed up the process, ask for help to grate the vegetables of the children or your husband.
    • Cooking risotto. About 40 minutes. Do not forget that this is a dish that needs to be constantly stirred.

If you prefer, replace the cookies with a lean cinnamon and almond roll. If you can eat fish on this day or you want to replace some of the recipes, look at the recipes for Lent. On Christmas Fast 2014-2015, on December 31, you can eat fish, but on January 1 - only hot dishes with vegetable oil. Many people believe that in addition to fish, you can eat all kinds of seafood, so perhaps you can include salads with them in the New Year's menu for fasting. And recipes for salads with shrimps will come in handy, almost any can be seasoned with vegetable oil.

What will I cook for the New Year's table

Everything is simple with my New Year's menu. I will celebrate the New Year with my family - my husband, daughter, parents and our godfather. I really hope that this year he will not come by himself. As a basis for the menu, I will take the above menu for the new year for a family of 4 people. Just calculate the amount of mitlof so that it would be left for breakfast. For each person, I will count 200 grams of pork (raw, before processing) for New Year's Eve. + 200gram * 3 for a brunch or rather lunch January 1st for me, husband and daughter. Plus I will add one more salad, because adults will be 5-6 people + 12 year old daughter. What's left of the salads will also be for brunch the next day.

If unexpected guests come running in, I will have fruits, sweets, something for cold cuts and cheese, pickled plums, cucumbers, tomatoes - in general, something that can be put on the table very quickly as a light snack. Because from experience - after 12 at night, guests come from the table and don't eat much. And I don't want to cook a lot.

This is the approximate amount of food that one person will eat at the New Year's table. If you do not want to calculate for each type of dish separately, focus on an average of 500 grams of food for a man and 350-400 grams for a woman. If there is alcohol, then we increase the number of cold snacks (I have already increased). Remember that this is night, heavy meals will create a feeling of heaviness. And instead of New Year's fun, you risk sitting in a corner on an armchair, dreaming of mezima. Count the dessert and fruit separately.

Cold snacks - 100-200 gr. (cheese, vegetable and meat cuts, fish, mushrooms)
Salads - 200 gr.
Hot dishes - 200-250 gr.

1 shrimp salad

1/2 head of Chinese cabbage

300 g peeled cocktail shrimp (king prawns will not work!)

Preparation:

Chop the cabbage (without the white part), finely chop the sticks (almost into dust), finely chop the pineapples.

Combine shrimp, sticks, cabbage, pineapple and pomegranate. Season with mayonnaise

2. Neptune salad

Ingredients: shrimp-300 gr squid-300 gr crab sticks-200 gr (can be replaced crab meat) 5 eggs 130 gr. red caviar mayonnaise Preparation: 1. Boil the eggs, cool, separate the white from the yolk, cut the white. The yolk can be kept for garnish. 2. Cook the shrimp in lightly salted water. 3. Then we throw the squid into the boiling water, after cutting it into rings. 4. Cut the crab sticks. 5. Now add a couple of tablespoons of mayonnaise, mix, and only then add red caviar (so as not to burst). 6. Salt-pepper to taste, but I advise you to salt it. caviar and mayonnaise can provide enough salt.

3 smoked chicken salad with potatoes

Ingredients: 150 g smoked chicken

3 potatoes

1 carrot

2-3 pickles

2 tbsp mayonnaise

1 bunch of green onions

canned peas -

salt and pepper

Cooking method:

Pre-boil potatoes and carrots. Cool and clean.

Boil eggs, cool, peel and chop finely.

Dice potatoes and carrots.

Also cut the cucumbers into small cubes.

Mix potatoes, carrots and eggs. Add diced chicken and peas

Season with salt and pepper. Season with mayonnaise and mix everything.

Sprinkle with finely chopped green onions

4. Squid salad with egg and corn

Squid - 1kg

Egg (boiled) - 4 pcs.

Bulb onions - 3 pcs.

Corn (canned) - 1/2 can

Walnuts(peeled) - 3-4 tablespoons

Vegetable oil - 1 tablespoon

Mayonnaise - optional.

Cooking method

Dip the squid in boiling salted water for 5 minutes, peel and cut it into strips. Also cut the eggs into strips (I use an egg cutter - the size is just right).

Chop the onion smaller and simmer in vegetable oil until it begins to turn yellow (do not fry). Squeeze the oil with a spoon before putting the onion into the salad if you are planning to dress it with mayonnaise. You can leave the oil, then it is not necessary to season with mayonnaise.

5. Snack "Cheese balls with grapes"

blue cheese with mold (room temperature) - 100 g,

creamy or cottage cheese(room temperature) - 100-150 g,

a bunch of large sweet grapes (red or green),

pistachios (peeled) - 120 g

Wash the grapes, dry and disassemble the bunch into berries.

Carefully make an incision in each berry and remove the seeds.

Put the "Dor Blue" cheese into a bowl, add cream cheese and mix well.

Tighten the cheese bowl cling film and put in the refrigerator for 40-60 minutes (the cheese mass will thicken in the refrigerator).

Chop the pistachios with a knife or chop in a blender (not too finely chopped).

Gently stick the cheese mixture over each grape so that you get a ball.

Dip the ball in chopped pistachios.

Arrange the cheese balls on a platter, tighten with cling film and refrigerate before serving.

6 RED CAVIAR TARPETS

INGREDIENTS

Tartlets - 11 pcs;

Cream cheese - 150 grams;

Red caviar - 120 grams;

Eggs - 4 pcs;

Dill - a small bunch;

Mayonnaise to taste.

Finely chop the dill, grate the egg whites, mix with the melted cheese and add a little mayonnaise.

Fill the tartlets with the resulting mass.

Top with red caviar

7.New Year's snack

300 gr. lightly salted salmon (or trout)

350 gr. Philadelphia cheese

1 tbsp gelatin

100 ml cream 20% fat

Mix the cream, gelatin and leave for 5-7 minutes to swell the gelatin.

Heat the water almost to a boil. Put the container with gelatin and cream in hot water, stir to dissolve the gelatin completely.

Finely chop the dill.

Combine cheese, dill and cream.

Cover the shape (I have 20x10x10) with cling film so that the edges hang down by 10 cm.Put the fish pieces overlapping.

Lay out half of the creamy filling.

Put on a layer of fish.

Spread out the remaining half of the cream filling.

Put the fish pieces.

Bend the edges of the film so that the fish is completely covered. Refrigerate for 3-4 hours. Before serving, cut the roll into slices 1-1.5 cm thick.

8.Cheese "Rafaello"

processed cheese - 200 g,

butter - 200 g,

garlic - 2 cloves,

olives - 1 jar,

crab sticks - 1 pack

Grate curds and cold butter on a coarse grater.

Pass the garlic through a garlic extractor.

Stir the curds, butter and garlic until smooth.

From the resulting mass, make small balls and knead each ball so that you get cakes.

Place the stuffed olive in the center of the flatbread and join the edges of the flatbread so that the olive is inside the flatbread.

Put the grated crab sticks on a plate and roll the finished balls in them.

9 cod liver lava roll

Thin lavash - half large or 3 small round

Cod liver - 1 jar (190 g)

Boiled eggs - 2 pcs.

Chopped parsley - 2 tbsp spoons

Green onion - 1 onion feathers

Hard cheese - 125 g

Mayonnaise - 3 tbsp. spoons

Ground black pepper

For the filling, three eggs and cheese on a coarse grater. Finely chop the greens. Drain the oil from the liver, and chop the liver with a fork. We mix everything, add mayonnaise, salt and pepper to taste.

We spread three small pita bread with an overlap. So that they do not delaminate later, they can be lightly greased with mayonnaise.

Put the filling on the pita bread and roll it tightly into a roll. The roll turned out to be long and I cut it in half. Wrapped each half in foil and put the pita roll in the refrigerator.

Before serving, cut the lavash roll into pieces and place on a plate.

10 trout with caviar sauce

Ingredients

Lemon juice

Trout (or salmon) fillet - 400 grams

Olive oil - half a teaspoon

For the sauce:

Red caviar - two teaspoons

Cream 22% - 100 milliliters

Dry white wine - one tablespoon

Trout fillet must be cut into two portions.

Season a little, season with salt, sprinkle lightly with lemon juice on top.

It is necessary to preheat the oven to 170 C. A baking dish should be slightly greased with olive oil and prepared pieces of fish should be placed in it.

Pour some water on top, carefully cover the tin with foil on top and place it in the oven for about 15–20 minutes.

To prepare the sauce for such fish, it is necessary to carefully pour the wine into a saucepan, then, stirring thoroughly, add the prepared cream

Not really high fire stirring constantly, bring the resulting mixture to the formation of a rather thick mass. Salt and pepper a little.

Remove the cooked sauce from the heat, add the caviar to the slightly warm sauce and mix everything gently so that the eggs are evenly distributed in the sauce.

Carefully transfer the prepared fish to plates and pour over the prepared sauce.

Chicken "Stump"

Baguette - 1 piece

Chicken fillet - 500 g

Bulb onion - 1 piece

Garlic - 1 tooth

Champignons - 6 pieces

Cream (20%) - 5 tbsp. l.

Tomato - 1 piece

Cheese - 100 g

Sour cream - 2 tbsp. l.

Vegetable oil (for frying)

Butter (for frying)

Spices (thyme, basil, parsley, marjoram) - 0.5 tbsp. l.

Salt (to taste)

Black pepper (to taste)

Chicken fillet (it is better to take the meat from the thigh, it will be juicier), you can grind it in a meat grinder, but I chopped it finely.

Cut the peeled onions into small cubes and fry in a pan with the addition of vegetable oil until golden brown.

Cut the bar across into several pieces of 5 centimeters. Remove the crumb gently with a sharp knife.

Mix the minced chicken with fried onions, add spices, garlic, salt, mix and stuff the loaf with this mixture.

Peel the champignons, cut into thin slices.

Fry in vegetable oil + butter until golden brown, add cream, a little salt and simmer a little.

Pour the kernels over with mushroom sauce.

Chop the tomato, put on the mushrooms and pour over the sour cream

Grate cheese and sprinkle on top.

Bake in the oven at 200-220 * C for 25-30 minutes.

12 potato gratin

1 kg of potatoes

100 g sour cream

2 cups cream

2-3 cloves of garlic

1/4 tsp nutmeg

salt and pepper

Peel the potatoes, cut into thin slices.

Place the potatoes in a fish scale-like shape. Season each layer with salt and pepper.

Chop the garlic finely. Add it to the cream. Mix well.

Lightly beat the cream with sour cream, add a little salt and add freshly ground nutmeg.

Pour cream over the potatoes and sprinkle with grated cheese.

Preheat the oven to 200 C degrees. Bake for about 1 hour.

13. "Esterhazy" cake

For the test:

¼ cup condensed milk

How to cook:

2. For the cream, combine milk and cream in a saucepan and bring to a boil. Mix the yolks with sugar and temper the mixture with hot milk. Cool it down. Butter whisk with condensed milk and add to the custard. Spread the cream on the cakes.

3. In a water bath, melt the white chocolate and mix with the cream. Cover the surface of the cake. Melt the dark chocolate and apply the spider web pattern to the cake. Sprinkle the sides of the cake with almond petals.
