Baked squid with cheese. How much to bake squids

Good day, dear chefs! Recently, my mother had a birthday, and I decided to diversify the holiday menu. I prepared an unusual appetizer - stuffed squid in the oven. I chose the dish because it can be prepared quickly and easily. Moreover, it turns out to be very light and delicate in taste - the very thing for a festive table. And I was right with the treat! All the relatives really liked it. So I had to share the recipe for such squid several times in the evening 🙂

These seafood is high in protein. They will perfectly fit into an everyday meal, as an addition to the main course. Squid meat tastes tender, slightly sweet. They cook very quickly, literally 1-2 minutes in boiling water. If you cook them for too long, they get "rubbery" and tasteless.

The variety of fillings for stuffing is huge: with a variety of vegetables, mushrooms, potatoes, eggs, cereals, and other seafood. All of them can be used individually or combined with each other. And if you stuff them with vegetable filling, they are perfect for those who look after their figure and health. So, I'm sure that you can choose the filling to your liking, because the options are limited only by your imagination.

How to cook stuffed squid with rice, mushrooms and egg in the oven?

It was according to this recipe that I prepared an appetizer for my mother's birthday, and then provided all my relatives with it 🙂 It is simple to perform and very tasty. All the ingredients for the filling can be found without any problems, probably in any kitchen. And instead of purchased champignons, it is quite possible to use your homemade mushroom preparations.

What is necessary:

  • 1 kg of squid;
  • 1 carrot;
  • 1 onion;
  • 2 boiled eggs;
  • 2 - 3 tbsp rice;
  • some salt and pepper;
  • 150 g of mushrooms;
  • 100 g of cheese;
  • sunflower oil for frying.

How to do:

1. Prepare the squid: defrost, rinse and remove the entrails.

2. Boil the rice until half cooked, cut the boiled eggs into large cubes.

3. Chop mushrooms and onions into pieces, and grate the carrots on a coarse grater.

4. Fry the onion in a pan with heated vegetable oil for 3 minutes. Then add carrots to it and fry for another 5 minutes.

5. Add mushrooms to the pan with vegetables and simmer everything together for another 3 minutes. Then remove from heat.

6. Place the gutted carcasses in a saucepan with boiling water and cook for no more than 5 minutes. After the indicated time, take out the squid. If they have skin on them, douse them with ice water and the skin will come off easily.

7. For squid, cut off the tails and chop into small, thin strips. From the carcass, you should get a kind of "pipe" for stuffing.

8. Add grated cheese, rice, eggs and chopped squid strips to the cooled mushroom and vegetable filling. Stir, salt and pepper. You can add some of your favorite spices if you like.

9. Then stuff the pipes quite tightly with the resulting filling. Transfer them to a baking dish. Place the remaining filling between the carcasses. Place the dish in an oven preheated to 180 ° C. Bake for about 30 minutes.

Rice in the filling adds satiety to the dish, but at the same time makes it more high-calorie. If you are trying to lose weight, you can make the filling without it by adding more mushrooms and onions. The taste from this will only become more intense 🙂

Squid (stuffed) in the oven: recipes for preparing original dishes

If you want to feed your household members hearty and tasty or set a rich festive table, then we suggest using this recipe.

You can stuff squids with different ingredients. Someone uses ordinary vegetables for this, someone uses various cereals, and someone uses fresh or pickled mushrooms. We decided to combine all the listed products and make a hearty dish.

So, to cook squid stuffed with rice and mushrooms, you need:

  • long grain rice - about 170 g;
  • fresh mushrooms - 350 g (it is recommended to purchase medium-sized champignons);
  • large white onions - 2 pcs.;
  • sunflower oil (use refined) - a little (for frying ingredients and lubricating the mold);
  • chopped pepper and salt - optional;
  • low calorie mayonnaise - about 150 g;
  • coriander, basil, dill and parsley (dried) - use to taste;
  • juice of one lemon.

Preparation of the filling

Before cooking stuffed squid, you need to make a fragrant filling. For this we decided to use long grain rice and fresh mushrooms. These ingredients go well with each other and make the dish hearty and tasty.

To prepare lean stuffed squid, the groats are sorted well, laid out in a sieve and thoroughly washed in warm water. At the same time, the rice is strongly kneaded with hands so that all the dirt is gone and it becomes as transparent as possible. It is recommended to boil cereals for the filling in salted water. Bring the liquid in a saucepan to a boil and then spread the rice. Cook it, preferably until half cooked. Finally, it will become soft in the oven. After cooking the cereal, it is thrown into a fine sieve, washed well in cold water and left to drain all the liquid.

After boiling the rice, you can start processing the mushrooms. Fresh champignons are thoroughly washed, unnecessary elements are cut off, and then chopped into small cubes. Onions are processed in exactly the same way. They are necessary in order for the stuffed lean squids to be as aromatic and tasty as possible. After processing vegetables and fresh mushrooms, they are laid out in a saucepan with butter and fried until golden brown. Subsequently, pepper and salt are added to the ingredients.

At the end, spread the fried mushrooms and onions to the previously boiled cereals and mix well. If desired, you can additionally add dried basil, dill, parsley and coriander to the filling. With them, the dish will turn out to be more fragrant.

We process frozen squid

Before cooking the squid stuffed with rice and mushrooms, they should be completely defrosted. Seafood is thoroughly washed in warm water, all available films are pulled together and boiled. Squids are dipped into boiling liquid for only a couple of minutes. Otherwise, they will turn out to be "rubbery", and it will be quite problematic to chew them. Finally, sprinkle the prepared seafood with lemon juice and set aside for ¼ hour.

We form an unusual dish from squid carcasses

Squids stuffed with mushrooms and rice groats are very satisfying and nutritious. This dish is surprisingly simple to prepare.

After the filling of mushrooms and cereals is ready, you should start stuffing seafood. To do this, previously cooked minced meat is placed in boiled squid. The filled products are flavored with a small amount of mayonnaise (you can use sour cream) and spread in a deep mold, greased with butter.

Heat treatment in the oven

After all the squid stuffed with mushrooms and rice groats are placed in a baking dish, they are placed in a preheated cabinet. They are not baked too long, otherwise, as we said, the seafood will become tough. A squid dish is considered suitable for consumption after all the stuffed products are slightly browned.

How to serve at the dinner table?

As you can see, stuffed squid in the oven cooks relatively quickly and easily. After browning the seafood, carefully remove it from the oven and immediately transfer it to a plate. Having poured the squid with any sauce and sprinkled with fresh herbs, they are cut into thin pieces and presented to the table. In addition to the dish, a side dish of potatoes or pasta is served, as well as a slice of white bread. Bon Appetit!

Step by step cooking squid stuffed with cheese and herbs

If the taste of baked squid with rice and mushrooms does not suit you, then they can be stuffed with other products. Moreover, they are ideally combined with practical ingredients of any kind.

What else can you cook squid (stuffed) with in the oven? Recipes for such dishes involve the use of completely different components. The most popular of these is hard cheese. With it, baked seafood is more nutritious and tender.

So, to make squid stuffed with cheese, we need the following ingredients:

  • large frozen squids - about 900 g;
  • spicy pickled mushrooms - 150 g;
  • fresh herbs (parsley, green onions and dill should be used) - in a large bunch;
  • garlic cloves - 2 pcs.;
  • sunflower oil - a little;
  • large eggs - 2 pcs.;
  • hard cheese - about 400 g;
  • salt and crushed pepper - apply at your discretion;
  • fat sour cream - about 150 g;
  • juice of one lemon.

Making the filling

Before cooking stuffed squid, you should process all the stuffing products. Pickled mushrooms are completely deprived of the brine, and then chopped into small cubes. Grated garlic cloves and a little sunflower oil are added to them. Rub hard cheese and boiled chicken eggs on a large grater and add to the mushrooms. Fresh herbs (parsley, green onions and dill) are also washed well. After grinding, it is laid out in a common container. All ingredients are flavored with spices and sour cream, and then mixed thoroughly. At the end, a very aromatic and rather viscous filling is obtained, which is immediately used for its intended purpose.

Boiling squid

As in the previous recipe, the seafood is completely defrosted before cooking. Raw squids are washed thoroughly and all unnecessary films are removed. Subsequently, the processed carcasses are dipped in highly boiling water. Seafood is cooked for no more than three minutes. If you keep the squid a little longer, then chewing them will be problematic. The boiled carcasses are completely cooled, and then sprinkled with lemon juice and left aside for ¼ hour.

The process of forming and baking products

Stuffed squid cooks fairly quickly in the oven. But before you send the products to a heated cabinet, they should be properly stuffed.

The processed carcasses are opened, and then a few tablespoons of the filling are placed in them. The stuffed squid is carefully greased with fat sour cream, wrapped in foil, placed on a baking sheet and sent to a preheated oven. Stuffed squid should be cooked at a temperature of 190 degrees for ¼ hour.

Serving an unusual seafood dish to the table

After baking the squid, they are removed from the foil and laid out on a flat plate. After seasoning the seafood with any sauce and herbs, you should add a side dish to them and immediately serve to the invited guests. In this case, the carcasses are recommended to be pre-cut into thin pieces.

Ready-made squids with aromatic cheese filling are very high in calories. Under the influence of high temperature, the solid dairy product melts well and its taste becomes very delicate.

Let's summarize

The process of cooking stuffed squid at home does not require a lot of free time, special culinary skills, as well as rare, expensive ingredients. Despite this, such a dish turns out to be very tasty and beautiful. Stuffed squids look very unusual and will decorate any table. This recipe should definitely be noted for those who like to surprise and satisfyingly feed invited guests.
