Carrots are best to choose sweet varieties, for example, "punisher". It has a darker orange tint and a higher sugar content. Due to this, you can reduce the amount of white sugar in the dough. Unsweetened carrots can be slightly bitter, which will not have the best effect on the taste of the finished baking.

Cooking method

Basically, recipes for oatmeal flakes cookies involve the use of ordinary white flour. It does ready-made pastries softer, more homogeneous, but also increases its calorie content. So, the preparation of homemade oatmeal cookies is as follows:

  1. First prepare the carrots. It must be peeled and dark spots, and then chopped on a fine grater or with a blender. If you puree the carrots, the oatmeal cookies that we offer will turn out softer and more uniform without interspersing pieces of carrots.
  2. Now raisins are added directly to the puree. First, it must be steamed in boiling water and left to swell for about 15 minutes. From this, the raisins that are used on oatmeal cookies will be softer and juicier. Mix it with carrot puree.
  3. Add to this mass vegetable oil odorless, honey and nuts. You can use absolutely any nuts, in our recipe these are walnuts, but you can use hazelnuts, cashews or peanuts. They must first be dried in a dry frying pan or baking sheet in the oven, and then chopped with a rolling pin or in a blender. Mix everything thoroughly until a homogeneous consistency.
  4. Now it is necessary to fill in this thick carrot mixture with oatmeal flakes. Before doing this, the flakes can be ground in a coffee grinder or blender. Our recipe uses #3 flakes, so they can be left whole. Leave the resulting mass for half an hour to swell the flakes.
  5. After half an hour, mix the mass with baking powder and one glass of premium flour. You should get a bright, slightly sticky dough, quite dense. In the process of kneading ordinary wheat flour, try not to add more than what is indicated in the recipe, otherwise the dough will not rise well during baking.
  6. Now you need to form a Herculean dessert. To do this, lightly moisten your palms with water, pinch off small walnut-sized balls from the total dough mass, roll up a tight ball and flatten it slightly on the work surface. Now dip one side of the workpiece in sugar or powdered sugar, and transfer the other side to the covered parchment paper baking sheet. In the process of laying out, leave small gaps between the balls with oatmeal flakes.
  7. Bake at 180 degrees for about 15-20 minutes until the top is golden brown.

According to this recipe, you can also make oatmeal cookies with apples based on hercules flakes, add pumpkin and other fruits instead of carrots. In addition, pastries can be made entirely with honey without the usual sugar if you are on a diet. Before you make such fragrant cookies, preheat the oven in advance. This way, the baked goods will not lose their juice, which is present due to the addition of grated carrots, and remain slightly moist and juicy inside.

Mineral-rich carrot cookies are inexpensive. Cookies are suitable both for regular tea drinking with the family, and as a dessert for diet food. The bright colors appeal to children who simply need the vitamins found in oatmeal and carrots.
