Deliciously tasty, tender and cookies, cooked with fruits, such a treat will appeal to all sophisticated sweet tooths. It is served cold, and you don't have to bother with the recipe and with cooking in general. In advance, you need to prepare a form with a diameter of 25 cm and cling film to successfully shape the dessert.

Ingredients:

  • shortbread cookies - 400 g;
  • cottage cheese - 600 g;
  • sour cream - 200 ml;
  • gelatin - 1 tbsp. l .;
  • water - 50 ml;
  • orange - 2 pcs.;
  • pineapple - 100 g;
  • sugar - 100 g;
  • mandarin - 3 pcs.;
  • banana - 1 pc.

Preparation

  1. Soak gelatin in water for 40 minutes.
  2. Cover the baking dish with plastic wrap.
  3. Cut one orange peeled from the peel, cut into circles, lay out over the entire form, including the walls.
  4. Beat the cottage cheese with sour cream and powdered sugar.
  5. Warm up the gelatin until the granules dissolve. Pour into cottage cheese, mix thoroughly.
  6. Peel and chop any remaining fruit, add to curd cream, mix.
  7. Break the cookies not finely, pour into the cream, stir.
  8. Pour all the filling into the pan over the oranges.
  9. Refrigerate for 8 hours.
  10. Turn over onto a dish, carefully remove the foil.

For sand base:

  • 220 g cookies like Jubilee or Strawberry
  • 100 g butter

For curd filling:

  • 500 g cottage cheese
  • 200 g sour cream 20%
  • 150 ml milk
  • 100 g sugar
  • 35-50 g butter (you can skip it if the curd is fat and soft)
  • Sachet vanilla sugar
  • 1 tablespoon edible gelatin

For tangerine jam:

  • 6 medium-sized tangerines
  • 100 g sugar
  • 3-4 tablespoons of water

Curd cake without baking, recipe

Grind the cookies in a blender or by hand into small crumbs (literally grind them into powder). We mix (with our hands!) The crumb with butter until a single fat lump is formed and put it in a split form or any wide cylinder on a plate. I cut off the bottom at the lid of a cake with a diameter of 18 cm (I am saving up such crap for seedlings) and used it with great comfort. It is necessary to evenly distribute the dough along the bottom and walls of the mold.

You should get such a thin-walled nest with sides (sides are 5 centimeters high, give or take). We put it in the refrigerator for 25 minutes or more.

Pour gelatin into the milk, mix and let it stand for 10 minutes, after which, in a small saucepan, heat this mixture over low heat with constant stirring until the gelatin is completely dissolved. Do not bring it to a boil! Remove from the stove, pour into another container. Let it cool down, let's start filling.

Mix the softened butter, sugar, sour cream with a mixer, add cottage cheese and mix again at maximum speed for 6-7 minutes, until the slightest curd lumps disappear completely. Such a delicate smooth mass is formed.

Pour gelatinous milk into the curd cream in a thin stream, stir gently with a spoon and pour this mixture into the chilled "nest" of cookies. We put the future cake in the refrigerator for at least 5-6 hours, or better for the whole night. The gelatin should set properly.

For decoration, you can use melted chocolate and much more. I made tangerine confiture - it's delicious not only with the cake, but in itself.

Mandarin confiture. In a small saucepan, crush the juice of one tangerine, add water and sugar, cook the syrup, boil it for about 5 minutes. Put the rest of the tangerines in circles in the syrup, bring to a boil and turn off. After an hour, bring it to a boil again and turn it off. And so on 2-3 more times. Let cool completely. Pour each piece of cake separately with this piece. The peel of tangerines is not bitter at all, do not be afraid.

Our curd cake without baking is ready, it remains to carefully remove the walls of the form. If they are metal, you can first very gently run a ceramic knife from the inside along the side. With plastic things like a cake lid, everything is much simpler, they can be easily removed by themselves (remember how in childhood they made sand cakes with a bucket - that's the same thing).
