Flavonols are similar in structure to flavan-3-ols with only a couple of minor differences. Significantly enough, flavonols do not contribute to the bitterness of wine like flavan-3-ols. Flavonols have antioxidant properties, but research shows that they are present in red wine at too low a concentration to be considered a good source of antioxidants, at least when compared to other natural sources such as yellow onions or tea. However, they help give color to red wine by forming complexes with the previously mentioned anthocyanins.

Aged wines give a feeling of fullness of taste, they completely lack the excessive astringency and roughness of the bite of young wines, which are overly saturated with tannins. Therefore, if the wine is consumed young, the contact of the wort with the pulp is limited.

It is characterized by an increase in the level of male hormones and insulin in the body. Resveratrol, a natural ingredient and powerful antioxidant found in red wine, grapes, raspberries, and peanuts, appears to help address this hormonal imbalance, the researchers believe.
