Preparation

First, let's make the custard, because it has yet to cool down. Stir all the lumps with a whisk and put on low heat. Bring the custard until thick, stirring constantly. Usually, with the appearance of the first signs of boiling (gurgle), it can be removed from the heat. We set to cool, also stirring occasionally.

While the cream is cooling, you can start baking the cakes. With only one baking sheet, I have to wind up the dough twice. Each time on one sheet I get 4 cakes with a diameter of 16-17 cm. As a result, I have 8 full-fledged and one nedokorzhik, which is quite suitable for dusting. If you have 2 sheets, you can immediately cook the full amount without dividing it by 2 times.

So, we separate the whites of 4 eggs and put them in a beating container, which, of course, must be clean and dry. Ingestion of the yolk in the protein substance is unacceptable for this recipe. We put 2 yolks in a separate bowl, we do not need the remaining 2 yolks. Pour sweetener and starch into the yolks. Please note that an erythritol-based substitute is what you need to get crumbly, not gummy cakes, but sweeteners also come in several variations. In terms of consistency, the cream should resemble condensed milk, so you should not expect too thick fudge.

We cool our impregnation on an ice pillow or in a basin of cold water to room temperature and begin to soak the cakes. When one cake remains, then crush it, coat the cake on all sides, and sprinkle with crumbs on top and sides.

The cake must soak overnight in the refrigerator and only then can it be served.

But not only starch can make a low-calorie napoleon, this recipe contains such a miracle as bran. They are very useful for proper nutrition and can be found in the diet section of most supermarkets.

Ingredients:

  • Bran - 100 gr.;
  • Flour - 4 cups;
  • Refined vegetable oil - 1 tablespoon;
  • Boiled water, cooled down - 1 glass;
  • Salt - 1 pinch;
  • Soy milk - 2 cups;
  • Sweetener;
  • Vanilla sugar - 1 sachet.

We begin to cook Napoleon by boiling the cream, as it cools down for a long time.

Pour soy milk into a saucepan, add sweetener and vanilla sugar, and cook over low heat. When the milk begins to boil, pour half a glass of flour with half a glass of water and mix well. Pour this mixture gently into sweetened milk. Mix again and cook for another five minutes, then remove from heat and set to cool. The first couple of minutes in a bowl of ice water, it is better to stir the fondant so that it does not stick to the hot walls and bottom of the pan.

To do this, mix everything dry - salt, flour and bran. Add odorless vegetable oil and the remaining water, you should get a rather thick, but elastic dough.
