The best thanks - to quote the entry;)

Easter is a big and bright holiday for all Christians. And that's why we always have a special relationship with him. Already from Friday, on the eve of the holiday, it is necessary to cook and put it to infuse in the refrigerator, and on Saturday from the very early morning it is necessary, yes. In order to have time to bring both that and another to the church, to consecrate, as it should be in the Christian tradition.

And in addition to these main treats for the holiday, on Sunday you need to prepare an Easter lunch or dinner. If the whole family can gather at the table at this time, it will be just wonderful!

There will just be an opportunity to congratulate each other on this day, to take Christ, that is, to kiss three times and break Easter bread or Easter cake together.

In today's article I want to offer you holiday menu, that is, those dishes that can be prepared for the arrival of guests on this Bright Sunday of Christ. All of them are not very complicated, they are prepared quickly, easily and simply. They can be prepared both for the holiday and later, and on weekdays.

For any holiday, each hostess draws up a menu in advance, while trying to take into account the status of the event, the preferences of guests, her personal skills and abilities.

Today we are compiling the menu for the Easter table, and therefore we would like to see salads and appetizers in line with this theme. So what could be included in this list?

In my opinion, it can be anything related to the theme of the holiday, that is, it can be a salad in the form of an Easter egg or a wreath, a rabbit; salads decorated with eggs can be painted with food paint; salads reminiscent of the arrival of spring, that is, with images of flowers, a green lawn and butterflies, or bees, ladybirds on it.

If you even prepare your tried and true favorite salad, then add to it some zest appropriate for the occasion, that is, decorate it in the form of a flower, a sun, or "put" a bumblebee or a dragonfly on it. Or just come up with a name, by all means adding a word that reminds us of such an important day, about the arrival of spring, about the rebirth of nature after hibernation.

Easter bunny salad

We need:

  • boiled eggs - 4 pcs.
  • boiled chicken breast - 1 pc
  • salted or canned cucumbers- 2 - 3 pieces
  • onion - 1 piece
  • cheese hard varieties- 200 gr
  • mayonnaise - 200 gr (or sour cream + mayonnaise 100 gr each)
  • olives
  • Beijing salad
  • salt, pepper - to taste

Preparation:

1. Cut the boiled chicken breast small cubes separating meat from bone. It is better to remove the skin so that the salad does not turn out to be too greasy.

2. Cut the onion into small cubes. So that it is not bitter, you can lightly fry it in vegetable oil, or place it in a marinade of water and a small amount of vinegar for 20 minutes.

But if the taste of fresh onion does not scare you, then you can leave it as it is.

3. Cut the cucumbers into small cubes.

4. Divide the cheese into two equal parts. Grate one of them on a coarse grater, add this part to the salad. And rub the second part on a fine grater and leave for decoration.

5. Separate the egg whites from the yolks. Cut the yolks into small cubes, and rub the whites on a fine grater.

6. Put chopped chicken breast, onion, chopped cucumbers, grated cheese and yolks into a large bowl. Season with salt and pepper to taste, mix and season with mayonnaise, or mayonnaise mixed with sour cream.

Personally, I like the second option, as the salad is lighter and less high in calories. And in my opinion more delicious.

7. Line a large dish with lettuce leaves and put the resulting mass on it, giving it the shape of a rabbit.

8. Sprinkle on top first with cheese, and then with finely grated whites. Thus, we have formed a rabbit coat.

9. Make eyes and socks from olives, and build ears from Peking cabbage leaves.

10. Put the salad in the refrigerator for two hours to cool down.

So beautiful and delicious salad we did it.

Or you can arrange the salad a little differently, where the ears are made of a pink sheet of paper.

By the way, do you know what the rabbit (hare) has to do with Easter? In general, this symbol plays one of the main roles on the holiday in Europe and America. It is he who hides in all sorts of secluded places multi-colored chocolate eggs... And on Easter morning, kids need to find a rabbit's nest to find them and feast on.

In the West, it is believed that a chicken cannot lay such beautiful colored eggs, but just a magical Easter bunny is quite capable of it.

In general, a rabbit (hare) is a symbol of fertility and wealth. And although he is not our Orthodox symbol, let all people on earth have a lot of both.

Easter wreath salad

We need:

  • boiled eggs - 3 pcs.
  • boiled carrots - 2 pieces
  • smoked squid - 200 gr
  • hard cheese - 150 gr
  • mayonnaise to taste
  • greens - for decoration
  • quail eggs- for decoration
  • caviar red, black - for decoration

Preparation:

1. Grate eggs, carrots and cheese on a medium grater.

2. Cut the squid into thin strips. We use smoked squid in this recipe. With them, the salad will turn out to be very aromatic and tasty. But if you did not manage to buy such squids, then you can take and prepare a salad from ordinary ones, which, of course, must be boiled beforehand.

3. Put a glass on a flat plate in the very center and begin to collect the salad in layers around it. Grease each layer with mayonnaise.

4. The sequence of layers is as follows - eggs, squid, carrots, cheese.

5. Top salad can be decorated with black and red caviar, or any one of them. And also do not forget to decorate with greenery, giving it a semblance of a wreath.

6. Put peeled quail eggs in the center. They can be pre-painted with food paint, so the salad will turn out to be even more elegant and festive.

Or you can prepare such a salad using several different ingredients and a slightly different design. And let this video be to help you.

By the way, you can also cook and. The salad is very tasty and worthy to show off on the table for a holiday of any level, including Easter. You can leave the composition of the ingredients in the form in which it is given, and fantasize a little about the design. And in this case, it will become a real decoration of the Sunday festive table.

Fish holiday salad

We need:

  • herring fillet - 150 gr
  • boiled potatoes - 2 pcs.
  • boiled carrots - 2 - 3 pieces
  • pickled cucumbers - 2 pieces
  • boiled egg - 2 pieces
  • apples - 3 pcs.
  • lemon - 0.5 pcs
  • mayonnaise to taste
  • green onions
  • olives, pitted olives - for decoration

Preparation:

1. For the salad, you can use lightly salted herring bought in the store, or you can preliminarily. In this case, you can eat delicious herring, and the salad from home fish will turn out much tastier.

Peel the herring of bones and skin and cut it into small cubes.

2. Cut the pickled cucumbers into small cubes.

3. Grate carrots, potatoes and eggs. Rub the apples on a coarse grater and sprinkle them with lemon juice so that the pulp does not darken. If the apple has a thick skin, then it must first be peeled to make the salad tender.

The lemon can be squeezed directly onto the apples, if the juice remains, the leftovers can be squeezed into the prepared mayonnaise.

4. Prepare a salad bowl and lay out all the ingredients in layers, first herring, then potatoes, carrots, eggs, cucumbers, apples. Smear each layer with a little mayonnaise.

The salad is a bit like everyone's favorite, there is also a herring and there is a fur coat, just not quite familiar. And naturally, such a salad tastes completely different!

5. For decoration, cut olives and olives into slices. Green onions grind. Put a green meadow on the edge of the onion salad bowl, and place two bees in the center, collecting them from olives and olives, alternating cut rings. Cut the wings from the thin part of the cabbage leaf.

Put the salad in the refrigerator for two hours so that all layers are saturated with mayonnaise, then serve.

Orange Sun Salad

Such a salad will certainly cheer up and delight all guests without exception.

We need:

  • smoked chicken breast - 1 piece
  • fresh cucumber - 1 - 2 pieces
  • boiled eggs - 3 pcs.
  • boiled carrots - 2 pcs.
  • cheese - 100 gr
  • mayonnaise to taste

Preparation:

1.C chicken breast remove the skin and bone, then take the pulp into fibers or cut into small cubes.

2. Cut the cucumber into thin small strips.

3. Grate carrots and cheese on a medium grater. And rub some of the carrots on a fine grater to decorate the salad. Divide the eggs into whites and yolks. Rub the whites on a coarse grater, and the yolks on a fine grater.

4. Prepare a flat dish and lay out all prepared foods in layers, coat each layer with mayonnaise.

5. Put chicken meat in the first layer, then carrots, which have been grated coarsely. Put the cucumber on the next layer, then cheese, squirrels and sprinkle with yolks on top.

6. Decorate with the left carrots, cucumber crust, making such a cheerful sunny smiley.

Or you can arrange a salad like this. For the sunshine, we need French fries, which you can also cook yourself by cutting the potatoes into thin strips and frying them in vegetable oil over high heat.

Or come up with your own version of the Sun and decorate the salad to your liking.

I met a version of such a salad where the Sun was inscribed in. The salad is the same, but in the middle there are eyes and a mouth, and instead of rays - chips.

So choose a design of your choice.

Chamomile on the Lawn Salad

We need:

  • pork on the bone - 500 gr
  • smoked bacon - 100 gr
  • sauerkraut - 1 kg
  • onions - 2 pieces
  • carrots - 2 pieces
  • beets - 2 pieces
  • bell pepper - 1 piece
  • tomato - 1 pc
  • canned horseradish - 2 tbsp. spoons
  • parsley root - 1 piece
  • lemon juice - 1 tbsp spoon (or 6% wine vinegar)
  • salt, pepper - to taste
  • sour cream, herbs - for serving

Preparation:

1. Peel one carrot, one onion and celery root and fry the whole in a dry hot frying pan for 4 minutes, turning occasionally.

2. Pour pork on the bone with 4 liters of water, bring to a boil, constantly skimming off the foam as it forms.

3. When there is no foam left, send the whole fried vegetables to the pan, add a little salt, and cook for 1 hour. The broth should not turn out to be too salty, keep in mind that sauerkraut will also be added.

4. Grate the remaining onion and one carrot and the beets. Remove the skin from the tomato, scald it with boiling water and cut into cubes.

5. In a frying pan, in oil, fry the onions with carrots and beets for 4 minutes. Then pour in vinegar or lemon juice, add two to three tablespoons of broth from the boiling soup and simmer everything together for another 10 minutes.

6. Add the tomatoes and simmer for another 4 - 5 minutes.

7. Cut the bacon into cubes and fry it in a dry frying pan until you get cracklings. Add cabbage there and cook, stirring for 6 minutes.

8. Remove the meat from the broth and boiled vegetables, strain the broth. Then, put in it vegetable stew, cabbage and meat, cut into portions. Cook everything together for 10 minutes.

9. Add horseradish. Boil. Add salt and pepper to taste. Turn off and let stand for a while and brew.

10. Serve with sour cream and fresh herbs.

And here's another soup recipe.

Egg soup with tomatoes

This soup was made by my grandmother. Being very religious, she observed all fasts and celebrated all religious holidays. So she certainly cooked this uncomplicated soup for Easter. She said that she was breaking his fast. In fact, I do not cook this version of the soup myself so often, but here is the tradition of adding an egg to chicken or fish soup, I just took over from this recipe.

And although meat is not present in the composition of the products, I included it in this section. Where else was it to be placed ?!

We need:

  • eggs - 6 pieces
  • tomato - 2 pieces
  • onion - leek - 1 pc
  • onion - 1 piece
  • potatoes - 4 pieces
  • garlic - 2 - 3 cloves
  • dill - bunch
  • vegetable oil - 2 tbsp. spoons
  • grated orange zest - a pinch (grandmother did not add this ingredient)
  • ground saffron - a pinch (or turmeric)
  • salt, pepper - to taste

Preparation:

1. Remove the skin from the tomatoes by scalding them with boiling water, cut the pulp into thin slices and remove the seeds.

2. Cut potatoes and onions into cups, smaller onions, larger potatoes. Onion - cut the leek into rings, chop the garlic and dill.

3. In a saucepan with a thick bottom, or in a frying pan, fry the onions and leeks in oil for about 3-4 minutes, until they soften and slightly golden.

4. Pour in 1.5 liters of water, add potatoes, garlic and orange peel as well as saffron, or turmeric, salt and pepper to taste.

Grandma did not add orange zest to her soup, this is already my find. I met her once in one of the recipes, tried it, liked it, and since then I have been using it in cooking.

5. Bring to a boil and cook for 10 minutes. Then add the chopped tomatoes and cook for another 10 minutes.

6. Break the eggs into a bowl, shake them with a fork and slowly pour into the broth, while actively stirring so that the egg does not gather into a lump, but is evenly distributed.

There is another option where the egg is not shaken, but whole is added. In order to get such a soup, all the eggs must be broken, one at a time, into a cup, and then carefully poured into the broth. At the same time, without stirring it, in order to preserve the egg as a whole.

7. Cook for 3 - 4 minutes. Then pour into cups and add chopped herbs if desired.

Meat rolls baked with cheese and mushrooms

We need:

  • pork loin without pits - 600 gr
  • uncooked smoked bacon - 100 gr
  • fresh or frozen mushrooms - 200 gr
  • onion - 1 piece
  • cheese - 150 - 200 gr
  • eggs - 2 pcs.
  • garlic - 1 clove
  • lemon - 1 piece
  • breadcrumbs
  • vegetable oil
  • salt, pepper - to taste

Preparation:

1. Mushrooms can be used both fresh and frozen. Champignons are perfect for this time of year. We cut them into smaller pieces and fry them, adding a spoon - one and a half vegetable oil. You can use both sunflower and olive. Add finely diced onion and fry all together for 10 minutes.

Then put on a plate to cool down quickly.

2. Cut the loin into 1 cm thick plates. Then put a piece of meat on a cutting board, cover with cling film so as not to damage the fibers during beating, and also so that the meat juice is not splashed and beat off from both sides.

You should get a very thin layer that can be easily wrapped in a roll.

Thus, beat off each piece.

3. Cut the cheese into fairly large cubes.

4. Spread a piece of beaten pork on the table, season with salt and pepper, and sprinkle with lemon juice.

5. Top with bacon, cheese and fried mushrooms. Roll into a roll, while trying not to damage the pulp, so that cheese does not leak out during frying.

6. Heat the oil in a frying pan; it should be enough to fry the rolls from all sides.

7. Break eggs into a bowl and shake with a fork, lightly salt and pepper. Pour into a separate bowl breadcrumbs and another little flour.

8. Gently take the roll, dip it first in the egg, then roll it in flour, then place it back in the egg and roll it in breadcrumbs at the final stage.

9. Then put in hot oil and fry for 15 - 20 minutes, periodically turning the rolls for even frying on all sides.

10. Serve such rolls well, or just with baked potatoes. Well, or at will, prepare any other side dish.

Meat fillet "Surprise"

Or here's another recipe, similar to the previous one, but with a completely different filling. Meat can be taken as pork and beef, but certainly the sirloin.

We need:

  • beef fillet - 1 kg
  • beef liver - 300 gr
  • onion - 1 piece
  • egg - 1 piece
  • canned peas - 1 can
  • butter-2 tbsp. spoons
  • vegetable oil - 3 tbsp. spoons
  • bread crumbs - 3/4 cup
  • greens
  • salt, pepper - to taste

Preparation:

1. Cut the beef into flat serving plates, beat them as thinly as possible through cling film.

2. Pass the liver and onion through a meat grinder, add butter, salt and pepper.

3. Put the minced meat on the meat and roll it up.

4. Moisten in a beaten egg, breaded in breadcrumbs and fry in well-heated oil in a frying pan.

5. Preheat the oven to 200 degrees, put the rolls in a mold, cover with foil and put in it. Bake until tender, about 30 - 40 minutes. At the same time, you do not need to open the foil so that the rolls do not turn out to be dry.

6. Serve with green peas sprinkled with fresh chopped herbs. Or just put on lettuce leaves.

Excellent tasty and uncomplicated recipe that everyone will like, I'm just sure of that.

You can cook both chicken and turkey on the festive table. And here are some recipes.

1. First, we need to marinate the chicken. You can take any chicken meat. I took two legs for two servings. You can take and chicken drumsticks, and breast. Or you can divide the whole chicken into portioned pieces and use it for cooking.

2. Peel one head of garlic and press through a press. In a small cup, combine garlic, chicken spices, cumin, salt and black pepper. I crushed whole peppercorns for flavor.

3. Add balsamic vinegar, olive oil and two tablespoons of warm boiled water there. Mix. You should get a rather thick dark brown mass.

4. Spread it over the prepared chicken pieces. Rub the mass directly into the skin from all sides.

If you take more chicken than I have in the recipe, then increase the ingredients for the marinade.

5. Put the meat in a bowl, cover, and leave to marinate for 1 - 2 hours. I marinated for an hour and a half.

6. Then put the chicken in a baking dish, preferably with a lid. If there is no lid, then prepare the foil.

7. Cut the lemon into small wedges, about 8 pieces and place in random order between the meat. A whole head of garlic, right in a fur coat, cut across and put also in a mold.

8. Put the olives on top of all this beauty, and pour the juice from the package on top. I had 175 grams of olives in the package, if you use olives from a jar, then there will be more of them. But I would put them all, since olives are obtained in such a combination just wonderfully.

Also add half a glass of boiled water.

9. Close the form with a lid or foil and place in an oven preheated to 200 degrees. Bake until chicken is tender. Pieces of different sizes will bake at different times.

10. After about 25 minutes, remove the mold and juice the top of the chicken out of the mold. Then put it back in the oven for another 20 - 25 minutes.

11. Take out the form again and pierce with a sharp knife in the thickest place chicken meat... If the chicken is ready, then light juice will stand out, if not, then red juice will stand out. In the second case, pour over the juice again and put it back in the oven, bake until tender.

In the first case, pour over the juice, and without closing the lid, set it for 15 minutes more. Reduce the temperature to 180 degrees.

12. Then take it out, let it stand for 10 - 15 minutes and serve with any side dish.

Traditional easter lamb

We need:

  • flour - 375 gr
  • milk - 125 ml
  • butter - 170 gr
  • sugar - 60 gr
  • dry yeast - 15 g (or 20 g fresh)
  • raisins - 150 gr
  • candied fruits - 50 gr
  • almond petals - 50 gr
  • orange peel - 1 tbsp. spoon
  • rum - 0.5 cups
  • nutmeg- 0.5 tsp
  • vanillin - a pinch
  • salt - a pinch

Preparation:

To prepare the Easter lamb, you need a special shape. Such forms are not so often found on sale, but you can find them. But if you do not have the form, and you do not plan to purchase it, then just take the dough recipe as a basis. It can be used to bake Easter rolls and muffins, as we cooked.

And the next video recipe will offer a plot of how to cook an Easter lamb or lamb without a shape.

1. A day before cooking, wash the raisins and soak them in rum. It will be soaked and delicious.

2. To knead the dough, first you need to prepare a dough. Mix sugar and yeast in a bowl. Add three tablespoons of flour, sifted twice. It is better to sift the flour all at once, then add it as needed.

3. Pour in lukewarm milk and stir until homogeneous mass... Then cover with cling film and leave for 20-40 minutes so that the dough "comes to life" and the so-called "cap" appears on its surface.

4. To knead the dough, pour the remaining flour into a large bowl, add a pinch of salt, ground nutmeg, vanillin to it, or you can add a bag instead vanilla sugar... Stir all dry ingredients.

5. Add the dough and orange zest. Stir with a spatula.

6. Cut the butter into small pieces and let it stand to melt slightly. Use oil of at least 82.5% fat. Add 1/3 of the oil to the flour mixture and stir.

7. Knead the dough with your hands. It will be somewhat dry, but try to knead it as it is, then all the products will disperse and the dough will be as it should.

But you can still add a couple of tablespoons of warm milk if necessary.

8. Put the dough on a work surface and knead it by stretching. It will crumble a little and will not obey, do not pay attention to this, in the future we will introduce the remaining oil into it and it will turn out to be of the desired consistency.

9. After kneading the dough for 10 minutes, put some of the butter on its flat surface, roll it up with an envelope and continue to knead. Then add some more of the butter and repeat the procedure until all the butter runs out and the dough becomes homogeneous. This may take 15 to 20 minutes.

At first, it will not be very easy to knead, the dough is stubborn, with crumbs and does not look quite aesthetically pleasing. Never mind this, everything is going as it should.

The dough will not be smooth and plastic, it will stick to your hands from the butter, but you no longer need to add flour.

10. Stretch the dough into a flat cake and place the raisins in the middle. Fold it in an envelope and continue kneading to distribute the raisins evenly.

11. Stretch the dough into a flat cake again and lay out candied fruits and almond petals, or one thing, and repeat the procedure.

There were a lot of fillings, and this is very good, the pastries are festive.

12. Grease a bowl with butter and place the dough in it. Cover with cling film and set to rise for 2 hours.

13. After the allotted time, the dough will double in volume, transfer it to a special form in the form of a lamb, which must also be greased with oil. Distribute it there evenly and leave for another 30 - 40 minutes, so that the dough gains strength and fills all the cavities of the mold.

14. Put in an oven preheated to 180 degrees and bake at this temperature for 15 minutes. Then reduce the temperature to 160 degrees and bake for another 30 - 40 minutes until tender.

15. Ready baked goods take out grease with butter. Let cool and sprinkle with icing sugar.

As a rule, if there are little kids in the house, they are completely delighted with such wonderful and themed pastries.

Festive yeast dough lamb without shape

And according to this recipe, you can make homemade lambs, without any special shape.

Here we offer another recipe for the dough, and this is understandable, it will be necessary to manually form the desired shape of the lambs from it. And since there are a lot of them in the video, it is better to see all this once than to read the description for a long time.

It is quite easy to cook such interesting lambs by cutting them out according to a special template. And you must admit that such pastries will certainly not stale. The kids will take away all the lambs in an instant. Therefore, it is better to cook them with a margin in order to please everyone.

And continuing the theme of Easter animals, the next baked goods are next.

What to cook for Easter 2018, recipes with photos

The Easter menu should include more than just delicious treats, and the peculiar symbols of Christ's Sunday, which have crystallized over the course of long millennia. Therefore, asking the question: "What to cook for Easter" housewives are primarily guided by traditions. In particular, it is impossible to imagine a festive Easter feast without beautiful Easter cakes towering in the center of the table, framed by a motley composition of painted or simply painted eggs. Previously, each self-respecting hostess had her own recipe for delicious Easter cakes, proven over the years, so airy pastries always delighted guests and loved ones. Recently, however, many women, due to a catastrophic lack of time, prefer to buy Easter cakes. But in-store baked goods are in many ways inferior to homemade ones in taste, design and quality of ingredients. What should be done in this case? We suggest you try to cook a very simple, but at the same time, very airy and beautiful Easter cake this year.

The preparation of cakes begins with the preparation of the dough. First you need to connect 30 gr. yeast with a tablespoon of sugar, a spoonful of flour and warm milk. 100 ml of milk will be enough. This mixture is left for fifteen minutes, after which it becomes suitable for kneading dough. The peculiarity of Easter baking is that at first the steep dough is prepared from dough, 600 gr. flour and 200 ml of milk, and only then, when it stands for an hour and a half, you can add four whipped proteins with sugar, warm margarine or 150 gr. oils and raisins. The amount of raisins can be adjusted to taste. To make the cake tastier, you can also use candied orange fruits. Last of all, whipped whites of three eggs are added to the cake. When the dough has increased in volume, it is poured into a mold and the cake is baked for about 60-80 minutes. The optimum temperature is 180-200 degrees. It is not necessary to remove the baked goods from the mold immediately. The cake is usually decorated with whipped protein mass, sugar flowers, coconut flakes or the same candied fruits and raisins.

And if you have enough time, desire and culinary experience, then you can bake cakes that will simply amaze you with their airiness, softness and beauty of design. After all, every hostess is pleased to watch how her culinary masterpieces cheer up the guests, don't they? Follow the link that is highlighted in red to see step-by-step cooking this delicious cake.

Paint eggs

Another obligatory symbol of the bright holiday of the Resurrection of Christ is Easter eggs. It is customary to give them to each other, congratulating on this day, and decorate the festive table with them. Therefore, it is worth approaching the design of Easter eggs with responsibility and imagination. For example, you can very effectively paint eggs under Gzhel or apply a beautiful pattern in the form of poppies, and your festive table will noticeably change.

Even if you use special stickers, appliques from year to year, or just paint eggs in one shade, we suggest you experiment and decorate Easter eggs with beads and using the "quilling" technique. You will spend relatively little time on their design, but the effect will be amazing, especially since such eggs will be able to delight you with their magnificent appearance for more than one year.

Sandwiches with red caviar and fish

What a festive table without light snacks and delicious sandwiches? We advise you to definitely prepare sandwiches with caviar and red fish, which will effectively decorate and diversify your meal. This appetizer harmoniously combines ease of preparation, originality and impressive taste characteristics. After all, caviar and red fish have always been considered a symbol of prestige and wealth. If you have planned the preparation of complex or gourmet main courses, then such sandwiches will come in handy, because they will help save valuable time without compromising the variety of the festive table.

Baked pork

Traditionally, all housewives strive to make the Easter table as rich as possible. Some believe that there should be 40 dishes - according to the number of days of Lent. Of course, not every housewife will be able to organize such a feast, and such a variety will not be very useful for the stomach. Therefore, you should limit yourself to a few main dishes. For example, as hot meat appetizer we suggest making homemade boiled pork. This dish is prepared quite simply and quickly, and according to its taste characteristics it can satisfy even the most discerning gourmet.
The most important thing is to find a good piece of pork (preferably the back) and stock up on spices. Several cuts are made in a piece of meat, then salt and pepper are poured there to taste. Peeled cloves of garlic and bay leaves are also put in. Then the meat is completely sprinkled with spices and salt and wrapped in cling film. After that, we send it to the refrigerator. In this form, pork should be left overnight. It remains only to properly bake the meat in foil. For a crust to appear, you will need to open the foil at the end for a few minutes. Soft, homemade meat can be served either in one piece or in a nice cut.

Jellied or aspic chicken

It is also customary to serve a jellied dish on Easter. We suggest that you cook chicken jellied meat - it will be the best option for stomachs that have become unaccustomed from heavy food during the Fasting period. Jellied, or jellied meat is prepared from chicken broth... To make the dish tasty, you need to cook it correctly. First, we cut the chicken, then add it to a pot of clean water, it will take about two liters of liquid. It takes about three hours to cook the broth over low heat. The water should not boil over. After two and a half hours, you need to add the peeled garlic to the pan, a little later - Bay leaf... At the end, these products are removed from the broth, and black pepper is poured in instead. The broth is poured into dishes and all that remains is to put the aspic in the refrigerator. You can decorate this dish at your discretion, for example, you can decorate with liquid mustard grains, herbs, or use empty eggshells instead of molds, resulting in aspic in the form of beautiful Easter eggs.

except meat dishes, the Easter menu should include fish as well. Baked red fish is perfect for this role, as it is a hearty, mouth-watering and delicious holiday treat. You can cook coho salmon. It will be more convenient if you immediately divide the fish into steaks. They need to be sprinkled lemon juice, you can also put a slice of tomato and grated cheese on top. Many housewives also grease fish with mayonnaise. If you wrap the fish in foil, then it will cook in 15-20 minutes. It is unlikely that any of the guests will be able to refuse a piece of an appetizing gourmet treat!

Stuffed potatoes

And hot admirers of poultry dishes can be pleased with baked chicken with garlic with an appetizing garnish of stuffed potatoes in tomato sauce. Though, stuffed potatoes so satisfying that it can be served as a separate dish. To fill the potatoes with minced meat, you need to scrape out the middle and cut off small pieces on both sides, so that it is convenient to put it for cooking, and so that the potatoes have a beautiful, even shape. You need to make sure that the bottom of the potato tubes remains, otherwise the filling will end up on the baking sheet. First, you need to fry the potatoes, it's good if there is deep fat in the house. Any stuffing can be used. It must first be fried with onions. It remains only to fill the potatoes with minced meat and stew or bake with tomato sauce... The sauce is also very simple to prepare. You need to mix 400 gr. tomato puree from 1.5 tbsp. spoons tomato paste, a few cloves of garlic, coriander, basil, mint, two glasses of water, pass the mixture through a blender and then bring to a boil.
However, if you have a minimum of time to prepare the festive table, you can combine the main dish and side dish in one by preparing chicken thighs with potato.

Well, and, of course, salads. What a holiday without this beloved dish? Therefore, we propose to opt for this year on pomegranate salad... For its preparation, boiled pork, boiled beets, potatoes, processed cheese and pomegranate are required.

Beets - 500 g;
pork - 500 g;
potatoes - 400 g;
processed cheese - 200 g;
pomegranate - 1 pc.;
onion - 1 pc .;
mayonnaise;

For dressing, you can use mayonnaise, for decoration - herbs. Such an original salad is at the same time satisfying, easy on the stomach, easy to prepare and very beautiful in design. The salad is made in layers with mayonnaise in this order: beets, potatoes, meat, cheese, pomegranate.

In addition, a delicious salad with crackers will help you to adequately demonstrate your culinary talent, which simply cannot leave your guests indifferent and hungry. After all, well-fed and grateful smiles are the hostess's best reward! Preparing a salad is very simple - from boiled eggs (2 pcs), carrots (2 pcs), potatoes (2 pcs), corn (half a can) and green onions. Boil all vegetables, chop finely, mix, add mayonnaise. It is important to add the croutons before serving, otherwise they will turn into slices of bread soaked in the dressing. And do not forget to decorate this dish beautifully, for example, with carrot flowers and sandwich cheese rolls.

Easter is a bright and joyful holiday for Orthodox Christians. On this day, it is customary to visit or receive guests at home. The Easter table should contain obligatory traditional dishes, as well as those prepared according to the hostess's own recipes. It should be noted that many today observe or at least fast the last, Holy Week. This fact must be taken into account when compiling the menu for the Easter table.

Since ancient times, the belief has come to us that the table for Easter should be rich and literally burst with all kinds of dishes. Previously, more than forty dishes were prepared at all - according to the number of days of fasting. Now this rule, of course, is not observed, but, nevertheless, guests want to surprise with something tasty and unusual.

Traditional dishes

There are a number of dishes that no one can do without easter table.

  1. Colored eggs. This is a symbol of Easter, without which it is impossible to imagine this holiday. Initially, eggs were painted exclusively red, but today there are many ways to decorate them. Monochromatic are popular food colorings, stickers, the method of dyeing eggs in onion skins is still very common. Needlewomen decorate boiled eggs decoupage, quilling and even knitting.
  2. Kulich. Not a single Easter feast is complete without Easter cake. Of course, you can buy it in the store, but it is much more pleasant to try your own baked Easter cake. By tradition, a lot of eggs are used for baking it, the dough is quite heavy. You can add raisins, any nuts, candied fruits to the dough. An indispensable decoration for any Easter cake is a protein glaze, sprinkled on top with multi-colored crumbs.
  3. Easter. This curd dish is also a must on the table. It is prepared from sour cream or cottage cheese for several days. The fatter the product from which Easter is prepared, the heavier and more high-calorie it turns out. For Easter, there are special split forms, usually made of wood or plastic. Traditional Easter additives are raisins and walnuts. Although there are many Easter recipes with candied fruits, almonds and other nuts, chocolate chips.

These dishes are prepared in advance and carried to church for consecration on the day before the holiday.

By tradition, fish is not cooked for Easter, but today this rule is gradually becoming a thing of the past, because among the guests there may be vegetarians who eat fish on holidays. Also, if among your guests there are those who do not eat meat, be sure to take care of them and cook something exclusively from vegetables.
