Mannik on yogurt, strictly speaking, is no different from. It is prepared quickly and very simply, and you can decorate and complement it with anything.

Ingredients for cookingmanna on yogurt:

  • semolina - 2 tbsp.;
  • yogurt - 1 tbsp.;
  • butter - 100 g;
  • lemon - 1/3 part;
  • eggs - 2 pcs.;
  • sugar - 1 tbsp.;
  • raisins - 1/2 tbsp.;
  • flour - 3 tbsp. l .;
  • baking powder or soda - 1/2 tsp.

Preparation:

Fill the semolina with curdled milk and leave for 30-40 minutes so that it swells. At this time, beat eggs with sugar. Then we begin to mix curdled milk with semolina, at the same time adding in turn beaten eggs with sugar, melted butter, lemon juice and grated lemon zest, washed and dried raisins (pre-roll it in flour). Finally, add a baking powder to the dough, mix and pour into a mold, greased with butter and sprinkled with semolina or breadcrumbs. baked for about 30 minutes at 180 ° C.

When the manna is ready, take it out, put it on a dish and decorate it: you can pour it with liquid honey, jam, syrup, chocolate, sprinkle with nuts or powdered sugar.

The ingredients we need are almost the same as in the previous recipe. We need to knead the dough for manna with curdled milk and leave it to swell. And then- we begin to conjure.

Divide the dough into 3 equal parts. We leave one part unchanged - we immediately pour it into the mold and bake the cake (it will be thin, so it will be enough for him to stand for 15-20 minutes in the oven). We make the second manna with an additive: you can add cocoa powder, jam, honey or any other homogeneous mixture. We bake it second. We will have the third cake with decorations: you can not mix it with anything (well, perhaps add lemon zest), and on top of the dough "sink" a little fresh berries, pieces of fruit, slices of chocolate or marmalade, nuts. We bake it last.

While the last cake is baking, we make the impregnation.

If you used berries and fruits as additives, then it would be logical to make berry impregnation. We take the jam syrup (2-3 tsp) and mix it with 1.5 tsp. vermouth, sherry, cognac or brandy. We saturate the first two cakes. When the last cake is prepared, soak it and the previous one with a mixture of 2 tbsp. l. syrup and 1 tbsp. l. cream or Baileys liqueur. You can decorate the puff manna with powdered sugar.

If you used honey as an additive to the cake, then we make the impregnation for the first two cake layers from 1 tsp. honey and 2 tsp. any sweet alcoholic drink is stronger than 18 °, and the impregnation for the second cakes is from 2 tbsp. l. whipped cream (or "Baileys") with 1 tbsp. l. honey.

If you had a chocolate topping, then you can soak the bottom cakes with a whipped mixture of chocolate syrup (a mixture of melted chocolate or cocoa powder and cream) and any sweet alcoholic beverage. Chocolate liqueur, Baileys or Cointreau liqueurs are perfect. In the non-alcoholic version, the cream is mixed with chocolate and sour cream and whipped. For the top cakes, you can use the same soak or a less sweet soak, such as whipped cream with a little powdered sugar. You can decorate a manna cake with chocolate with grated almonds, nuts, cinnamon.

Needless to say, the cake turned out great from the first try. And this is so stimulating for further culinary experiments.

We need:

  • kefir - 1 glass
  • flour - 1 glass
  • semolina - 1 glass
  • sugar - 1 glass
  • eggs - 2 pcs.
  • salt - a pinch
  • soda, or baking powder (0.5 tsp, or 1 tsp, respectively)
  • butter - for greasing the mold - 15 gr

You can add a pinch of vanillin or a packet of vanilla sugar.


That is, remembering is elementary - one glass of all the main ingredients and 2 eggs. In this case, the size of the glass can be of any volume. The only important thing is that all the ingredients will be measured by only one.

Preparation:

It is advisable to take kefir and eggs out of the refrigerator in advance so that they warm up at room temperature. The dough rises better with these products.

1. Break two eggs into a prepared bowl. Add sugar to them. If you want your baked goods to have a vanilla flavor, then you can add vanilla, or vanilla sugar.


2. Stir first with a spoon so that the sugar does not scatter in different directions. And then beat with a mixer until the mass turns white and all the sugar dissolves. Or you can knock it down with a whisk.

Now we are knocking it down with a mixer. And before that they did not even know the words. Therefore, they knocked down with a whisk. And even if it turned out not white, they tried to break the sugar until the crystals dissolved.

3. Add kefir. If you have prepared soda, then extinguish it with vinegar, pouring a few drops into a spoon with it, and add to the kefir mass. Stir the mixture. And you can immediately see how little bubbles appeared on the surface. Soda has reacted with sour kefir.


It must be said that it is not necessary to use the freshest kefir. Even if he stood in the refrigerator for a week, then you can safely take it for baking. And if it remains a little less than a glass, then the missing volume can be replenished with sour cream or milk. And it will be even better if the milk has had time to ferment.

4. Add semolina. And mix again until the lumps disappear and homogeneity is obtained. Let it stand for about 5 minutes, so that the cereal swells a little.


5. Then add the sifted flour. And if you decide to use not baking soda, but a baking powder, then it also needs to be sifted along with flour. Gently mix the flour into the mixture. Stir with a spoon, it will be difficult to do this with a whisk. The mass turned out to be quite dense and viscous. And this is great, and it should be!


6. But in order for the dough to rise well during baking, it is advisable to let it stand for a while. During this time, all the ingredients will disperse better and reveal their full potential.

It happens that there is no time to wait. And this cake is considered to be "hastily". Therefore, sometimes you mix everything at once, without special ceremony, and immediately into the oven. And even in such Spartan conditions, he always succeeds.

But if you have time, then allow the dough to brew, the cake will turn out to be more fluffy and crumbly.

I usually let the dough sit for 30 minutes. During that time, the groats will also disperse, and the flour will become more sticky, viscous, and therefore homogeneous.

7. While the dough is infused, prepare the mold. I usually bake these cakes in a silicone mold. In it, he does not stick and rises perfectly. And for me it is also important that he gets it out of this form without any problems. Simply - simply "jumps out" of it.

But still, for fidelity, it is better to grease the form with butter. Firstly, the cake will probably be easy to get after cooking, and secondly, it will acquire the pleasant aroma of so-called homemade baked goods.

8. You should also preheat the oven to 180 degrees in advance. And now there are ovens that do not warm up in advance. Therefore, look at yours. Usually, the oven should be preheated for 15 minutes, setting the temperature to 180 degrees.

9. When the dough is infused, pour it into a greased form and place in the oven to bake. The baking time is usually 35 - 40 minutes, depending on how this or that oven bakes. If you already know for sure about all the features of your stove, then you can set a timer for this time and go about your business.


If you are just getting to know the oven, then it is better to observe the process. Although it is not recommended to open it for 20 minutes.

10. The finished cake should have a beautiful golden brown crust. Do not overdo it, otherwise the crust will be tough and the dessert will lose some of its merits.


You can check the readiness by piercing it in the middle with a toothpick. Fully baked dough will not leave a single trace on it. And this will be a signal that it's time to get the baked goods.

11. Got it, let it stand in the form for about 5 minutes. Firstly, both the form and the pastries will cool slightly, and secondly, the cake will move away from the walls.

Then it will be easy to get it. To do this, you can cover it with a cutting board and turn the mold over. When the manna remains on the board "upside down", then put a large flat plate on top and turn it over again.

We already started talking about calories today. So this recipe is just one where we will try to reduce them. To put it simply, we will cook the pie without flour. Interesting?! And I was very interested in what would happen when I first cooked in this way. There was no certainty about the result, and sheer doubts overwhelmed.


We need:

  • kefir - 1.5 cups
  • semolina - 2 glasses
  • sugar - 1 glass
  • egg - 3 pieces
  • baking powder for dough - 1 sachet 18 gr
  • lemon zest - 1 teaspoon without a slide
  • salt - a pinch
  • butter - for greasing the mold

I will bake in a muffin pan with a diameter of 24 cm.

For decoration, I used ready-made vanilla glaze and chopped nuts. But this is optional.

Preparation:

As you can see, the proportions of the previous recipe are practically preserved. We remember what they are - 4 glasses and 2 eggs. There are 4.5 glasses and 3 eggs. And there is an explanation for this. Semolina swells more than flour, so an extra half glass of kefir and 1 egg are added. If you add less, the dough will not be as thin as needed, and it will be more difficult for the pie to rise.

That is, everything is easy to explain. And so, let's get down to cooking.

1. Break eggs into a bowl, in which it will be convenient to work with a mixer. If there is no such assistant, then you can use a whisk. In this case, it will take a little more time for knocking down, and the result will be the same.


2. Add sugar and a pinch of salt, and mix the mass with a mixer. Knock down until all the sugar crystals dissolve and the mass turns white.


3. Add kefir. I took it out of the refrigerator in advance, however, like the eggs. In this state, kneading will be faster and easier, and the finished dough will turn out to be more fluffy, which will ultimately affect the quality of baking.

Continue mixing with a mixer or a whisk.

4. Add lemon zest. I already have it ready-made, and I just pour it into the mass. But it does not always happen, and in this case you just need to rub the skin of a pure lemon on a fine grater. Only rub one yellow part, the white part is bitter, and is not suitable for desserts.


Instead of lemon zest, you can use orange zest or vanilla sugar. Sugar in this case, you can add a whole bag. Or vanillin on the tip of a knife. Any flavoring additive will have to be in place.

5. Also add a baking powder for the dough. And in this case, one teaspoon, as usual, is not enough. Add the whole bag at once. Semolina is heavier than flour, and baking powder will give it the strength to lift. Add it as well.


Continue to beat the mass with a whisk until it becomes homogeneous. There should be no lumps left in it, and many small bubbles will appear on the surface. The dough is alive, and that's good. All processes will continue and the baked goods will rise perfectly.

6. And for this we will leave it to infuse for 30 minutes. During this time, the cereals will swell and will not be tough in the finished baked goods.


7. You can bake in any form convenient for baking. It can be a regular silicone mold, but before it was simply baked in a frying pan.

I decided to use a split form, into which a special insert for baking muffins is inserted. Its size is 24 cm in diameter.

The form must be generously greased with butter.

8. Cut a piece of parchment paper and line it on a baking sheet. If the mass flows out, it will not stain it. Place a greased form on a sheet of paper.

Preheat the oven to 180 degrees.

9. Pour the dough into the baking pan evenly and place in the oven to bake for 35 minutes. Do not open the oven door during baking for at least 20 - 25 minutes.


During this time, the dough rises, and if the door is opened, it will fall off. The cake will then turn out to be low and tough.

10. When 35 minutes have passed, open the oven door, take out the cake and pierce it right in the middle with a toothpick. It should be easy to get in, and just as easy to get out. At the same time, there should be no dough residues on it. If the dough is caught on a toothpick, then set it for another 5 minutes.

Also, the surface of the cake should not be overcooked. It has a pleasant ruddy look that is pleasing to the eye.


11. Let the cake stand for 5 minutes right in the pan. Then disconnect its clamp and remove the form. And put the pie on a plate.


In principle, in this form, you can immediately eat it, without even waiting for it to cool down. But today I am preparing it for you, dear readers. Therefore, I wanted to decorate it. At least in the simplest way.

12. I had two bags of ready-made vanilla frosting and there were also walnuts. I covered about a handful of nuts with a rolling pin and mixed the icing with milk.


And when the cake cooled slightly, I poured all the prepared icing onto its surface. And sprinkled with nuts on top.


Now you can taste the manna and taste. It is still slightly warm, and therefore even tastier. We cut it into pieces and enjoy the taste. I will try to describe how it turned out.

Firstly, it has risen well and has many holes, or sinuses, inside. Secondly, thanks to these sinuses, the sugar from the glaze penetrated to the very bottom, and thanks to this, the cake turned out to be simply incredibly juicy. As if it was soaked in some kind of jam, or syrup.


And so, a lush, airy, juicy, crumbly dessert has turned out for us according to this recipe. I highly recommend to cook one for you too. He's great! Cook it at least once, and then you will always cook it. I can’t say “only him”, because all the recipes that I share with you today are also delicious, just incredible!

And according to that recipe, I decided to cook a manna with blueberries. But this is not a dogma. You can cook with any berry and any fruit. It turns out very tasty to cook it in this version with apples and cinnamon. You can repeat this by adding chopped apples instead of blueberries. You will get a new taste, and a new dessert!


There is only one recipe, and each time you add a new fruit or berry ingredient, you will get new delicious pastries!

We need:

  • kefir - 1 glass
  • semolina - 1 glass
  • flour - 1 glass
  • sugar - 1 glass
  • egg - 2 pieces
  • baking powder - 1 teaspoon with a slide
  • salt - a pinch
  • any frozen or fresh berries (I have blueberries) - 1 glass
  • butter - for lubrication

Preparation:

This recipe is very similar to the first one. Therefore, in order not to delay your time with a detailed description, I will only touch on the main points in this chapter. And if you decide to cook according to it, then see all the nuances in the first recipe.

1. Break eggs into a bowl. Pour in sugar and salt and mix everything with a whisk or mixer. It is desirable that the sugar is completely dissolved, and the mass lightens.

2. Add kefir, mix. Then add baking powder. Beat with a mixer until bubbles appear.


3. It's time to add semolina. Pour it into the mass, stir and let stand for 5 minutes.

4. Then sift the flour directly into the mixing bowl. It is imperative to do this to saturate it with oxygen and to further raise the dough.

Stir again until the lumps disappear. Leave to infuse for 30 minutes.


5. While the dough is infused, prepare the form, namely grease it with butter. You can also put in an oven to preheat. We will need a temperature of 180 degrees.

6. After 30 minutes, stir the present thick mass again with a spoon and add the berries. In summer, it can be any fresh berries or fruits. But it's winter now and I have frozen blueberries. So we will use it as an additive.


I do not defrost it on purpose so as not to stain the dough. If the berry melts, then the dough will take on a not very pleasant purple color. And I want it to have a familiar look. Therefore, I pour the berries directly from the freezer. Then mix the dough and immediately pour into the mold.


7. And without hesitation, put in a preheated oven. Within 20 minutes, the dough will have time to rise and at the same time will not have time to color. And only by that time the berries will finally warm up, but they will have nowhere to burst. Therefore, they will remain intact, and as if they had just been brought from the forest.

In the remaining 15 minutes of baking, they will warm up, and the cake will have a common flavor. This means that the total baking time is 35 minutes. Well maybe 40.

8. After this time, take out the cake and taste its readiness with a toothpick, piercing it in the thickest place, that is, in the center. If we took out a toothpick, and there is no batter left on it, then our pie is ready. You can get it completely.


9. Let it stand for 5 - 7 minutes. Then turn it over onto a cutting board, and then turn it over again on a plate.

You can decorate it to your liking, or you can serve it just like that. In my opinion, he is already handsome.

And I'll share it today. And not only will I write how to cook using it, but I will also show you how to do it in a video that was filmed specifically in the preparation of this article.

We need:

  • kefir - 1 glass
  • cream - 1 glass
  • semolina - 1 glass
  • flour - 1 cup
  • sugar - 1 glass
  • egg - 2 pieces
  • butter - 50 gr
  • vanilla sugar - 0.5 - 1 sachet
  • baking powder for dough - 1 tsp
  • salt - 0.5 tsp

For decoration, we need 3 - 4 tablespoons of powdered sugar.

Preparation:

1. Sift flour into a bowl. Add salt and baking powder to it. Both can also be sieved if desired. Pour the prepared cereals here and mix. That is, we mixed all the bulk components in one bowl.

2. Pour kefir here. It is better to get it out of the refrigerator in advance so that it is not too cold. Room temperature will be ideal for him. Set aside the resulting mixture and proceed to the next cooking stage.


Mix the mass. It will turn out to be thick and viscous, with a rather uneven structure. But for now, let's leave it as it is.


3. Break eggs into a separate bowl. It is also best to get them out of the refrigerator in advance.


Add regular and vanilla sugar to them. You can simply add a pinch of vanillin instead of vanilla sugar. This will make the finished cake less sweet.


Although, if you are sweet, then you can add a whole bag. The baked goods will be sweeter and more flavorful.

4. To prevent sugar from scattering all over the table, first stir the mass with a spoon or spatula, and then connect a mixer or whisk to work. We want a smooth, sweet egg mixture that turns white from beating and dissolves all the sugar crystals in it.

5. Add it to the mixture, which was set aside for a while.


Mix both masses with a mixer until a homogeneous, even and sufficiently fluffy mixture without lumps is obtained.


6. Add melted butter and stir again. This time, until it is completely driven into the mixture, no oily circles should remain.


Leave about a teaspoon of oil to grease the mold.

7. The resulting test must be given time to infuse. It will be enough for him to stand for 15 - 20 minutes. During this time, the cereal will swell, the same will happen with flour. The dough will become more homogeneous and pliable and bake better.


8. Grease the pan with the remaining butter and pour the dough into it.

9. Put the dish in an oven preheated to 180 degrees and bake until tender. This will take approximately 40 minutes, depending on the properties of the oven. It took me just that long.

After this time, take out the cake and check it with a toothpick to see if it is ready. If you pierce it in the center and the toothpick stays dry, then it's time to get it completely.


10. But we still have cream, and we have not forgotten about them. It was their turn too. They need to be poured directly on top of the brownish crust of the pie. But as we can see, the liquid is not retained. It is immediately absorbed and soon not a single drop remains on the surface.


11. After this "alchemical" procedure, let the cake stand for 10 minutes and rest right in the mold. Then we turn it over onto a wooden board.


We remove the form and turn it over onto a large flat plate, letting it cool down a little more.


As you can see in the photo, the cake turned out to be very lush and beautiful. I already want to try it as soon as possible.

12. But I also wanted to decorate it in order to serve it for evening tea in all its glory. And as a decoration I prepared powdered sugar. So I just sprinkle it on a slightly cooled surface and go to put the kettle on. It's time to brew tea and invite your family to an evening tea party.

  • salt - a pinch
  • apples - 2 pieces
  • icing sugar - 2 tbsp. spoons (for sprinkling)

Preparation:

1. Pour kefir into a bowl convenient for kneading dough. You can take it of any fat content. I didn't have enough yogurt today, and I added about half a glass of sour cream. To make a total of two 250 gram glasses.

Consider this, you can add a little fermented milk, drinking yogurt, sour cream, and even milk. But in the latter case, you will need to add a little semolina to achieve the desired dough consistency.

2. Pour cereals into a bowl. It can be measured with glasses of the same volume as kefir was measured. Mix the mixture until smooth. You can just stir with a spoon.


We don't have any eggs, so we don't need to shoot anything down. You can just do it with a spoon.

Leave the mass to infuse for 30 minutes. The groats should swell. In this case, it will not be felt, and it will be easier for the dough to rise.

We need:

  • semolina - 2 cups (250 ml) 400 gr
  • kefir - 1 glass
  • sugar - 1 glass
  • flour - 50 gr
  • eggs - 3 pcs.
  • butter - 50 gr
  • baking powder for dough - 1 teaspoon with a slide (10 gr)
  • salt - a pinch
  • vanillin on the tip of a knife

You can use vanilla sugar instead of vanillin. In this case, pour it into the glass first, and then add the usual one. The total volume should be 250 ml, that is, a glass.

For the curd filling:

  • cottage cheese - 250 gr
  • egg - 2 pieces
  • sugar - 80 gr

Preparation:

1. We will knead the dough in a bowl that is deep and convenient for this purpose. Break eggs into it.


2. Add granulated sugar. Beat with a mixer. The mass should slightly increase in volume, turn white, and all sugar crystals should dissolve. To do this, the mass must be knocked down for at least 3 minutes.


3. Pour in kefir and mix again. Then add soft butter. In order for it to become soft, it must be removed from the refrigerator in advance. Mix again with a mixer until smooth.


4. Add flour, baking powder and flour sifted through a sieve. Do not be lazy, and be sure to ask for it. This will make the cake rise better.

Mix the mass thoroughly with a mixer and let stand for 20 minutes so that all the ingredients are dispersed and the semolina swells.


5. Prepare the filling. To do this, put all the ingredients intended for it in a separate bowl and rub until smooth with a hand blender.


6. Grease the multicooker bowl with butter. Cut a circle of baking paper to fit the bottom and place it on the bottom. Put half of the dough into a bowl. After standing, it became quite thick, which is good, so the filling will remain in the middle.


7. Pour out all the filling at once. And then lay out the remaining dough. At the same time, it is good if the filling is completely covered.


8. When baking in the Redmond multicooker, set the Multicook mode. And bake at 125 degrees for 1 hour. If you have a multicooker of another brand, then bake in it in accordance with the instructions.

9. Get the ready manna by turning the multicooker bowl. Let cool slightly. Then put on a plate and serve.


If desired, sprinkle with powdered sugar on top.

Advice. In addition to nuts, raisins, dried apricots or other dried fruits can be added to the chocolate manna in curdled milk. Fresh fruits will not work in this case.

No eggs

Sometimes it happens that there is an idea to cook a manna, but there are no eggs in the house. Or you want to save a little. A wonderful recipe - a dessert without the addition of eggs. For this option, you will need:

  • semolina - 1.5 tbsp.;
  • yogurt - 1.5 tbsp.;
  • sugar - 1 tbsp.;
  • oil - 100 g;
  • a pinch of salt;
  • 0.5 tsp soda;
  • vanillin or cinnamon.

  • icing sugar, cinnamon.

The step-by-step preparation looks like this:

  1. The groats are poured into a deep container. Poured with yogurt and so left for 40 minutes. During this time, the grains will have time to swell well.
  2. Meanwhile, the apples are washed and cut into cubes. If the skin is thin, peeling is optional.
  3. The remaining ingredients are added to the semolina according to the recipe.
  4. Half of the future dessert is poured onto the bottom of the mold.
  5. Pour apples.
  6. The remaining dough is poured over the fragrant fruits.
