Easter ring.

For the test: (for 1 ring with a diameter of 26-24 cm)
- 1 egg,
- 225 g flour,
- 90 ml of milk,
- 25 g powdered sugar,
- 25 g butter,
- 1 tsp dry yeast
- vanilla,
- 1/3 tsp salt.

For filling:
- 1.5 tsp cinnamon,
- 100 g brown sugar,
- 40 g soft butter,
- 100-150 g dried cranberries,
- a pinch of ground cardamom.

For glaze:
- 1 tbsp lemon juice
- 3 tbsp powdered sugar,
- any topping.

I will say right away, I kneaded the dough in a food processor with a hook attachment. Therefore, I put milk and an egg (everything should be slightly warm) into the mixer bowl, melted butter. Separately, I mixed flour, salt, powder, vanilla and yeast. I poured it into a bowl with liquid ingredients and kneaded the dough. With a mixer, this whole thing is done in 5 minutes. If kneading by hand, the dough should be smooth and elastic. Immediately roll out the finished dough into a (approximately) 30cm x 40cm rectangle.

Place the ring on a baking sheet lined with vegetable oiled paper. With sharp scissors, make cuts along the outer edge 2/3 of the thickness, at a distance of 3-4 cm. Turn the edges of the cuts with the cut up. Cover the ring with either a towel moistened and well wrung out in warm water or (as I like) oiled cling film, but so that she just lay on the test, so that there was enough free space for raising the test. Leave to approach for 50-60 minutes.
Preheat the oven to 200 degrees. At the bottom of the oven, before placing the dough, throw 7-10 pieces of ice. Bake 20-25 minutes until golden brown. Lubricate the finished ring (optional) with milk and sugar syrup for shine. Cover with icing and sprinkle with any decorations. For the frosting, beat the powder with lemon juice well with a whisk.

Buns with a cross.

For test:
- 210 ml of milk,
- 1 egg,
- 450 g flour,
- 1.5 tsp ground spices (cinnamon, cloves, cardamom, allspice),
- 0.5 tsp salt,
- 80 g of sugar,
- 60 g butter,
- 1.5 tsp dry yeast,
- 100 g of raisins (or cranberries, cherries ... etc.),

For crosses:
- 50 g flour,
- 25 g butter.

For glaze:
- 2 tbsp milk
- 1 tbsp sugar.

I kneaded everything again with a mixer ... Therefore, I mixed warm milk, an egg and butter. Separately combined all the dry ingredients. I combined everything in the mixer bowl and kneaded the dough. A minute before readiness, I added raisins, which are also desirable to soak in alcohol. I immediately divided the dough into 16-20 parts. I made a ball out of each piece and immediately laid it out on a baking sheet with baking paper. I covered it with oiled film and let it rise for 40-50 minutes. Turned on the oven at 200 degrees.
For the crosses, I rubbed the butter on a coarse grater, rubbed it with flour until crumbs. I added water to make a dough of such a consistency that it could be easily squeezed out of the culinary syringe. I wrote it as it should be (according to the recipe), but the learned experience from last year, when my crosses spread over all the buns, now I have come to the other extreme ... And I made the dough for the crosses so that I simply rolled it into thin strings and laid out over the buns. And it didn’t turn out quite right, but I hope the next, third time I will do everything for sure.)))
The crosses need to be squeezed onto the already approached buns. Bake them for about 16-18 minutes, until golden brown. While still hot, brush with glaze to shine. For glaze, mix milk and sugar and bring to a boil, cool slightly.

For an Easter ring with dried fruits, we need:

Easter Ring Dough Ingredients:

  • 225 grams of flour;
  • 90 ml. milk;
  • 2 tbsp Sahara;
  • 2 tbsp butter;
  • 1/2 tsp salt;
  • 1 tsp dry yeast.

Easter ring filling ingredients:

  • 1/2 cup dried apricots (or dried fruit mix)
  • 1/3 cup raisins;
  • 1 tbsp butter;
  • 1/4 cup sugar;
  • 1.5 tsp cinnamon;
  • 1/2 tsp ground allspice.

Easter Ring Glaze Ingredients:

  • 3 tbsp powdered sugar;
  • 1 tbsp orange juice.

Go! Mix flour, salt, sugar and yeast in a large bowl.

Pour milk and butter into the flour mixture and knead the dough. Nothing sticks to anything, we like this picture.

Our dough is yeast, which means it should stand for at least an hour in a warm place. In the meantime, we will prepare for the near future: lay out a baking sheet with baking paper and grease it with oil, mix dried fruits with spices and sugar.

And as soon as the dough is suitable, we roll it into a rectangular layer and grease it with melted butter.

... we roll it up in the form of a roll and transfer it to a baking sheet prepared in advance so that the edge of the roll is at the bottom.

Now we connect the edges of the roll into a ring (you can grease them with milk or water to better stick to each other).

From the outer side of the ring, carefully cut the roll with scissors by two thirds of its thickness. Cover the baking sheet with a towel and leave it alone for another half hour.

Rest time is up! We send our Easter ring to the oven, heated to 200 ° C, for 20-25 minutes. Then, as usual, we will wait for cooling.

And in order not to just sit there, here's a task for us: pour orange juice drop by drop into powdered sugar until you get a glaze of an acceptable consistency. Chicken breast - 3 halves

celery root - 200 gr
carrots - 150 gr
onion - 100 gr
garlic - tooth
raw chicken eggs - 3 pcs
soft-boiled chicken eggs - 3 pcs
parsley - 1 bunch
puff without yeast dough— 500 gr
homemade mayonnaise - 100 gr
vegetable oil for frying vegetables, salt, pepper to taste

raw chicken egg - 1 pc.
vegetable oil - 200 gr.
vinegar - 1 dessert spoon
mustard - 1 dessert spoon
salt, pepper to taste


Pour vegetable oil into a deep glass of a hand blender, beat in an egg, add vinegar and mustard, salt and pepper. We lower the hand blender to the very bottom - this is important, since in this case the blender will beat the eggs first and the oil will start to flow a little later, in small portions and then the mayonnaise will turn out thick and dense. If the blender is not lowered to the bottom, then it will begin to mix all the ingredients at once and the mayonnaise may turn out to be watery.




We shift the finished mayonnaise into a bowl and set aside, we will need it a little later.

Now let's start preparing the "Easter ring with eggs"

Cut carrots, celery and onion into large pieces.


And grind in a food processor.


Then fry the resulting vegetable mix in a frying pan with a little vegetable oil.


We pass chicken breasts through a meat grinder along with garlic.


In the resulting minced chicken add fried vegetables raw eggs, chopped parsley, salt, pepper to taste and mix thoroughly until smooth.


Cut boiled eggs in half.


On a foil-lined baking sheet, we form a ring of the resulting minced meat and insert the halves of the eggs in a circle, slightly sinking.


We cut the puff pastry into equal strips and lay out the sides around and in the middle of the ring, and also lay the ribbons between the eggs, as if intertwining the ring, bending slightly under the bottom. Lubricate the minced meat with homemade mayonnaise, and the dough with the remaining egg, after beating it in a bowl.
