Well, our dough is "rested", and we start baking. Heat the pan well and grease vegetable oil... As soon as the pan begins to "smoke", pour a small amount into the pan with a large spoon or ladle, tilting the pan so that it spreads over it in a thin, even layer.

As soon as the bottom is slightly browned, quietly turn it over with a spatula or a wide knife to the other side. We bake over medium heat, then the pancakes will be fluffy, ruddy and easily removed from the pan.
