Fried pies without yeast, are especially popular in our family. Mom always baked them. Her crumpets and pies are a great childhood holiday.

My older sister also loves to bake them. She makes them special, very tasty, large and ruddy. Before putting them in a frying pan, she rolls them out thinly, along with the filling. The pies are exceptional. Today I will introduce you to her recipe.

Ingredients:

  • Sour milk (kefir can be used) - 0.5 l;
  • Soda - 0.5 tsp;
  • Egg - 1 pc;
  • Salt - a pinch;
  • Sugar - 1 tbsp. spoon;
  • Vegetable oil for frying.

Preparation

Throw soda into the sour milk. Mix well so that it goes out in it. Then we drive in an egg and add sugar and salt. Gradually adding flour, knead homogeneous soft dough and roll it into a large ball, which we then cut into convenient portions. We make sausages from them and a mode for slices. Roll out these slices with a rolling pin to a thickness of 5 mm.

You can roll out the cakes thinly and cut circles from them with a glass with thin edges. Put the filling in the middle of such a circle with dough and mold the edges well. Then roll out the finished pie with a rolling pin. We leave, let the pies stand for 15 - 20 minutes and then fry. Pour vegetable oil into the pan, and put the pies seam down so that they are half immersed in the oil.

Fry pies on both sides until a beautiful golden color. We take any filling for pies: potatoes with liver, fried cabbage with carrots and onions, any thick jam, strawberries or cherries with sugar, so that the juice does not flow out, add a little starch. Yeast-free fried pies are ready.

You can also make a filling with mushrooms:

  • Champignons - 500;
  • Boiled eggs - 3 pcs.;
  • Onions - 200 g;
  • Boiled potatoes - 2 pcs.;
  • Pepper, salt to taste.

Boil potatoes, eggs and chop finely. Rinse the champignons well, fry with onions and simmer a little. Then mix everything, pepper, salt.

  • Margarine - 150 g;

Preparation

Mix flour with soda and sift. Stir sour cream, eggs, salt and sugar until salt and sugar dissolve. Beat the softened margarine a little and gradually add a mixture of sour cream with eggs to it, then flour and quickly (in 20-30 seconds) knead the dough. Pour milk to the whipped mass, lay out baking powder or soda, mix well with a spoon or spatula.


Add flour to the mass, sifting it through a sieve.


Stir the dough gently with a spoon so that there are no lumps left. This is the kind of creamy consistency you should get.


It remains to pour the berries into the dough and mix.



Grease the form with a thin layer of oil, put the dough into it. It is clear that the smaller the diameter of the mold, the higher the cake will be. I have a mold with a diameter of 20 cm.
