First, let's prepare the dough.

Put the soft into the bowl butter and lightly beat it with a mixer or carefully rub it with a whisk.

Add a pinch of salt, sugar and mix.

Then, in 2 doses, add the egg yolks, continuing to mix, it is not necessary to beat strongly.

Mix dry ingredients separately.

Since flour is different for everyone, I took a little more than according to the recipe and will set it aside right away, it may not be needed.

Add to sifted flour baking powder, vanillin and mix dry products.

Add part of the resulting mixture to the bowl and knead the dough.

While the mass is soft, you can mix with a mixer, then adding the remaining flour, quickly knead shortbread dough hands.

Once the dough has formed into a ball, transfer it to a floured work surface and knead for about a minute.

The shortbread dough is ready, it is very tender, we try to carefully roll it into a layer according to the size of your form, taking into account the height of the sides.

We carefully wind the dough on a rolling pin and transfer it to a form, I have an oval one, 22x32 cm in size, if you have a round form, take a diameter of 26 cm, which you don’t need to lubricate with anything, in extreme cases, cover it with parchment.

The dough is very soft and crumbly, don't let that scare you.

Our task is to cover the bottom and sides of the mold with dough, and this can be done without rolling it out, simply distributing it in an even layer over the entire inner surface, setting aside about 1/4 of the dough in advance, it will come in handy a little later.

I have this lump of dough left after I aligned the edges of the form.

We collect the remaining dough into a ball, put it in a bag and send it to the freezer, and the form itself with the dough in the refrigerator.

Let's prepare the filling.

Pour the squirrels into the bowl, I have room temperature, add vanillin and beat until fluffy foam.

Continuing to beat, add sugar in several steps, I poured 150 gr., But if the apples are very sweet - 100 gr. will be sufficient.

Beat egg whites with sugar until firm peaks form.

Now let's prepare the apples.

We clean them from the skin and rub on a coarse grater, throwing out the core.

Sprinkle grated apples lemon juice so that they do not darken and mix well.

Products for the filling are ready.

We take out the form with the dough from the refrigerator, put the grated apples into it, evenly distribute it over the entire form and slightly compact it.

Spread egg whites whipped with sugar in an even layer on top of the apples.

We take out a frozen lump of dough from the freezer, and rub it on a coarse grater.

Sprinkle the resulting crumb evenly over the top of the cake.

We send the prepared form to a preheated oven, the temperature in which is 160-170 ° C (320-338 ° F) and bake for 40-50 minutes.

You can cook this cake not only with apple filling, any not very juicy fresh fruits and berries will do, and if you plan to use frozen ones, I recommend defrosting them first, otherwise the filling will leak.

For the convenience of removing the finished cake, it is better to use a split form.

My cake has been baked for 50 minutes at 160°C (320°F) and is completely done, take it out of the oven.

The cake turns out surprisingly fragrant, tender and tasty.

  • Chicken eggs - 2 pcs.
  • Sugar - 3/4 cup (if you like sweet, feel free to use a full glass)
  • Butter - 180 gr. + not a large number of for mold lubrication
  • Baking powder - 1 teaspoon
  • Cold water - 2 tbsp. spoons

How to cook:

Separate egg yolks from whites. Now a huge number of devices are being sold in order to do it right, you can buy a similar gadget for your kitchen or separate it the old fashioned way, manually, the most important thing is to do it carefully so that not a drop of yolk gets into the proteins (since meringue from proteins can don't get flustered).

Add sugar (half of 3/4 cup), salt on the tip of a knife (to taste). Stir with a whisk.

Then 180 gr. softened butter is added to the egg-sugar mass. Stir until smooth (but most likely it will not be possible to make a completely homogeneous mixture, and this is normal for shortcrust pastry).

The next step is to add flour to the shortbread dough. Using a sieve, sift the flour with baking powder in parts, gradually stirring and controlling the density of the dough.

We need to collect all the dough into a ball. To do this, you need to pour 2 tbsp. spoons of ice water and continue kneading with your hands. Try not to knead the dough (like yeast on, for example) or on, but simply combine all the pieces of dough into one ball.

It turns out a ball of soft shortcrust pastry.

We separate one third of the dough from the total amount and send it to the refrigerator (and preferably in the freezer for 15-20 minutes).

We spread the rest on the middle of the baking sheet, in which we will bake the cake. Form / baking sheet should be covered with baking paper, grease vegetable oil and sprinkle with flour, shake off excess flour.

With our hands, we level the dough along the bottom of the mold in such a way that the lower part of the pie with sides of 2-3 cm is formed. If a hole is accidentally formed, immediately close it with a piece of dough taken from the sidewall-side. It is necessary that the bottom of the pie be whole, without cracks and holes, otherwise the juice of the filling will flow out and ruin the whole thing.

In the meantime, peel the apples, cut into two halves, cut out the core with seeds.

We rub apples on a grater with medium cells. The apples will darken immediately - no big deal. If this bothers you, you can drizzle the apples with a little lemon juice.

    3. Preheat the oven to 180º. Grease a 26cm mold with butter. We will serve the cake in it, so the form will need to be more or less presentable.
    4. Divide the shortbread dough into 2 equal parts and roll out 2 layers 1 cm thick. Put one layer into a mold. The size of the layer should be larger than the diameter of the mold. We lay it so that the dough completely covers the bottom and walls of the mold and fits snugly against them.
