Yesterday I once again cooked a cake, and today I share the recipe and impressions. This is a variant of a honey cake, but not a classic one and, frankly, I really fell in love with it from the first try. If you haven't cooked one yet, I highly recommend trying it. You can experiment a lot with it by adding various fruits, berries or nuts. Let's get started.

For making a cake "Medovik" with sour cream prepare products according to the list.

Put honey, sugar, sour cream, egg, soda in a saucepan. Stir, add oil and put the pan on water bath... Stirring occasionally, keep in the bath for 20 minutes, the mass is foamy.

Let it cool a little and add flour to the warm one, mix well, I trust this process to the combine.

The consistency of the dough for "Medovik" on sour cream is as in the photo, I would like to add more flour, but this is not necessary. We remove the dough in the cold for 15 minutes, during which time it will cool down and become denser.

In the meantime, you can start making sour cream.

Beat the sour cream with sugar until creamy. If you took sour cream with a fat content of 30%, then the cream should turn out as in the photo, not liquid. Do not interrupt the sour cream so that it does not turn into butter.

Divide the cooled dough into 6 parts. Roll each piece into a 3 mm thick circle and cut out on a plate.

We poke holes with a fork.

We bake in an oven preheated to 180 degrees for 6-8 minutes (!)

After baking, the cakes should remain soft - not overdried or browned. We also bake the cuttings from the cakes - they are needed for sprinkling.

Let's start assembling the Medovik. Lubricate the cooled cakes with berry jam with sourness.

Then we put a layer of cream. You can add cherries or other chopped fruits to taste and desire.

Grind the scraps into crumbs and sprinkle the cake on it.

  • baking soda - 1.5 tsp;
  • sugar - 200 g;
  • butter- 35 g;
  • flour - 300 g (+ about 50-100 g for kneading).

For the cream:

  • sour cream 20% - 400 g;
  • cream from 33% - 150 g;
  • sugar - 150 g;
  • vanilla sugar - 10 g.

For decoration (optional):

  • almonds - 5-6 pcs.;
  • almond petals - 10-12 pcs.;
  • gelatin - 5 g;
  • cocoa powder - 1-2 tsp;
  • chocolate syrup or melted chocolate.

Honey cake classic recipe with photo step by step at home

  1. We will prepare the dough for the honey cake according to the classic recipe - in a "water bath". Pour some water into a small saucepan, place a heat-resistant bowl of a suitable size on top so that its bottom touches the liquid level. Bring the water to a boil over low heat and then melt the bar of butter.
  2. Next, add the entire norm of sugar, honey and soda at once, drive in two large raw eggs... Stirring constantly, keep the mixture in a "water bath" for 5 minutes.
  3. Next, gradually add 300 g of flour, without ceasing to intensively knead the mass. We achieve a uniform consistency without lumps. After 3 minutes, remove the flour mass from the stove.
  4. After cooling to a warm state, put the contents of the bowl on a work surface sprinkled with flour. We knead the plastic dough for honey cakes by hand. Add flour until the mass stops sticking to the palms.

  5. Divide the finished dough into 4-5 equal parts. We place one of them on parchment and roll it into a thin cake. During baking, the crust will noticeably grow, so the thickness of the workpiece should not exceed 2-3 mm. We take a regular plate or any other round-shaped template and draw a contour with a knife blade. We separate the dough cuts from the cake and put them side by side - we will also bake them and use them for decoration in the future.
  6. We transfer the parchment with the first cake to a baking sheet and send it to an oven preheated to 180 degrees. Bake for 5-8 minutes (until browning is noticeable). Meanwhile, on another sheet of parchment, roll out the next piece, etc.
  7. We turn the baked dough scraps into minimal crumbs using a blender or a regular crush.

  8. While the cakes are cooling, prepare the cream. Whip the cooled cream with sugar (plain and vanilla) until thickened. We begin to work with the mixer at the lowest speed, gradually increasing the speed of revolutions.
  9. Put the sour cream to the thickened cream and beat the mass again until the components are combined. We separate 100 g of cream and put it in a separate bowl - this part will be used for decoration.
  10. Put the first cake on a large plate. Apply a creamy sour cream layer.
  11. Next, lay out the second cake layer, coat it again, thus forming the whole cake. Leave the last cake without lubrication.

  12. We offer to arrange honey cake in the form of honeycombs with bees. To do this, add sifted cocoa powder to the remaining portion of the cream. Beat with a mixer or stir until evenly colored in a light chocolate shade.
  13. Soak gelatin in 4 tbsp. spoons of cold boiled water and leave to swell.
  14. We unpack the swollen gelatinous mass by placing the container "in a water bath" or in a microwave oven. Do not boil! As soon as the gelatin dissolves, cool slightly and, stirring, add a thin stream into the cream with vigorous stirring. Immediately fill in the dessert, remove the smudges with a napkin.
  15. We take a film with bubbles (which is usually used to wrap equipment and fragile objects) and press it against the surface of the cake, pressing the bubbles into the cream. Sprinkle the sides of the pastry with crumbs from scraps.
  16. We remove the honey cake with sour cream on the refrigerator shelf. We leave in this form overnight for impregnation. In the morning, carefully remove the film.
  17. We make "bees" from almonds. To do this, peel the nuts - fill them with boiling water and leave for 5-10 minutes. After the specified time, remove the already softened skin. So, we kneaded the dough, and divided it into equal parts, rolled it into balls and we will keep the dough in the refrigerator, taking out each ball as needed. I got 8 cakes per mold with a diameter of 20 cm.At the same time, I divided them exactly with the help of scales, so that all the cakes were certainly the same.


We roll out each cake on the rug or paper on which we will bake. We check with the help of the mold that the future cake fits exactly our diameter, pierce it with a fork so that it does not bubble and send it to the preheated oven up to 190 degrees for 5 minutes. So that the cake is baked until golden brown.


For sour cream, only three ingredients are needed - butter, icing sugar and sour cream. The oil should be at room temperature, so it is best to remove it a few hours before cooking. Beat the butter with a mixer and add icing sugar... The powder should be without grains, otherwise all the sugar grains will grind on your teeth. Then add a spoonful of sour cream 20% fat.
