How to make Armenian lavash?

The most popular and famous is Armenian lavash. For cooking, you will need the following simple products:

  • 400 grams of flour;
  • 225 grams of water;
  • 2/3 a small spoonful of salt.

The cooking process is as follows:

  1. Boil the water, add salt to it, cook until it dissolves, then the composition needs to cool slightly for five minutes.
  2. Sifted flour is poured into a deep container, a small funnel is made at the top of the hill.
  3. Next, hot water is poured into the flour, and the dough is kneaded using a mixer. After working with a mixer, you need to knead the dough for a couple of minutes with your hands only.
  4. A spherical lump is made from the finished dough, which is wrapped with cling film.
  5. After twenty minutes, the mass must be divided into eight parts, and rolled out into the thinnest layers.
  6. Next, the finished layers are fried in a pan on both sides.
  7. Hot cakes are laid out on damp towels and covered with the same on top to protect them from drying out. Instead of towels, you can sprinkle the cakes with water on both sides, cover with cellophane film for 2-3 minutes. Lavashik becomes soft.

You can put almost any filling into ready-made pita bread, for example, cheese, crab sticks, grilled pieces of meat or shrimp. In this form, it can be served on the table.


Recipe for making Georgian lavash

A flatbread prepared according to the Georgian method differs from the Armenian one, as it is thick and made with yeast. To make it, you will need the following ingredients:

  • A teaspoon of sugar;
  • 300 grams of flour;
  • 200 ml of water;
  • A small spoonful of salt.

Cooking Georgian flatbread in the oven:

  1. Sift flour and mix with sugar, yeast and salt.
  2. Further, in a hill of flour, a small depression is made, into which warm water is slowly poured.
  3. Then we begin to knead the dough, when it is ready, it should be put in a warm place for one hour.
  4. After the lapse of time, small balls are formed from the resulting mass.
  5. Next, a cake is made from each kolobok, which is sent to a baking sheet, previously greased with oil.
  6. In the middle of each cake, you need to make a depression in the center by simply pressing it with your finger.
  7. It is necessary to bake Georgian food until cooked in an oven preheated to 220 degrees.
  8. The finished bread is taken out of the oven, covered with a towel so that it does not become stale.

Such cakes can be eaten not only with filling, but also independently, as an alternative to ordinary white bread.


How to cook Uzbek lavash at home?

Cooking Uzbek lavash at home has its own characteristics. This pastry is cooked under the lid, so it turns out to be slightly damp and does not crumble at all. In order to make Uzbek-style lavash dough at home, you will need the following products:

  • 80 grams of milk;
  • A teaspoon of dry yeast;
  • 80 grams of water;
  • Egg;
  • A little sesame;
  • Two large spoons of vegetable oil;
  • 250 grams of flour;
  • A pinch of salt.

Delicious Uzbek bread is prepared as follows:

  1. Sift the flour, add salt, yeast and mix.
  2. Water and milk are heated, added to the flour composition, the dough is kneaded.
  3. Oil is poured into the mass, a bun is made from the dough, which is covered with a napkin and sent to a warm place for an hour.
  4. Further, a small cake is formed from the dough, the edges of which are slightly thicker than the middle.
  5. Meanwhile, a foil is placed on the bottom of the pan, then a cake, in the center of which punctures are made with a fork. Everything is covered with a dry towel and costs half an hour.
  6. The egg is mixed with a whisk or fork, it is smeared with the surface of the cake, which is also sprinkled with sesame seeds.
  7. The pan is covered with a lid and placed in the preheated oven for 15 minutes.

Ready airy fluffy pastries will be an excellent substitute for the usual bread. Such bread is stored for about 5-6 days.


Cooking thin pita bread in the oven

Thin cakes baked in a pan with your own hands are delicious and aromatic. They will be the ideal base for any kind of filling of various rolls and rolls. In order to make such an alternative to bread, let's take the following products:

  • 350 grams of flour;
  • Three tablespoons of vegetable oil;
  • A small spoonful of salt;
  • 150 grams of water.

  4. The rolled dough must be baked on a baking sheet for three minutes.
  5. When the cake begins to brown, it should be removed from the oven and rinsed with water.
  6. The procedure described above is repeated with each new cake.
  7. Wet layers of bread are folded in a pile and covered with a towel, in this form they should stand for at least half an hour.

You can store the type of bread prepared according to the method described above in a plastic bag.


Kefir lavash recipe

To prepare a thin cake on kefir, you will need the following ingredients:

  • Flour;
  • A tablespoon of vegetable oil;
  • A glass of kefir;
  • Soda one teaspoon;
  • A small spoonful of salt.

The dish is prepared in this way:

  1. Kefir is poured into a container, soda is added to it, everything is mixed, then salt and oil are added, everything is mixed again.
  2. Sifted flour is added to the composition obtained above, a tight dough is kneaded, which is covered with cling film and sent to stand for half an hour.
  3. Next, divide the finished dough into five parts, from which you will make koloboks.
  4. Roll each bun into thin layers with a rolling pin.
  5. The tortillas are fried in a skillet on both sides.

Cover the hot freshly baked bread with a towel to keep it from drying out and stale.

Most of all, I like to eat them in the morning with tea or coffee instead of regular sandwiches. Of course, you can take them with you to work for a snack, but heating them in the microwave, you will lose the most delicious - the crispy crust. Therefore, it is better to eat them immediately after cooking.

  • When rolling the roll, remember to tuck the edges to prevent the filling from falling out during cooking or eating.
  • Place the rolled roll with the edge down so that it does not accidentally unwind.

  1. So, let's start preparing the filling. We send four chicken eggs to a saucepan to boil. Grind the crab sticks using a fine grater. To make it easy and simple, you do not need to defrost them too much.
  2. Hard-boiled and cooled eggs are also three on the same grater. You can simply mash canned fish with a fork, but I don't like bones in the filling, so I put the pieces of fish in a blender. Turned into a pasty homogeneous mass.
  3. Add canning paste and mayonnaise to eggs and crab sticks. There should be so much mayonnaise that the filling is neither dry nor too runny.
  4. Last but not least, the filling ingredient is dill. Wash it, chop it finely, add it to the rest of the ingredients and mix thoroughly.
  5. Here's what should come out in the end: We spread the lavash on the table and spread the filling on it with a savory layer. Then we roll up and put in a mold or on a baking sheet.

  2. We combine all the prepared ingredients, add the cheese grated on a coarse grater. You do not need to salt, in my experience, the salt found in ham and cheese is enough.
  3. We fill the filling with sour cream to add juiciness. I have a large lavash 70x40 cm, I cut it into 2 parts. Lubricate the pita bread with sour cream, beaten with an egg.
  4. We distribute the filling over the pita bread, it is convenient to do this with a culinary scraper or spatula. We roll up the roll. We do the same with the second half of the pita bread.

Oven baked pita roll with minced meat and cheese is such a wonderful dish that it is highlighted in color in my recipe journal. Such a meatloaf is prepared in a few minutes. The taste is simply delicious, the ingredients are inexpensive and affordable, and the dish itself can even be served on a festive table. To be honest, this is one of my favorite lifesavers in case of unexpected guests. And pets are often asked to bake a roll. It is only better to cook a double or triple portion at once, so that there is enough for everyone.

Ingredients:

  • minced meat - 350 g
  • chicken egg - 2 pcs.
  • mixture of Provencal herbs - 1 tablespoon
  • salt - 1/2 tsp
  • pita bread - 1 sheet
  • ketchup or tomato sauce - 2 tablespoons
  • mayonnaise - 1 tablespoon
  • hard cheese - 100 g
  • butter - 2 tablespoons
  • fresh or dried dill - to taste

Preparation:

  1. Let's prepare the filling. Put fresh or defrosted minced meat in a deep bowl and drive in the eggs. If you take minced pork, then the roll will turn out to be more satisfying. Chicken or beef will make the dish more tender, dietary. We also send salt and a mixture of dry herbs there.
  2. If you like other condiments, you can use them - it's a matter of taste. Knead the contents of the bowl well. We unfold a sheet of pita bread on a flat surface. Lubricate it with tomato sauce and mayonnaise. Try not to overdo it with the quantity - the roll will be juicy anyway.
  3. It is convenient to use a silicone brush. Now we lay out the prepared filling. The layer should turn out as in the photo - no more than 1 cm thick. Sprinkle the minced meat with cheese grated on a fine grater. Here already, the more the better. A little tip: if you are preparing a double or triple portion, then stack the pita bread on top of each other.
  4. So it will be convenient to prepare the rolls in turn - you roll one and you can immediately do the next. Wrap the lavash with minced meat so that it is quite dense. We bend the edges inward - in this form it looks neater, and the juice will not flow out of the roll.
  5. Grease a suitable baking dish with vegetable oil. We spread the stuffed pita bread in a circle in the form of a snail. We generously cover the entire surface of the lavash with softened butter. Thanks to this, an incredibly appetizing crispy and crispy crust forms on the roll.
  6. We bake in the oven at a temperature of 220 degrees. After 30-35 minutes, the treat is ready. We take it out of the oven, sprinkle with dill and, after cutting, serve. This roll is equally good both hot and cold.

A quick recipe for pita bread roll in the oven

Real thin Armenian homemade lavash is baked over an open fire in special semicircular ovens arranged right in the ground, so it is impossible to reproduce the entire technology at home, and especially in an apartment. Nevertheless, in the oven you can bake unleavened flat cakes that are very similar in taste, which will successfully replace lavash in a variety of dishes.

Ingredients for making homemade lavash:

  • flour - 2 tbsp.
  • water - 0.5 tbsp.
  • sunflower oil - 1 tbsp. l.
  • salt - 0.5 tsp.

Recipe for making thin Armenian lavash baked in the oven:

1) To prepare the dough, you need to take very cold water and flour in a ratio of one to four (approximately). Pour most of the flour into a deep bowl and gradually add water to it, stirring the dough with a spoon (immediately add salt and butter to the flour).

2) When the dough is thick enough, transfer it to a floured table and knead with your hands until it is smooth and elastic.

3) Cover the dough with a foil so that it does not dry out, and leave for 15-30 minutes. During this time, its structure will become more delicate and it will slightly lose its elasticity.

4) We make the second batch, adding some flour on the table, and again leave the dough covered for 15-30 minutes.

5) Now we knead the dough completely and divide it into small equal pieces.

6) The part of the dough that will not be used immediately is removed under the film. We put the oven to warm up to 200 gr. celsius, and roll the dough pieces as thin as possible.

7) Put the rolled flat cake on a dry baking sheet and put in the oven for a few minutes.

We determine the readiness of the pita bread by its browning, but not the entire surface should be browned, but only small areas on the hills (in the oven, the pita will kind of bubble).

8) Remove the finished cake from the baking sheet with tongs and immediately rinse it slightly with cold water to moisten its surface.

9) Put the baked pita bread in a stack and cover with a damp towel.

10) We leave them like this for a while. When the cakes are no longer dry and brittle, they need to be put in a plastic bag. In the bag, the pita bread will finally be moistened and will easily roll up into rolls.
