  • 400 g of coarse-grained curd;
  • one freshest egg;
  • 3-4 tbsp semolina;

  1. Beat eggs well with salt and sugar. A relatively small amount of the latter prevents the burning of syrniki in the pan. And you can sweeten the finished products already when serving.
  2. Pour semolina into the resulting egg mass and let it swell for a few minutes.
  3. Introduce the cottage cheese slightly pounded with a fork into the workpiece and mix well.
  4. Form balls with wet hands and flatten them to the desired height.
  5. Immediately immerse the food in the boiling oil in the pan. In order for the syrniki to bake well, the fire should not be very high.
  6. As soon as a crust appears on the underside, turn the syrniki over and fry on the other side. Serve slightly chilled with any suitable sauce.

Lush cheesecakes - recipe

Ready-made cheesecakes should not only be tasty, but also lush, so that they melt in your mouth. And it will come in handy in this next recipe... Take:

  • 350 g of low-fat cottage cheese;
  • 2 fresh eggs;
  • about 5 tablespoons white wheat flour;
  • 2 tbsp Sahara;
  • ½ tsp soda;
  • a little salt to contrast the taste.

Preparation:

  1. Mash the curd with a fork in a deep bowl.
  2. Beat the eggs separately with a mixer with salt and sugar to double the whitish bubble mass.
  3. Add to the egg mass in the cottage cheese, add soda, quenched with table vinegar, or better with lemon juice.

Sometimes sweet cakes and pastries with cream are strictly prohibited. And you want something tasty and sweet madly. In this case, you can do diet syrniki that will be not only tasty, but also extremely useful.

  • 200 g of cottage cheese with a minimum percentage of fat;
  • 1 egg white;
  • 2 tbsp sifted flour;
  • a pinch of cinnamon;
  • 1 tbsp raisins;
  • 1 tbsp honey.

Preparation:

  1. In dietary cheesecakes, raisins take the place of the usual sugar. It provides the sweetness you want. Sort out the dried fruits, pour boiling water over, drain the water after a couple of minutes. Dry the berries on a towel and roll in flour.
  2. Enter the raisins prepared in this way into the curd, add cinnamon and protein. Rub thoroughly with a fork.
  3. Pour flour on the table, put the curd mass and use your hands to roll a long sausage about 5 cm in diameter out of it.
  4. Cut it into small "washers" with a very sharp knife dipped in water.
  5. Now the most important thing: diet cheesecakes cannot be fried the usual way, since they will absorb all the fat and cease to be so. But they can be baked in the oven, slow cooker, or steamed. In the latter case, the syrniki will not have a golden brown crust, they will remain light.

If there are no eggs in the refrigerator, this is not at all a reason to refuse delicious cheesecakes. After all, you can cook them without the specified ingredient. Why take:

  • a couple of packs of cottage cheese, 180 g each, no more than 17% fat;
  • a pinch of salt;
  • 1-2 tsp Sahara;
  • 1 tbsp flour for dough and a little more for boning;
  • frying oil.

Preparation:

  1. Put the cottage cheese from the packs in a bowl. Add salt and sugar. (You should not overdo it with the latter, as the sugar will very quickly turn into syrup and require more flour, which is not very good in the case of cooking cheese pancakes without eggs).
  2. Rub the mixture well with a fork and add a spoonful of flour. Keep kneading soft dough spoon.
  3. Grind the table with flour, lay out the curd mass, quickly form a sausage from it. Cut it into small circles, dip them just a little in flour, just so that they don't stick.
  4. Pour oil into the pan without greed, heat it well and put the prepared circles. Reduce heat. In the first few minutes, until the bottom grasps and does not brown enough, it is strictly forbidden to touch the syrniki. Otherwise, they will simply fall apart.
  5. Turn over later and fry on the other side.

Cheesecakes without flour - recipe

Finally, an absolutely incredible recipe according to which cheesecakes can be cooked even without flour. True, in this case, semolina and oatmeal will play its role, which of course adds delicious dish usefulness. For 450 g of low fat cottage cheese (9%), take:

    • 1 large or 2 small eggs;
    • 2.5 tbsp Sahara;
    • 4 tablespoons each dry semolina and rolled oats;
    • vanilla;
    • salt.

Preparation:

  1. In a deep bowl, combine cottage cheese, eggs, sugar and vanilla.
  2. Grind the hercules with flour and add together with semolina to the curd mass. Leave for 5-10 minutes for the dough to become smooth. Add a generous handful of raisins if desired.
  3. Shape the cakes using any convenient method and brown from both sides until golden brown. Serve hot with sweet toppings.

If we are talking about the very simple recipe curd cheese pancakes, then it is quite possible not to add any vanilla or its analogs, not to be smart with baking powder (baking powder) or soda, not to add semolina and not wait for it to swell ... Just the main ingredients, without which, in fact, cheese pancakes are especially and do not work, mix everything and fry.


In general, the taste and density of curd cakes directly depends on the cottage cheese, which can be dry or wet, and maybe even wet, fatty, or vice versa, fat-free. Of course, homemade fatty cottage cheese is great. But I'd rather eat it with raisins and sour cream.

For cheesecakes, most often I take bold cottage cheese from the store, 9% fat. We always have it of medium humidity. The wetter the cottage cheese, the more flour you will need, and the denser our cheese cakes will be. And if I see that the cottage cheese is just too dry, then I always add a spoonful of sour cream.

Let's start. The process is fast. Place cottage cheese, one tablespoon of flour (the remaining two for breading), sugar and an egg (about 55-60 grams) in a bowl and stir.


Sprinkle a table (most conveniently) or a board with two tablespoons of flour, spread the dough with such a loaf and roll a sausage from it, about 4-5 centimeters in diameter.
We cut the sausage into washers, about 2-3 centimeters thick, and put each one and shape it slightly. We do all this by rolling in flour on both sides.


We heat a frying pan with the addition of oil and lay out our cheesecakes. Fry them on both sides until beautifully ruddy, make little fire and bring under the lid to full readiness, another three minutes and you're done.

As you can see, I did very little of them, so if you are going to cook for the whole family, then double everything (the number of ingredients). Here is such an unpretentious and simple recipe for cottage cheese pancakes. Since now we still have strawberries in full, I whipped them with sugar in a blender and served them with cheesecakes. Very tasty!
