Pour the remaining oil out of the pan and make the sauce in it. You can cook it in a separate saucepan, but this, it seems to me, is useless. Boil the broth in a wok, add soy sauce, Apple vinegar, sugar and tomato paste.
Bring to a boil again and add the chopped bell pepper and carrots. Mix well. Cover and simmer over low heat for 3 minutes. Remove the lid, dilute the sauce starch in a small amount of water, pour into the wok and add the green onions. Put the fried meat on the fried onion and fill it with sweet and sour sauce. If it turns out to be thick, then pour in another half glass of water so that the dish is stewed out.

We simmer for 10-15 minutes for a very small fire... Some of the water evaporates. The starch takes up some more of the liquid. And you get delicious pieces of pork, which are enveloped by a rather thick sweet and sour sauce... And a minimum of gravy, in fact.

  • egg - 1pc;
  • starch - 4-6 tablespoons;
  • baking soda - 0.5 tsp;
  • vegetable oil- 2/3 cup (approx. 150ml);
  • garlic - 2 cloves;
  • soy sauce - 2 tablespoons;
  • tomato paste - 1 tsp;
  • vinegar 9% - 1 tsp;
  • ginger root is a small piece.
  • sugar - 1 tsp;
  • salt - 1.5 tsp.

How to cook Chinese starchy meat

  1. It is best to take a tenderloin for this dish, but the loin is also good. The meat should be frozen to make it easier to cut into slices, the size of which is about 3-4 centimeters and the thickness is no more than 0.5 centimeters. Then we leave them to lie down to completely melt.
  2. Meanwhile, peel the carrots, onions and garlic. Rub the carrots on a "Korean" grater with thin strips.
  3. Cut the onion into thin half rings.
  4. Garlic - in slices.
  5. Peel the ginger and cut it very finely.
  6. Cooking the sauce. For him, mix tomato paste with 1 tsp in a bowl. starch.
  7. Fill with half a glass cold water, add salt, sugar, vinegar, soy sauce and mix. We taste it, it should be sweet and sour.
  8. Now the batter. For him, separate into another bowl egg white... We don't need the yolk.
  9. Pour 1 tbsp. water, a few drops of vinegar and shake with a fork.
  10. Pour in starch, soda, salt and knead the liquid batter. Baking soda is needed to add pomp and vinegar to extinguish it.

  11. Pour oil into the pan. It needs to be heated very well, we make the maximum fire.
  12. Now that everything is ready, we will act very quickly. We dip each separate piece of pork in batter and put in butter. Fry no more than 3-4 pieces at the same time. 2 seconds on one side.

  13. Turn over to the second and fry again for 2 seconds.
  14. We take out and put on a plate. We do this with all the pieces. This is the first roast, after which the meat will be very light in color, not fried. If there are drops of batter in the pan so that they do not burn, they must be periodically removed with a slotted spoon and discarded.
  15. When we fry all the meat, return it to the pan all at once and actively stirring it, fry it a second time for 1 minute.
  16. We take it out again.
  17. Drain almost all the oil from the pan, leaving 3-4 tablespoons. We put onions, carrots, ginger. Fry for a few seconds, stirring occasionally.

1. Mix tomato and pineapple juice with lemon juice, add ground pepper.

2. We start slicing: cut the pepper, onion into half rings, crush the garlic, but do not cut it. Cut pineapple into cubes, tomatoes into slices. Hot pepper in circles. The meat must be cut into strips, about two centimeters thick.

3. We start frying with garlic and chili peppers, so that the oil then absorbs the pungency of one and the aroma of the other. As soon as they have fried until a crust appears, select them with a slotted spoon, send them to a sieve so that the excess oil is glass.

4. The next step is to fry the pineapple, it will give its sugar to the butter and the rest of the products, as it were, are caramelized due to it. After frying, we send it to the strainer.

5. Then we also fry the onion and Bulgarian pepper in turn, in the same way, that is, through a sieve, send it to the rest of the vegetables.

6. Now we fry the meat in small portions so that it has time to grab onto an appetizing crust.

7. Pour the oil after all our frying, put the fried vegetables and meat into a clean pan, stirring, heat them well.

8. Now for the fun part - adding the wine! We let it evaporate, while it will leave its aroma and taste in our dish.

V traditional recipe rice wine is added.

9. Then pour in the soy sauce, also let it evaporate. We lay the tomatoes that were waiting for their turn, let them stew for a couple of minutes.

10. And finally, pour in the previously prepared sauce, simmer for another ten minutes.

Chef Lazerson's Chinese Pork Recipe

We offer to cook the famous Gabadjou according to the recipe of the chef Ilya Lazerson. His recipe differs mainly in the marinade, which includes egg white. The option is interesting and also divinely delicious!

What you need:

  • Pork tenderloin - 400 gr.
  • Sweet bell pepper - 2 pcs.
  • Medium onions - 1 pc.
  • Fresh or canned pineapple - 200 gr.
  • Starch - 2 tablespoons. l.
  • Water - 1/3 cup
  • Garlic - 1-2 cloves

Sauce:

  • Sugar - 3 tablespoons. l.
  • Vinegar 9% - 3 tablespoons. l.
  • Soy sauce - 1 table. l.
  • Ground ginger - 1 tsp l.
  • Ketchup or tomato paste - 1 table. l.

Marinade:

  • Salt - 1/4 table. l.
  • White wine - 2 tablespoons. l.
  • Soy sauce - 1 table. l.
  • Egg white - 1 pc.
  • Starch - 2 tablespoons. l.

Preparation:

1. First, marinate the meat. To do this, we will cut the pork into small pieces, about two by two centimeters. Next, stirring, add the components of the marinade and let marinate at room temperature for half an hour.

2. Cut the onion, pepper into squares and the pineapple into cubes.

3. Let's make a gas station. Mix the ingredients of the sauce and mix thoroughly until smooth.

4. Separately dilute the starch with water.

5. Fry the meat in small portions in a large amount of oil. Fry for one to two minutes until light golden brown. We take it out with a slotted spoon so that the oil drains. When all the pork is ready, drain the oil.

6. Pour some fresh oil into a frying pan, about three tablespoons and into a heated one, squeeze the garlic through a press. Add the onion and as soon as the onion becomes soft, add the pepper to it.

7. After three minutes, pour in the prepared dressing, mix.

8. Another couple of minutes and add the fried meat, mix.

9. Add already diluted starch. We mix everything and simmer until the dressing thickens. Then add pineapples, stir and remove from the stove. We serve ready meal with rice. Ready! Bon Appetit!
