First, let's prepare the dressing sauce. Combine olive oil, soy sauce, lemon juice, sugar and mustard. Stir well. Remove the zest from the remaining lemon skin with a grater (only the yellow part). Apply lemon zest to the rim of the salad bowl (or bowl) using a brush dipped in water.
