How to steam chicken meatballs

Zucchini is a very juicy vegetable, and with its addition, minced meat can become watery, and the cutlets themselves can become sprawling. In traditional Soviet cooking, more eggs were added to cutlets in such a case.

In that step by step recipe we also made original adjustments by taking only their whites instead of 2 whole eggs, which is more useful.

  • We cut the fillet separated from the breast bone into arbitrary pieces, not very large, but you should not grind it, anyway, the blender will grind the meat into porridge.
  • We clean the zucchini from the skin, and if the bones are large, then we get rid of them. Grind the remaining pulp on a medium grating nozzle, add salt and leave to let the juices in for 5 minutes.
  • We cut the onion in the way that suits you, we will also send it to the blender later along with the chicken meat.
  • Now we take a large blender cup and load meat, onion, dry garlic, salt, seasoning and one whole egg into it. We break through all the ingredients until a uniform minced mass is obtained for about two minutes at maximum speed.
  • Now we transfer the prepared minced meat to a bowl, add the zucchini squeezed from the extracted juice there, combine them with active mixing, periodically beating the minced meat against the walls of the bowl.
  • We've got whites. We beat them with the addition of a pinch of salt with a mixer until the most dense foam, after which we gently introduce them into the minced meat with a spatula, trying not to destroy the airiness of the proteins, but mixing them as thoroughly as possible with the main cutlet composition.

  • The stuffing is ready, and now we can stick the meatballs. We wet our hands in water, separate a small piece from the minced meat, a little less than a tennis ball, and roll it into a slightly flattened ball.
  • We put the formed meatballs in a double boiler, and turn it on for 25 minutes.

Steam chicken meatballs with mushrooms

As you know, meatballs can be prepared not only from meat, but also with various additives. The classic combination of chicken and mushrooms is always successful, because in this way the dish acquires a completely different taste, more intense and rich.

Ingredients

  • Boneless chicken fillet (from the breast) - ½ kg;
  • Fresh mushrooms - 0.4 kg;
  • Large potatoes - 1 pc.;
  • Egg - 1 pc.;
  • Onion - 1 small head;
  • Muscat dried (ground) - 1 pinch;
  • Dried dill - 1 tsp;
  • Pepper mixture - ½ tsp;
  • Fine salt "Extra" - 2/3 tsp


How to make do-it-yourself chicken meatballs

  1. Chicken meat, washed mushrooms and onion we pass in a meat grinder with the smallest nozzle. You can also use a blender to grind the ingredients.
  2. Salt the resulting mass and season with all available spices. Do not be afraid to use spices in your cooking, because with the right approach, they will be able to make your dish even tastier. In this recipe, we have chosen nutmeg, dill and a mixture of different peppers, but you can choose other favorite spices according to your taste.

Mushrooms themselves are very fragrant, but during the heat treatment process, their taste and aroma can be noticeably lost. To emphasize the originality of mushrooms, you should choose the right spices for them. Mushrooms are in perfect harmony with nutmeg, fenugreek, all types of pepper (except chili), oregano, rosemary, herbs(parsley and dill), garlic, onion and bay leaf.

  1. Now we take a potato, peel it, grind it finely on a grater and shift potato mass with one egg in minced chicken and mushrooms. Mix everything well, and you can start sculpting meatballs.
  2. We form small, round, plump lumps. If you wish, you can roll them in breadcrumbs to keep the juice inside as much as possible, but any deboning (crackers, semolina, flour) will add calories to your dish.
  3. We lay out the cutlets in a steamer cup at a small distance from each other so that the steam can freely pass between them and boil them evenly. The steaming time for these meatballs is 20 minutes.
