This time it was decided to cook all the same favorite cutlets, but in a slightly new way. And the recipe for making cutlets with gravy in a pan came in handy. I took 800 g minced pork(you can take both 700 g and 1 kg). Or cook the minced meat yourself by twisting the meat in a meat grinder. Put the minced meat in a bowl, where later we will add the rest of the ingredients.


Add two eggs, two tablespoons of sour cream to a bowl with minced meat (in total, 4 tablespoons of sour cream were indicated for this recipe, we will need the remaining two for making gravy for cutlets). Also salt and pepper the minced meat. Salt will need about 1.5 heaped teaspoons, pepper - 0.5 teaspoon. Finely chop the peeled onion and add to the minced meat too. I grated my onion. This pale yellow gruel in the center of the minced meat is a former onion.


First, with a spoon, and then knead the minced meat with your hands. At first, the consistency of the minced meat will be heterogeneous, but over time, the minced meat will acquire density and uniformity. If desired, you can beat it on the table, so the cutlets will be even more tender and fluffy.


We put flour in a large plate, it is needed for breading our future cutlets in gravy. With our hands moistened with water, we collect portions of minced meat and roll them into a ball. The size of such a ball is like a medium-sized tangerine. Then we form an oblong cutlet from the ball or leave it as it is.


Dip the future cutlets in flour and put them on the board. I decided to give the cutlets a rounded shape for a change, so I just slightly flattened the minced meat balls breaded in flour.


Heat the pan well with 2-3 tablespoons sunflower oil... Only after that we put the cutlets in a pan and fry them until golden brown on each side over medium heat. From 800 g of minced meat, such a number of cutlets is obtained, which is simply physically unable to fit in one pan. Therefore, we conditionally divide the blanks into two parties. First, fry the first batch of cutlets, and then move on to the second.


Cooking gravy for cutlets. To do this, take 500 ml of water and add 2 tablespoons of tomato paste and 2 tablespoons of sour cream to it. Also add a tablespoon of flour and mix the liquid well to get rid of the flour lumps. Salt (1 teaspoon), add sugar (1 tablespoon) and a little sunflower oil (1 tablespoon). Mix everything again.


We fit absolutely all cutlets in a frying pan.


Pour the prepared sauce, cover the pan with a lid and send it to the stove to simmer over low heat for 25 minutes.

Ingredients:

  • Broth - 1 glass (you can take either meat or simply cooked on a cube).

Preparation:

Tomato sauce for cutlets

Ingredients:

  • Tomato paste - 4 tablespoons (use the paste so that it is rich, not the sauce or tomatoes)
  • Bulb - 2 large pieces.
  • Garlic - 5 teeth.
  • Boiling water or broth - 200 milliliters.
  • Sifted flour - 3-4 tablespoons.
  • Ground black pepper, ground red pepper, suneli hops, oregano and turmeric.

Preparation:

Peel the garlic and cut into small circles. In the remaining oil after cooking the cutlets, we will fry the garlic for about 2 minutes, and then sauté the onion, having previously peeled and washed it, cut it into small squares. This procedure will take no more than 7 minutes.

Place the flour in a pan with the onion and garlic and fry for a few minutes, stirring constantly until the lumps are removed. Now that the flour has become Brown color, put the tomato paste in the pan and stir again, then immediately add boiling water or broth. Stir again and let the mixture simmer, covered for about 10 minutes. Then add the spices and seasonings, stir and cover again, simmer for 10 minutes.

Vegetable sauce for cutlets with herbs

Ingredients:

  • Champignons - 200 grams.
  • Onions - 2 pieces
  • Carrots - 1 large piece.
  • Garlic - 5 teeth.
  • Hot pepper - 1 piece, small.

  • Flour - 3 tablespoons.
  • Broth - 1 glass (boiling water is also possible).

Preparation:
