How to make a royal cottage cheese pie.

So, you need to take:

  1. 3 cups flour.
  2. A glass of sugar.
  3. Half a teaspoon of baking soda.
  4. 100 g butter.
  5. 4 eggs.
  6. 400-500 g of cottage cheese (any fat content, you can take).
  7. A pinch of vanillin.

Pre-cool the oil in the refrigerator for at least an hour. If there is no time, you can send it to the freezer for a while. This will help you grate it with ease.

Then add flour, half a cup of sugar and baking soda. Rub the dough with your hands until it turns into small crumbs.

Place half of the dough on a greased baking sheet. Smooth it out slightly with your hands.

Mix cottage cheese with vanilla, eggs and remaining sugar.

Whisk the whole mixture with a blender until smooth. The more airy the filling is, the tastier and juicier the pie will be. You can simply grind all the cottage cheese through a sieve, and then mix with the rest of the ingredients with a spoon, but if you beat it with a blender, it will be tastier.

Place the resulting curd filling on the dough. Smooth with a spoon.

Sprinkle the rest of the dough on top. You don't need to tamp anything. Now just preheat the oven to 200 degrees and send the container with the dough there.

Bake for about 30-40 minutes (depending on the oven). When the cake is well browned, check its doneness with a dry wooden stick. Take it out. Refrigerate. Cut into pieces and enjoy.

Highly delicious pastries with cottage cheese.

  • 120 g butter
  • 100 g icing sugar
  • 1 yolk
  • 2 tbsp. l. sour cream
  • 2 tbsp. l. cocoa
  • 0.5 tsp baking powder
  • 1 kg of cottage cheese (soft, pasty and smooth, I have 9% fat)
  • 400 g cream 30-33%
  • 200 g sugar
  • 5 eggs
  • 60 g coconut flakes
  • 30 g starch (I have corn starch)

Many are probably familiar with a dish called royal pie or royal cheesecake. Usually it has a simple curd filling in the middle, and above and below shortcrust pastry grated. I have this dish on my website - Curd pie with sand crumbs... So today I present to you an improved version of this curd dish. I made the dough not simple light, but with the addition of cocoa, for a better taste contrast. The filling itself was ennobled with cream and coconut flakes. I also made the preparation of the filling closer to the principles of making cheesecakes, namely, I did not whip the mass for the filling, but simply mixed it thoroughly and baked it at a low temperature, thanks to which the filling turns out to be more tender, creamy, smooth.

Step by step video recipe

The resulting pie came out incredibly tasty, it's not just some kind of cheesecake, it's exactly the royal pie)) I'm incredibly happy with the result!

Preparation:

Flour, icing sugar, cocoa, put baking powder in a food processor, add soft diced butter.

Grind into crumbs in a food processor. You can also cook by hand, everything turns out fine too, just grind the flour and butter with your fingertips, or chop on the board with a knife.

Add the yolk and sour cream, turn on the chopping again.
Then, mold the dough with your hands into a ball. Do not knead the dough, only to a minimum to collect into a ball.
Divide the dough in half and put in the refrigerator for an hour, or in the freezer for 20-30 minutes.

Cooking the filling.
Put cottage cheese and cream in a container, grind well together with an immersion blender into a homogeneous smooth mass. If your curd is not homogeneous, wipe it first through a mesh colander.
Foods are desirable at room temperature, so they combine more easily.

Add eggs, sugar, starch, mix well together with a blender.
There should be no grains of cottage cheese in the finished mass!
Add coconut flakes, stir with a spatula. If coconut flakes do not want to add, then just exclude it, it will still turn out delicious.
The filling is ready.

Grate the first half of the dough on a coarse grater, arrange in shape (my shape is 25x25cm), press lightly.

Grate the other half of the dough and sprinkle evenly over the filling surface.

Put in an oven preheated to 160 degrees, bake for about 50-60 minutes, or navigate your oven. When tapped, the filling will wobble in the center, just like when baking a cheesecake, this is normal.
Ready pie cool. Although it is warm and tasty, I liked it better immediately after cooling down. After being stored in the refrigerator the next day, it became a little denser, already like a cheesecake, but no less tasty from this.

King Pie is a familiar dish to most people. In its usual form, it has a simple filling, consisting of curd, which is placed in the center of the cake. Delicate, sweet, incredible royal cheesecake with cottage cheese on your table! Make it at home using one of our selection of recipes.

Unlike the usual cheesecake, which is a cake of dough with an open filling, the royal is more like a closed grated cake with a delicate curd filling, reminiscent of a soufflé. The baked goods are very tasty, with a soft center and an appetizing crunchy top layer. Often, even those who do not like and do not eat cottage cheese do not refuse a piece of such a pie.

Tsar's cheesecake is especially good chilled, but you can eat it warm, if you wish, supplemented with sour cream or fresh berries... We offer a detailed step by step recipe this wonderful dessert!

For the test:

  • flour - 240 g;
  • sugar - 100 g;
  • butter (margarine is possible) - 150 g.

For filling:

  • fine-grained cottage cheese (preferably from 9%) - 500 g;
  • soda - ½ tsp;
  • vanillin - a pinch;
  • sugar - 100 g (or to taste);
  • medium-sized eggs - 3-4 pcs.;
  • salt - ½ tsp.

Rub the butter on a coarse grater or chop it into small pieces with a knife. The butter bar must be hard and cold (you can send it to the freezer for 30-40 minutes before starting cooking). Add sugar and immediately the entire norm of sifted flour.

Rub the mass intensively with palms until small crumbs are obtained. We work quickly so that the butter does not have time to melt from the warmth of our hands.

We distribute about 2/3 of the resulting crumbs, ramming, along the bottom of a heat-resistant split container, forming a board along the edges (in our case, a round baking dish with a diameter of 22 cm was used). It is advisable to cover the bottom of the container for safety net with oiled parchment, and grease the walls butter.

How to make a filling for a royal cheesecake? Carefully knead the cottage cheese until smooth, get rid of graininess and curd lumps. Add baking soda, salt and vanillin. Pour in sugar, the dosage of which we vary independently.

Drive one by one into the curd mass raw eggs, stirring the mixture thoroughly each time.

Since the consistency of the filling will greatly depend on the size of the eggs used and the moisture content of the cottage cheese, we are guided by the state of the mass - you may need a little more or less eggs than indicated in the recipe. The curd filling should not be dense, but also not very liquid, like thick sour cream.

We fill curd mass the base of the cake prepared earlier.

Smooth out the filling and sprinkle evenly with the remains of sweet crumbs. We send the royal cheesecake to an oven heated to 200 degrees.

We bake for 40-45 minutes. As a result, the top layer of the cheesecake should brown slightly.

Cool the baked goods completely, and then remove the split board. Cut the pie into portions and serve!

Recipe 4: royal curd cheesecake with raisins (step by step)

For filling:

  • 500 g of cottage cheese;
  • 1 cup of sugar;
  • 4 eggs;
  • vanillin or vanilla sugar;
  • 1 tsp baking powder;
  • zest from half a lemon;

for the test:

  • 2.5 tbsp. flour
  • 1 incomplete glass of sugar;
  • 1 tsp baking powder;
  • 0.5 tsp salt;
  • 150 g butter.

First, let's make the filling. We combine all the ingredients in a deep and convenient container. It is advisable to take homemade, fat cottage cheese. Lemon zest should be grated on a fine grater.

Beat it all with a mixer or in a blender until the mass becomes homogeneous. In consistency, it is quite liquid - like dough for pancakes.

Prepare the dough in another bowl. In general, it is difficult to call it a test - it turns out a crumb. Mix dry ingredients. The flour can be sieved. If there is no baking powder, then regular baking soda (0.5 tsp) will do.

Now we take out the butter from the refrigerator and three of it on a coarse grater directly into a bowl with flour and sugar. Periodically dip a piece in a mixture of dry ingredients - this will prevent the grated oil from sticking together into one lump.

With our hands we quickly grind everything into crumbs. Cover the form with parchment or baking paper, grease with a little butter. We spread more than half of the sand crumbs into a mold, level them and make small sides around the perimeter.

Pour out the curd filling and sprinkle it with the remaining dough on top.

We send this beauty to bake in an oven preheated to 200 degrees. The cheesecake will stay there for exactly 45 minutes.

Well, now we turn to the most difficult part. We take out this delicate fragrant miracle and leave it in the cold for 6 hours. In a freshly baked cheesecake, the filling will be watery - do not be afraid, after cooling it will thicken.

Serve the Royal cheesecake with a cup of green tea, and I like to brew aromatic tea with mint and lemon. You can even cook for festive table... Hopefully this pie becomes one of your favorite cottage cheese baking recipes.

Recipe 5, wait: royally homemade cheesecake (with photo)

The recipe for a delicious cheesecake with cottage cheese will not "burden" us at all in time, but at the end we will get amazing pastries. The composition of the ingredients is by no means complex and includes products that are always found in home kitchen cabinets and refrigerators.

  • cottage cheese (preferably homemade) - 700 grams,
  • chicken eggs - 4 pcs.,
  • sugar - a little less than a glass,
  • a glass of flour with a "slide",
  • grams of 100 butter,
  • vegetable oil for lubricating the baking dish.

Breaking eggs into a deep bowl and adding sugar (without two tablespoons, which will go in the recipe for another case).

Beat everything thoroughly until the sugar grains are completely dissolved.

Add cottage cheese to the resulting mass.

Mix thoroughly again, achieving a homogeneous mass.

Put the bowl with the curd filling aside and prepare the crumb-topping. In order to prepare the so-called "crumb", add grated soft butter and sugar, which we left in stock, to a small amount of flour. Then, more and more flour.

We rub this mass with our hands until it spills out between the fingers - dry crumbs.

Lubricate a baking dish with vegetable oil,

pour half of the dry crumbs into it - dusting.

Then pour the curd mass over the crumb.

And then we fall asleep with the remaining half of the crumb.

We heat the oven to a temperature of 170 degrees. We put the form with the royal cheesecake in an oven preheated to 170 degrees for 35 minutes. We duplicate the readiness of the baking by piercing it with a match or a toothpick, their tip must be dry. After the specified time has elapsed, we take out the pastries from the oven. And we enjoy incredibly delicate taste royal cheesecakes with cottage cheese first ourselves (taking a sample), and then we treat our family.

You can serve such pastries to the table directly from the oven, but cold ones are also very good. We decorate the cheesecake with berries if desired.

Recipe 6: royal cheesecake with cottage cheese - simple and fast

  • Butter 200 g
  • Flour 2 tbsp.
  • Eggs 3 pcs.
  • soda 1 tsp
  • Sour cream 2 tbsp
  • Cottage cheese 5-7% 400 g
  • Lemon zest 1 pc.

A pack of butter, 2 cups of flour, 2 tablespoons of sugar and soda, quenched with lemon juice or vinegar, chop into crumbs with a knife.

You should get such a crumb.

All other ingredients for the royal cheesecake must be mixed for the filling.

You will get a homogeneous mass.

Pour about 2/3 of the crumbs into a greased form (frying pan) - this is the basis of the royal cheesecake, then pour out the filling, pour the remaining crumbs on top.

We bake the cheesecake in the oven for about 30-40 minutes.

Recipe 7: royal cheesecake with apricot jam

  • 200 g cold margarine;
  • 2 cups of flour;
  • 1 cup of sugar;
  • 1 sachet of baking powder.
  • For filling:
  • 500 g of cottage cheese;
  • 4 eggs;
  • 1 cup of sugar;
  • 200 g apricot jam;

Grind into a homogeneous crumb with your hands. This will be the dough for our "cheesecake".

Cool the royal cheesecake in a form that has already completely cooled down, cut and serve.

Recipe 8, step by step: delicious royal cheesecake

  • cottage cheese (homogeneous cottage cheese, without grains) - 300 gr,
  • wheat flour - 2 cups,
  • granulated sugar - 7 tbsp. spoons
  • slaked soda or baking powder - 1 tsp,
  • salt - 1 pinch
  • butter - 120 gr,
  • chicken egg - 2 pcs.,
  • vanilla sugar - 1 tsp.

Sift flour into a mixing bowl. Add a pinch of salt, 0.5 teaspoon of vanilla sugar and 1 teaspoon of baking powder. Stir.

Grate very cold butter on a coarse grater. Place a whole piece of butter in flour and roll well before grating. This will make the oil easier to rub, and the oil itself will heat up less. Dip the butter into the flour each time before touching the grater. Add 5-6 tbsp to the grated butter. tablespoons of granulated sugar.

Very quickly, rub the grated butter and flour with your fingers until you get a loose flour crumbs.

Divide the total flour crumbs into 2 parts (60% and 40%). Place most of the flour crumbs in a baking dish. I covered the bottom of the mold with parchment so that the finished cheesecake could easily move away from the mold. She greased the walls of the mold with butter. When baked, the sugar particles will turn into caramel. There is a risk that the caramel will stick and ready-made baked goods will not deviate well from the form. To prevent this from happening, do not ignore the advice on using parchment for baking.

In a separate bowl, combine the cottage cheese, two eggs, and some sugar. You can add sugar to your liking. I put 2-3 tbsp. spoons. The crust of the cheesecake will be quite sweet, since we put a lot of sugar in the shortbread dough.

Using a spoon or fork, stir the curd with eggs and sugar. The use of a technique or a mixer is generally not appropriate. The main thing is that the cottage cheese is homogeneous and without grains. I use commercial cottage cheese in briquettes.

Quite quickly, our mass will turn into a curd mixture, a little thicker than kefir. Add the remaining vanilla sugar to the mixture and stir again.

Pour the resulting curd filling into the mold for the dough. Spread evenly.

Sprinkle the remaining flour crumbs over the curd filling so that the flour crumbs completely hide the curd filling. Flatten.

Preheat oven to 200 degrees. Bake the royal cheesecake in a hot oven for about 40 minutes. As it bakes, the flour crumbs will brown, and a ruddy barrel will appear on the edges of the cheesecake. It is with the help of sugar, butter and heat that caramel is formed. It makes the crust of the cheesecake crispy and delicious. Don't think that this caramel is hard. No, it only gives a pleasant crunch, but the edges of the cheesecake are not hard at all. Such pastries are quite suitable for people of any age, from small to large. The finished cheesecake is very tender and very tasty.

Recipe 9: royal cheesecake with cottage cheese in a slow cooker

  • 100 g butter;
  • ¾ glasses of sugar;
  • 1.5 cups wheat flour.
  • 500 g of fatty cottage cheese;
  • 3 chicken eggs;
  • ¾ glasses of sugar;
  • 1 pinch of salt;
  • 2 tablespoons (no slide) potato starch;
  • vanillin to taste.
  • 10 g butter for lubrication.

We definitely choose fresh, farm-made cottage cheese for the cheesecake. Thoroughly knead the cottage cheese into a paste using an immersion blender. We try to make the mass homogeneous, without grains.

Add eggs, sugar, salt, starch and vanillin to the curd.

Knead the resulting mass thoroughly. It will be uniform, smooth.

We set the filling aside and prepare the sand base. Pour flour and sugar into the bowl of a mixer or food processor and stir.

Add soft butter cut into pieces. Mix thoroughly until fine crumbs are obtained so that no large oil lumps remain.

Grease the multicooker bowl with butter, grabbing about 3 cm in height.
Pour 2/3 of the sand crumbs into the bottom of the multicooker bowl. Using the fingertips, distribute it evenly over the entire surface, tamp it slightly and form a side about 2 - 2.5 cm high.

Now it's the turn of the filling. In theory, it should not go beyond the edges of the sides. But here it is important not to overdo it with these bumpers: in order for the finished product to look neat, higher sides should not be formed.

Gently sprinkle the entire surface with the remaining sand crumbs, trying to evenly distribute it.

We place the bowl in the multicooker. Royal cheesecake is prepared in the "Baking" mode. Usually the cooking time in a multicooker is 50 or 60 minutes in this mode. We bake the time that your slow cooker offers. My slow cooker has never let me down - there was always enough basic time for the Baking mode.
