Through half the sky hung a two-story (it's a pity that this is not visible in the photo) rainbow and for a moment it seemed to me that I heard the cry of cranes. It seemed to me, of course. Looks like my body really wants spring, so it "slips" me such sounds together with the real spring aromas of the awakening earth, smoke and the first flowers that rage in the insides. A neighbor's dog "leaked" through a gap in the fence.
I teach him Russian (his owner is Dutch). He already understands the words "cracklings" and "bone" perfectly. Today he was interested in apple pie, judging by the nose leading the owner straight to the kitchen.

Something I, as always, started in Kolomna, and continued in Buenos Aires. Looking ahead, I will say that the apple pie turned out this time too, although I added flour, topped up the yolk and experimented with pork lard. We "dared" most of the pie in the evening. True, they treated the "little brother" with such a name corresponding to the cake - Earl Gray! The doggie delicately devoured a miniature piece and retired, so as not to agitate the lovely hostess with the sweet euphonious name of Helintj for a long absence.

Shortcrust pastry apple pie recipe with step by step photos

Ingredients

  • 400 g flour.
  • 100 g sour cream.
  • 1 yolk.
  • 1 egg white for greasing the cake.
  • 160 g butter (goose, pork lard).
  • 150 g of sugar.
  • 1 teaspoon of baking soda.
  • 10 g vanilla sugar.
  • 1 teaspoon of citric acid.
  • 1 liter can of ready-made apple pie filling or 1.5 kg of fresh apples plus sugar to taste.
  • Half a teaspoon of cinnamon (optional).

How to cook

  1. Sift flour, put soda, powdered citric acid, sugar, lard or butter, yolk, sour cream in it.
  2. Knead the dough quickly. Do not achieve uniformity, act quickly so that the fat does not melt.
  3. Divide the dough in two.
  4. Cover with cling film and refrigerate for an hour.
  5. Line a baking sheet with oiled baking paper.
  6. "Dust" the work surface with flour.
  7. Roll half of the dough into a layer corresponding to the size of the baking sheet (I have a 28 x 24 cm baking sheet).
  8. Gently wrap the dough on a rolling pin so as not to tear.
  9. Transfer to a baking sheet, smooth.
  10. Put the finished apple filling on top.
  11. Spread it over the entire surface, sprinkle with cinnamon if desired.
  12. Roll out the second layer in the same way, lay it on top of the filling.
  13. I had a bit of cut dough and I made a little simple "decor" and smeared the surface with beaten egg white.
  14. Put the shortcrust cake in an oven preheated to 180 ° C for 45 minutes (in my oven).
  15. We take out the finished cake from the oven. It should have a golden surface.
    Circle around the perimeter with a knife.
  16. Put a plate on top, turn the pie on it.
  17. Remove paper.
  18. Turn over to another board. Here's a rustic apple pie.
  19. Cool by covering with a towel.
  20. You can cut and eat this apple pie, like shortbread with cottage cheese, warm and cold. It is quite good with milk and Earl Gray tea.

My remarks


Choose ripe juicy apples for the filling. And they don't have to be the largest. Small to medium sized good quality is fine.
