Fish baked in potatoes with cheese - DO NOT come off!

Saltwater fish baked in potatoes with cheese. This is not at all a complicated recipe for instant cooking any sea fish. To prepare the dish, you will need simple products and a little over an hour.


Fish fillet - 600 gr.

Potatoes - 8 medium pieces

Mayonnaise - 4-5 tablespoons

Spices (fish mix)

Dill - 2-3 branches

Any sea fish can be chosen for this recipe - both red (salmon, trout) and white (cod, hake, pangasius, etc.)

Cut the fish fillet into small pieces, season with salt, spice and marinate in mayonnaise (leave to marinate for about 30 minutes).

While the fish is marinating, prepare the potato mixture for baking. Grate peeled and washed raw potatoes on a coarse grater and squeeze. Grate the cheese and transfer 2/3 of it to the potatoes, drive in the eggs, salt. Mix well. Our "dough" is ready.

Spread the potato mixture into small flat cakes on a baking sheet. Put the fish with mayonnaise on top, on top of the fish - again the potato mixture. The topmost layer will be cheese again, 100 grams of which we left for this purpose.

  4. In order for the fish baked in Russian with potatoes to turn out with a golden brown crust on the surface, bake at a temperature of 200 ° C for 20-30 minutes. The readiness of the dish determines the presence of a brownish crust.

How to make white sauce

This ingredient is also understood to mean different types of product. Let us give classic version cooking. For this, a few spoons of sifted wheat flour lightly fry without oil in a pan, stirring constantly. It should take on a light yellow tint. Next, cool the flour a little and dilute it with milk (or milk with the addition of a small amount of fish broth). Stirring continuously, cook over low heat for up to 10 minutes. The sauce should come out medium thick. You can add a little salt. Strain the sauce before pouring over the fish. Serve the dish along with the sauce in which it was baked. It should be noted that this food spoils rather quickly. Therefore, it cannot be stored for a long time after preparation. But, as a rule, it is eaten immediately.

In foil

This baking recipe differs only in that the dish is cooked in foil. Put a piece of food foil into a prepared baking container and tuck it around the edges so that the juice does not leak out during cooking. Otherwise, the recipe and ingredients remain the same: fish, potatoes, white sauce and additives. Cooking in the oven for about half an hour (indicator of readiness - golden brown).

With raw potatoes

For cooking, it is best to choose fresh fish or frozen, but it is better to buy it from trusted sellers who will not advise bad ones. Even frozen carcasses come in varying degrees of freshness, and it is better to give preference to those that have been frozen recently.

Fish and chips in the oven- a great way to cook fish and a side dish for it at the same time in the form of a layered fish-potato casserole with tomatoes and cheese, juicy and aromatic.

During the cooking process, the potatoes are saturated with the "fish spirit", the tomatoes will give juice so that the baked dish is not dry, and the cheese forms a crust on top that will prevent the fish and potatoes from drying out. We like this dish with white fish (pike perch, pangasius, cod, haddock, halibut, etc.), you can try it with red fish and make your choice. The indicated number of products is designed for a large baking dish, servings for 6-8, you can do everything "in half size" if this is too much for you.

Need to:

  • Fish (fillet) - about 1 kilogram (we have pangasius in the photos for this recipe)
  • Potatoes - about 2 kilograms, maybe a little less
  • Fresh tomatoes - 2 pieces of medium size
  • Cheese (any hard cheese to your taste) - about 200 grams
  • Mayonnaise - 3-4 tablespoons
  • Table salt - approximately 3 "flat" teaspoons (1 teaspoon in fish and 1 teaspoon for each layer of potatoes)
  • Ground black pepper - to taste (we make 12-15 turns over fish and potatoes with a pepper mill)
  • Seasoning for fish (any ready-made dry from the store) - optional, about 0.5 teaspoon
  • Margarine or butter - just a little to grease the form, grams, probably 10.

Preparation:

Wash the fish (fillet) cold water, lightly dry with napkins or paper towel and cut into small pieces (focusing on about 3x4 or 2x3 centimeters).

Salt and pepper the fish, add seasoning for the fish, mix and leave to stand, “marinate” for 20 minutes.

Meanwhile, peel the potatoes, rinse with cold water and cut into thin, 2-4 mm, petals: in circles or, if the potatoes are large, in semicircles ( watch our recipe video!).

There are quite a few potato chips. We will lay them out in two steps.

Wash the tomatoes, wipe them and cut them across into thin, 3-4 mm, circles or semicircles.

Grease a baking dish with butter or margarine and put in a first layer about half of the chopped potatoes, season with salt and pepper.

Lay out the fish pieces with the second layer.

Put a thin layer of chopped tomatoes on the fish.

With the next layer, lay out the remaining potatoes, salt, slightly pepper (if desired, you can do without pepper here).

Lubricate the potato layer with a little mayonnaise.

Sprinkle with coarse grated cheese on top.

Place the dish with our fish and potato casserole in the preheated oven at medium height on a baking sheet or wire rack.

We bake at a temperature of 180-190 degrees (this is an average heating level) for 40-50 minutes. The time depends on the characteristics of your oven. We remind you again: if you use a heat-resistant glass dish, then it is recommended to put it in a cold oven, then turn on the heating, respectively, the cooking time will increase by 10-15 minutes (the time it takes to warm up the oven). Readiness is determined not only by time, but also by color: the cheese has melted, “grabbed” with a light crust and acquired a golden color, in some places starting to brown. So our baked one is already ready. Cut into portions with a spatula right in the mold and place on plates while hot. If you like the result (which we really hope), we recommend trying another method and baking. There, the side dish, however, will have to be cooked separately, but the fish is amazing.
