At the beginning of the 30s, this dessert with sugar was considered something of a gourmet delicacy and was not available to everyone. Now times have changed, and anyone who has a recipe and at least a little culinary skills can buy or make Berlin biscuits.

Biscuit products:

  • 500 grams of ready-made puff yeast dough;
  • 150 grams of sugar;
  • 2 teaspoons of cinnamon.

Glaze products:

  • 10 tablespoons of boiled or distilled water;
  • 8 tablespoons of sugar;
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice

Recipe

  1. In this recipe, we will use pre-made puff pastry that has been prepared in advance, but you can also buy it at the store. The main thing is that the dough is not frozen and not too thawed at the beginning of cooking.
  2. When we have the dough, we can start cooking, the recipe is simple. Sprinkle sugar on the work surface, put the dough on it and begin to roll it out with a silicone rolling pin into a thin layer (at least 2 millimeters). It is advisable to roll out the dough with sugar, since in the process heat treatment the sugar will begin to melt, and the puff pastry will be soaked from the inside with the resulting sweet caramel. Such is the little trick.
  3. Now it's time for the remaining sugar and cinnamon. These two ingredients need to be distributed evenly throughout the finished dough layer. Both sugar and cinnamon should be added based on your own taste.
  4. Now you need to start rolling up the layer of our delicious ready-made dough. We take the ends at the same time and begin to fold them to the middle to get a kind of "lambs with twisted horns". The edges of the dough should meet exactly in the middle of the bed.
  5. Now we need to cut our filled roll into small cookies. We do this with a sharp kitchen knife. The cookie should be about 1 centimeter wide. biscuits from puff pastry put on a baking sheet covered with parchment at a distance of 3-5 centimeters from each other so that they do not stick together when baking. Flatten the puffed ears with the filling on the sheet a little and give the same neat shape.
  6. It is worth baking such cookies from puff pastry in a well-preheated oven for 5-10 minutes. It will depend on the peculiarities of the operation of your oven. Remove the rosy cookies with the filling from the oven and leave to cool on the sheet. In the meantime, you can make delicious glaze.
  7. To prepare the glaze, we need to pour water into the saucepan and wait until it boils. Then reduce the temperature and add the required amount of sugar, mix well and cook the resulting sugar syrup at least 10-15 minutes. The readiness of the syrup is determined when a fork or spoon is immersed in it, if “sugar threads” appear when it is removed from the syrup, then the syrup is ready.
  8. Now you will need to do the following: cool the syrup a little and transfer it to the right bowl, we no longer need a stewpan. Next, add the zest and lemon juice to the syrup. We mix everything with a blender or mixer. As a result, we get a homogeneous and lush glaze.
  9. Using a silicone brush, cover the puff ears with sugar filling on the baking sheet with glaze. We give the glaze a little time to completely saturate the cookies and harden. After all these procedures, the cookies must be removed from the sheet and put into a vase.
  10. You can serve Berlin biscuits whenever you want, because they do not require any additions and are good in themselves. However, if you use jam, then it will not spoil the recipe in the least. With the right jam, you can beat both the Berlin pastry and the recipe in a great way. Goes well with raspberry jam, lemon jam, etc.

Cookies with icing or jam can also be made from yeast dough to check the difference between yeast and classic version... However, it should be borne in mind that the peculiarity of yeast dough is that it rises quite strongly during the preparation process.

However, having spent time and having worked hard once, you can safely prepare a base for baking for future use, freeze it, and use it as needed (the shelf life of the freezer is half a year). In addition, the dough made at home with your own hands, when you choose the products yourself and are sure of their freshness and naturalness, is many times superior in taste what is sold in supermarkets.

Yeast-free puff pastry

A lot of baked goods can be made using this recipe: puff cookies, all kinds of sweet and savory pies, pizza, and much more.

Ingredients

  • Butter - 220 gr. (can be replaced with margarine)
  • Flour - 150 gr.
  • Egg - 1 pc.
  • Cold water - 160 ml
  • Vinegar 9% - 1 tbsp
  • Salt - 0.5 tsp
  • Flour - 350-400 gr.

Cooking method

  1. To prepare Part N1, put cold butter, cut into pieces, into a bowl, not frozen, but simply from the refrigerator.
  2. Add the sifted flour. Finely chop the butter with a knife, and then knead it with your hands, collect it into one lump. Leave aside and move on to preparing Part N2.
  3. Sift flour into a bowl, add salt to it, mix.
  4. Pour 160 ml into a glass cold water(not ice cold), add the egg and stir well until smooth. Pour in a tablespoon of vinegar here.
  5. We make a deepening in the flour, and in three steps we add water with an egg, we knead.
  6. After the mass has become soft and does not stick to your hands, roll out a square layer on a floured surface. The size of the square should be approximately 25 * 25 cm.
  7. Put Part # 1 in the middle and wrap it in an envelope. Cover cling film and send it to the refrigerator for 30 minutes.
  8. After the lapse of time, we put it on the table with the seam down, and again begin to roll out a square layer 25 * 25 cm in size. Try to roll it out so that the two parts are evenly distributed.
  9. We fold it in an envelope, wrap it in foil, and again in the refrigerator for 30 minutes.
  10. After the expiration of time, we repeat the same actions with rolling. Then again we send it to the refrigerator for the same 30 minutes.
  11. This time we take it out of the refrigerator, roll it out a square layer and roll it up not in an envelope, but simply fold it three times into a flat roll.
  12. That's all, you can go straight to use.

It is better to bake products at a high temperature (220 degrees). Then the butter will not have time to melt and the texture will remain as it should.
