We will have two types of pies - in a frying pan and in the oven. I know that fried cakes are unhealthy food. But sometimes you can afford a couple of hot pies, especially now, when it gets cold and you want warmth) So this time too, I really wanted to bake pies with cabbage and potatoes.

Since I didn't have time to make the dough for the pies, I bought a ready-made yeast dough especially for the pies, one local city bakery sells such dough here, where they make various pastries of pastries, cakes, pies, muffins and much more.

Sometimes I buy pies from them, but this time I think, let me bake it myself, because the dough is quite inexpensive with them, a kilogram of only 50 rubles. But it is expensive to buy ready-made pies from them. And from this kilogram of dough, I got 22 pies, which is quite a lot.

Well, if you didn’t manage to buy the dough, and you still don’t feel like having pies, you can make the dough according to this recipe, which is also baked in the oven, but you can also fry it in a pan, as you like. And you can please everyone: fry half in a pan, and bake half in the oven).

So, to make pies with cabbage and potatoes, we need:

  • Ready yeast dough - 1 kg.
  • Potatoes - 5-6 medium pieces
  • Sauerkraut - 500 gr.
  • Bow - 2 heads
  • Odorless sunflower oil for frying
  • Flour - half a glass.

I know that many people fry pies and add fried fresh cabbage to them, I don't like so much, my weakness is sauerkraut and I cook pies only using it, it gives baked goods a special sourness and taste. But again, this is all for an amateur. Love fresh - fry fresh.

Since we do not need to cook the dough, we will prepare the filling for the pies. Wash the potatoes, peel them, add water, and cook as if on mashed potatoes. In this, peel the onion and finely chop, pour vegetable oil into the pan and sauté the onion over medium heat until golden brown.

We look at our potatoes, if boiled, we drain the water from it, but not all, leave half a glass.

Add the fried cabbage to the mashed potatoes, mix thoroughly, let the filling cool down.

While the filling is cooling down, let's make the dough. Although we already have it ready, some manipulations will need to be done with it).

I had the dough in a plastic bag, I put it in a plastic bowl. Then she smeared her hands with vegetable oil and squeezed out small balls (about 3-4 cm in diameter) between the thumb and forefinger. Sprinkle the table with flour and lay out the resulting balls, leaving for 10 minutes so that the dough comes up again.

After 10 minutes, we take one ball, knead it with our fingers, preparing like a cake, put a filling of cabbage and potatoes in the middle of the cake, I laid out a teaspoon with a large slide, pinching the edges of the cake on both sides, forming a cake, if the dough diverges, dip your fingers into flour and pinch the edges of the patty again. Thus, we sculpt all our remaining pies from the finished dough.

Pour 50 gr into the pan. sunflower oil, always odorless, so that the oil does not interrupt the taste of the filling. Heat over medium heat and add our pies.

After putting the pies in the pan, it is better to reduce the fire so that the pies have time to bake and are not soggy inside. Fry them on both sides until golden brown. Remove from the pan, let it cool a little and enjoy the pies from ready-made yeast dough with cabbage and potatoes.

As I already wrote above, from a kilogram I got 22 pies with cabbage and potatoes, although no, there would have been 23 of them, I gave one lump to my daughter, she also tried to mold her pie). I think that in any city you can buy ready-made yeast dough, you can buy it in a store, I also baked pies from such a store. only in the oven and with a sweet filling. Well, if you didn’t manage to buy the dough, and you still don’t feel like having pies, you can make the dough according to this recipe, there are pies with mushrooms and also baked in the oven, but you can also fry in a pan, as you like. And you can please everyone: fry half in a pan, and bake half in the oven).

So, to make pies with cabbage and potatoes, we need:

  • Ready yeast dough - 1 kg.
  • Potatoes - 5-6 medium pieces
  • Sauerkraut - 500 gr.
  • Bow - 2 heads
  • Odorless sunflower oil for frying
  • Flour - half a glass.

I know that many people fry pies and add fried fresh cabbage to them, I don't like so much, my weakness is sauerkraut and I cook pies only using it, it gives baked goods a special sourness and taste. But again, this is all for an amateur. Love fresh - fry fresh.

Since we do not need to cook the dough, we will prepare the filling for the pies. Wash the potatoes, peel them, add water, and cook as if on mashed potatoes. In this, peel the onion and finely chop, pour vegetable oil into the pan and sauté the onion over medium heat until golden brown.


Then add the cabbage, mix, cover and simmer for 5 minutes, then mix and cover again, I let the cabbage fry a little, but only a little. We turn off the fire.

We look at our potatoes, if boiled, we drain the water from it, but not all, leave half a glass.

Mash the mashed potatoes, adding the left half a glass of water. When pounding, you can add a little salt to the potatoes, but if you have salted cabbage, then you do not need to do this.

Add the fried cabbage to the mashed potatoes, mix thoroughly, let the filling cool down.

While the filling is cooling down, let's make the dough. Although we already have it ready, some manipulations will need to be done with it).

I had the dough in a plastic bag, I put it in a plastic bowl. Then she smeared her hands with vegetable oil and squeezed out small balls (about 3-4 cm in diameter) between the thumb and forefinger. Sprinkle the table with flour and lay out the resulting balls, leaving for 10 minutes so that the dough comes up again.

After 10 minutes, we take one ball, knead it with our fingers, preparing like a cake, put a filling of cabbage and potatoes in the middle of the cake, I laid out a teaspoon with a large slide, pinching the edges of the cake on both sides, forming a cake, if the dough diverges, dip your fingers into flour and pinch the edges of the patty again. Thus, we sculpt all our remaining pies from the finished dough.

Pour 50 gr into the pan. sunflower oil, always odorless, so that the oil does not interrupt the taste of the filling. Heat over medium heat and add our pies.

After putting the pies in the pan, it is better to reduce the fire so that the pies have time to bake and are not soggy inside. Fry them on both sides until golden brown. Remove from the pan, let it cool a little and enjoy the pies from ready-made yeast dough with cabbage and potatoes.

As I already wrote above, from a kilogram I got 22 pies with cabbage and potatoes, although no, there would have been 23 of them, I gave one lump to my daughter, she also tried to mold her pie). In general, it is very important not to drive the child out of the kitchen when you are cooking or baking, let alone sculpt something, give him a piece of dough and let him sculpt something with you.

We love to eat such pies both with sour cream and just with tea, for example. I advise you not to get too carried away with such food, because fried food is not a very healthy food, so sometimes you can cook and eat, but not all the time.

The next time I bought a ready-made yeast dough and decided to bake pies in the oven. I made the filling the same as for the fried pies, and also decided to make some pies with apples. The whole sequence of actions is the same as you read above. But we will bake pies in the oven.

I put the pies on parchment paper, let them stand for 10 minutes, and then in the oven, after 5 minutes I took them out of the oven and smeared an egg beaten with two tablespoons of sugar, then back into the oven and baked at 180 C until golden brown.

  • potatoes - 800 gr

  • salt to taste
  • vegetable oil - for lubricating the leaf

1. Pour potatoes with water, bring to a boil, salt and boil until tender.

3. Potatoes pour over, add butter, potato broth, or milk. When the puree (how to make it) is the desired consistency, add the egg white. Leave the yolk, we need it. For the potato filling, it is better to make mashed potatoes a little thicker than we make it for a side dish.

If you are stuffing with onions, puree before filling. In this case, you can not add butter at all or add less. Taste salt, if it is not enough, then salt to taste.

4. The filling should be allowed to cool down.

  • potatoes - 500-600 gr
  • mushrooms - 300 gr
  • egg - 1 pc.
  • onions - 2 pcs.
  • sesame seeds - 2 tbsp. spoons
  • vegetable oil - 5 tbsp. spoons
  • salt, pepper - to taste

1. Boil potatoes. Grind it in mashed potatoes, add a little potato broth and egg white.

2. While the potatoes are boiling, cut the onion into cubes and lightly fry it in vegetable oil.

3. Finely chop the mushrooms, any - both forest and store-bought, for example champignons, and pickled and salted, will do. Add them to the onion and fry for 5-7 minutes. Add salt and pepper to taste.

4. Add mushrooms to puree, mix.

5. Roll out the layer, divide it into 4 parts, and place on each filling. Fold up with an envelope or a triangle. Do the same with the rest of the test.

6. Place on a baking sheet greased with vegetable oil and lined with baking paper, or on a silicone mat placed on top of it. Brush with yolk and sprinkle with black or white sesame seeds.

7. Bake for 30 minutes, until golden brown. Take it out, put it on a dish, let it cool slightly, and serve with hot tea.

Puff pastries with minced meat

If you prepare minced meat in advance and defrost the dough, then in an hour the whole family will be able to enjoy delicious, aromatic pastries with meat.

We need (for 16 pieces):

  • minced meat -500-600 gr
  • onions - 2-3 pcs.
  • dough - 4 plates (750 gr)
  • egg -1 pc
  • sesame seeds - 2 tbsp. spoons
  • spices, dried herbs
  • vegetable oil - for lubrication

1. Cut the onion into small cubes and add to the minced meat. You can, of course, twist it in a meat grinder, but not worth it. The minced onion is very runny and the minced meat will also be runny. But when we cut it, the minced meat will be the consistency we need. In addition, during the cooking process, the onions will gradually exchange juice with meat, and the filling will turn out to be much tastier from this.

2. Add spices and dried herbs to the minced meat. Ground coriander, rosemary and cumin are good spices. They will give our products a divine scent. You can add any dried herbs, but I add basil and parsley, as well as oregano.

3. Salt and pepper to taste. And add the egg white. We need the yolk to lubricate the baking surface. During the preparation process, it will acquire a beautiful golden color.

4. Thoroughly mix the minced meat until smooth.

5. Roll out one layer on an oiled table. Do not forget that we are rolling it in one direction so as not to break the layers. Cut the layer into four parts.

6. Place a significant portion of the filling on each part of the dough. Fold up with an envelope or a triangle. Place on a greased baking sheet or covered with a silicone mat.

7. Do the same with the rest of the parts. Grease the finished blanks with yolk and sprinkle with sesame seeds.

9. Take them out and place them on a large flat dish. let cool slightly and serve with hot tea.

Pies with green onions and eggs

With the onset of spring and summer, we all feel a lack of vitamins. And by that time, the first "green vitamins" appeared on our summer cottages - and onions took pride of place among them. We are happy to eat it with a bite to various dishes and with no less pleasure we make a variety of pastries using it. Puff pastries are one of them.

We need (for 16 pieces):

  • dough - 4 plates (750 gr)
  • egg - 6 pieces
  • yolk - 1 pc.
  • green onions - as much as it is not a pity (a good big bunch)
  • sour cream, or mayonnaise - to taste
  • salt to taste
  • sesame seeds (optional)

1. Boil the eggs, cover them with cold water and peel them. Cut into small cubes.

2. Chop green onions 0.6-0.8 cm thick.

3. Mix onion with eggs, add sour cream or mayonnaise. Or both in equal proportions. The filling should not come out thin or thick. In the first case, the finished products will "float", and in the second they will turn out to be dry and tasteless.

4. Lubricate the table with vegetable oil and roll out the first layer. Cut it into four pieces and place the filling on each piece. We do not regret it, we put more. Fold the blanks with an envelope or triangle. Place on a greased baking sheet or lined with silicone mat.

5. Do the same with the remaining three parts. Brush the pies with yolk and sprinkle with sesame seeds.

6. Bake in a preheated oven to 180 degrees for 30 minutes. They will brown and become beautiful and of course delicious.

Yeast Puff Pastry Recipe

  • premium flour - 0.5 kg
  • butter 82.5% -350 gr
  • milk -1 glass
  • sugar - 3 tbsp. heaped spoons
  • salt -1 tsp
  • dry yeast - sachet 11 gr

1. Sift flour 2-3 times, for better oxygenation. Set aside 3 tbsp. tablespoons of flour in a separate bowl.

2. Put the rest of the flour in a bowl, add salt.

3. Dissolve sugar in 1/2 part of milk and add to flour. Mix.

4. Separately dissolve the yeast in warm milk. Let stand for a while so that they separate and add the mixture to the flour and sugar.

5. Add oil previously softened at room temperature. Knead the dough, it should be steep enough and well out of hand.

6. Wrap it in plastic wrap and refrigerate, preferably overnight, but not less than 4 hours. During this time, it will double in volume.

7. Take out the finished dough and roll it into a layer with a thickness of 0.5-0.6 mm.

8. Spread oil on the rolled layer, leaving 1/3 part of it. Do not smear to the very edges, leave about 1 cm from the edges unlubricated.

9. Screw the unlubricated part onto the greased one. And then cover it with the rest. This will create three layers. Using a rolling pin, roll it without pressing very hard along the entire length of the layer. In order not to break the layers, roll out only in one direction.

10. Then sprinkle the top of the layer with lightly remaining flour and fold it back into three layers. Roll out lightly and refrigerate again for 40 minutes.

11. This procedure should be repeated four times. Only four times. Then we will get the required number of layers.

The finished dough can be stored in the refrigerator for three days and in the freezer for 1 month.

When the onion is browned, we send finely chopped cabbage to it, mix everything with a spatula, close the lid and leave to simmer the cabbage until ready, it took me about 10 minutes

While the cabbage is stewing, cut the bacon into small cubes

Grate the boiled egg on a fine grater, so the egg will not stand out in the filling and will combine with onions and cabbage into one whole

After 5 minutes, stir the cabbage with a little salt and pepper, close the lid and leave to simmer until fully cooked for another 5 minutes

When the cabbage is stewed, we take it out of the multicooker with a spatula, put it on a large plate so that it cools
