Ingredients:

  • Milk - 1.5 cups;
  • Butter - 130 g.
  • Dry active yeast - 6 g.
  • Chicken eggs - 3 pcs.
  • Sugar - 1 tbsp. a spoon;
  • Potatoes - 4-6 pcs.
  • Salt - 2 teaspoons;
  • Wheat flour - 500 g.

Cooking step by step

In warm milk (1 cup) add yeast and mix. Wait 10-15 minutes until a foam appears, which indicates that the yeast has “woken up”.

Melt butter (60 g) slightly, add sugar, salt (1 teaspoon), beat in one egg and one yolk. Whisk thoroughly with a whisk or fork.

Pour the milk with yeast over the eggs and stir.

Add flour little by little and stir. Add the rest of the flour and knead the dough with your hands.

The dough should be rolled into a ball and put in a warm place (without drafts) for 30-40 minutes, covered with a film or towel.

Cooking wind pies with potatoes on kefir

First you need to peel, rinse the potatoes with water, and then put them to boil in lightly salted water. While the potatoes are cooking, you can start kneading the dough.

Mix the butter with kefir and heat slightly until it is pleasantly warm. Add yeast to kefir and let stand for 5 minutes. Then stir in the salt and sugar.

It remains to add flour in small portions and mix thoroughly. When all the flour is in the dough, you need to knead it with your hands. The dough will be quite sticky and not easy to work with. But it's worth it, because it is from such a test that air pies are obtained.

Now the dough should be infused (at least 30 minutes).

Potato filling for pies

Peel the onion, finely chop and fry in oil in a pan until golden. While you can prepare the potatoes.

First, we make dough for pies on kefir and without yeast. But before that, you need to put the peeled potatoes on the boil.

Mix soda in kefir. Add there: eggs, sour cream, butter, salt and sugar. To mix everything.

Pour a glass of flour into kefir - mix. Pour another one - mix again. Do this until all the flour is gone. You will have to knead by hand. If the dough is too thin and sticky, add a little more flour.

Let the dough rest for about 30 minutes while you prepare the filling.

Separate the boiled potatoes from the broth and mash with a crush.

In the meantime, fry boiled mushrooms and onions (peeled and chopped into cubes) in a small amount of refined vegetable oil. If your mushrooms are cut large or even whole, you can cut them smaller. But I don’t do this, because then I pierce the finished filling in a food processor. Fresh champignons do not need to be boiled - we fry them immediately.

Ready mushrooms smell appetizingly and are well reddened. Yes, in the process of frying, we salted them to taste. Until then, let it cool down a bit.

Let the potatoes cool slightly and then mash them. It is more convenient and best to do this with a meat grinder, but you can also use a pusher. Add to warm puree egg. No flour!

Now just mix everything by hand until smooth - the puree is not hot, but warm. Taste for salt, adding a little if needed.
