  • We take out a ribbon of ribs from the refrigerator. We cut the meat between the bones so that there are 3-4 bones in one piece. Rinse with water and wipe the resulting pieces of meat with a napkin. Dip each piece into the marinade and massage well. Leave the pieces in the marinade for 5 minutes.

We start kneading it with our hands. We tear the dough and add a spoonful of sunflower oil so that the dough becomes elastic, tender. Cover with a lid and let it rise for 10 minutes.
  • We take out meat for minced meat from the refrigerator. We cut the pork and beef meat into small pieces to send it to the meat grinder soon.
  • We cut the onion into quarters. We also send it to the minced meat grinder, mix. Salt, pepper.
  • We get smoked ribs. Cut into one piece. We also cut in the middle so that the bone does not remain bare.
  • If you have short bones, we sharpen the bone on one side, cutting off the meat by about 3 cm. Finely cut the cut meat and send it to minced meat. It has a smoky taste.
  • You need to beat off the mince. In a bowl, raise a piece of minced meat at a low height and throw it back to its original place.   • We wet our hands with water. We take in our hands 2 tbsp. l. minced meat, form a flattened cutlet. In the middle we put a rib from one end and a second rib from the other end. We connect minced meat. Repeat the same steps with the rest of the ribs.
  • The dough is already ready. We roll it out on the board with a rolling pin to a thickness of 0.5 cm.
  • We smear the tip of the knife with flour so that the dough does not stick, and cut long strips 1 cm thick, maximum 15 mm. These strips will play the role of threads holding the minced meat and ribs together. We stretch the threads a little in length.
  • We take the spindle and wrap it in a circle with threads. It is advisable to wrap so that the minced meat is not visible.
  • Prepare a baking sheet, cover with parchment. We shift the pieces, but before that we grease them with a raw egg. We leave the spindles on the table so that they rise a little.
  • We send it to the oven for 30 minutes at a temperature of 160.
  • We take out and enjoy the taste.

  • After 10 minutes, the sauce will evaporate by half, but for now we do not remove it from the heat. By this time, 20 minutes will have passed for the ribs in the oven. We take them out and remove the foil, send them back to the oven for 40 minutes.
  • We continue with the sauce. We take 40 g of butter, rub it on a grater into a bowl.
  • In a container with grated oil, pour 1 tbsp. l. flour and mix. Add one tablespoon at a time to the sauce and stir constantly. This will thicken the sauce and prevent flour lumps from forming. Add chopped parsley, salt and pepper. The sauce is ready.
  • Pour the sauce into a saucepan.
  • When the time comes, take the ribs out of the oven. Carefully remove the thread.

  • When the ribs are ready in the oven for 10 minutes, we begin to prepare the barbecue sauce to use it hot.
  • Take a deep bowl. Pour 100 g of sugar into it, add 100 mm of red wine vinegar. Knead to dissolve the sugar. Adding tomato paste and mix until the mass is homogeneous. Add a little soy sauce with seasonings, salt. Mix everything thoroughly, the sauce is ready.
  • We get the ribs. In the oven, increase the temperature to 220. Take 2 lemons, cut into circles 2 mm thick.

Pour 0.75 cups of dry white wine, a bouquet of garni, baked onions, salt and pepper. We are waiting for it to boil.
  • The sauce is ready, it remains to throw out the bouquet garni from the saucepan. We take out the ribs from the oven.
