Good day. Before me, as before any mother, the question arises every day - how to feed the child with healthy food. But that's not all, children's dishes must also be tasty and look appetizing, otherwise my kids simply refuse to eat them. One of the products they don't like is cottage cheese, they refuse it raw. But since this fermented milk product is very valuable for a growing body, I go for a trick - I cook a curd casserole with raisins and serve it like a pie, this dish is always eaten without a trace, and not only by children.

Before moving on to the recipe for curd casserole with raisins, let's talk about what benefits it can bring to the body.

  • One of the main advantages of this product is the content of easily digestible proteins and milk fat. This is especially important in baby and medical nutrition.
  • The essential amino acids contained in cottage cheese - tryptophan and methionine - help to normalize the functioning of the central nervous system and digestive organs.
  • The balanced content of trace elements and minerals such as calcium, phosphorus, magnesium and iron is beneficial for teeth, bone tissue, heart muscle and respiratory system.
  • The curd contains B vitamins, which protect us from atherosclerosis and have a beneficial effect on the formation of hemoglobin in the blood.
  • Raisins in symbiosis with cottage cheese enhances its positive effect in terms of normalizing the digestive, nervous, cardiovascular, bone, respiratory systems, and potassium contained in dried fruit helps to improve the functioning of the genitourinary system and get rid of toxins.

Moreover, this dish can be an excellent substitute for dessert and can be served both hot and cold.

Ingredients of the dish.

  • Cottage cheese - 1 kg.
  • Egg - 3 pcs.
  • Semolina - 100 g (7 tablespoons).
  • Sugar - 100 g (1/2 tablespoon).
  • Salt - 3 g.
  • Butter - 50 g.
  • Sour cream - 40 g (2 tablespoons).
  • Raisins - 150 g (1 tbsp).

Recipe.

Let's prepare the ingredients.

The photo shows only the main products, which you can experiment with if you wish to find perfect recipe... For those who are on a diet - butter and sour cream can not be used, eggs and sugar can be replaced with bananas, and semolina with starch.

We sort out the raisins and wash them thoroughly.

Place the dried fruit in a bowl and steam in boiling water.

Put cottage cheese in a deep plate or bowl, break the eggs, mix with a blender with a chopping attachment.

If you do not have this "miracle machine", to get an airy homogeneous product, it is better to rub the large grains of cottage cheese through a sieve, beat the eggs together with sugar separately until a white fluffy mass, mix sour cream with semolina. Then combine all the ingredients together, including butter and salt, mixing thoroughly with a spoon.

And I continue ...

Gradually add sugar to the bowl, continuing to grind the curd with a blender.

Pour in gradually semolina(Leave 1 tablespoon for sprinkling), without ceasing to stir the curd mass. As the curd became chopped and soft, I changed the blender attachment to a whisk.

Add the remaining ingredients to the bowl: butter - 40 g (leave 10 g for lubricating the mold), salt, sour cream and mix everything thoroughly.

At this stage, you can add vanillin, cinnamon or other favorite spices if you wish. Also, if you are afraid that the product will not rise, add 1-2 tsp baking powder into it (it is better not to add soda, as it will give the product an undesirable aftertaste, which can lead to heartburn).

After mixing all the ingredients, we give the mixture 15-20 minutes to swell the semolina. It is better to cover the bowl with the mass on top with plastic wrap.

In the meantime, we put the oven to warm up to 180 C, grease the mold (I have a diameter of 26 cm) butter and sprinkle with semolina (1 tablespoon) so that the casserole comes off the surface easily.

After the semolina has swollen, add steamed raisins to the curd mixture (after draining excess water from it).

We spread the mass into a mold and put in an oven preheated to 180 C for 40-45 minutes. Cooking time depends on the thickness of the casserole (size of the dish), power and type of your oven.

40 minutes have passed, the top is browned, check the readiness with a toothpick (stick it into the casserole and take it out, if the stick is dry - the pie is ready).

Take the cake out of the mold, cut into portions and serve with your favorite jam, jam, honey or condensed milk.

Bon Appetit!

PS: This dish tastes even better when cold.

Below is a video of the preparation of this wonderful dish.

Making a curd cake with raisins according to this recipe is not difficult, as a result you will get a wonderful treat for tea - an appetizing cake with a light aroma of vanilla and lemon.

Ingredients:

  • 300 g flour
  • 250 g cottage cheese 9% fat
  • 3 large eggs (66-68 g each)
  • 170 g caster sugar
  • 150 g butter
  • 1 tsp with a slide of baking powder
  • vanillin on the tip of a teaspoon
  • 100 g raisins
  • small lemon zest
  • a pinch of salt

If the eggs are not large, medium-sized, then the flour should be taken less, somewhere 265-270 g, otherwise the dough will turn out too thick.

If the cottage cheese is dry, it is better to rub it through a sieve, then the curd grains will not be felt. I usually for curd baking I buy 9% Prostokvashino cottage cheese or cottage cheese in packs. Both are soft enough and easy to stir during the dough preparation process.

To the taste, the curd cake turns out to be moderately sweet, not at all cloying. If you love very much sweet pastries, put more sugar, not 170 g (incomplete glass), like mine, but, for example, 220-250 g.

Preparation:

We sort out the raisins, rinse them and fill them with hot water from a kettle to steam.

Rub the zest of a small lemon on a fine grater.

Beat butter, well softened at room temperature, with a mixer with sugar and vanilla for 1.5-2 minutes at medium speed.

Add cottage cheese and continue to beat until the mass is completely homogeneous.

Add eggs one at a time, beating thoroughly after each addition.

Mix the sifted flour with salt and baking powder and parts, in three steps, add to the dough, stirring well each time with a spoon. If you still stir with a mixer, the flour will scatter throughout the kitchen. 🙂

Add raisins and lemon zest and mix completely.

The dough for curd cake turns out to be quite thick, much thicker than for pancakes.

We turn on the oven so that it heats up to 170-175 degrees.

Grease the cake pan with butter. If the mold is silicone, you can skip this step.

We spread the dough into a mold and smooth the surface with a silicone spatula. To prevent the dough from sticking to the shoulder blade, we moisten it from time to time with water.

We put the form on the middle level in the oven, preheated to 170-175 degrees and bake for 45-60 minutes, depending on your oven. Here it must be borne in mind that the sweet dough is very quickly baked outside and begins to burn. For example, after half an hour of baking, I looked into the oven and saw that near the walls the dough was already well browned, and the top was still quite light. Then I lowered the temperature to 155-160 degrees, and put a container of water on the bottom of the oven and continued to bake the remaining half an hour, until the top of the curd cake turned brown. Determine the readiness of the cake with a wooden stick - it must be dry.

Cool the cake to a warm state and turn it over onto a platter.
