Juicy meatballs in a creamy tomato sauce. Step-by-step recipe with photo Minced meatballs in creamy tomato sauce

Meatballs with gravy are delicious balls minced meat stewed in a thick aromatic sauce... Do not confuse them with meatballs, there are several significant differences between them. Meatballs are most often prepared larger, because they are a separate full-fledged meat dish, for example, for dinner. The meatballs are fried or stewed in a pan, and can also be baked in the oven with or without sauce. Meatballs are cooked in broth, they usually complement some kind of dish, for example.

There is a great variety delicious meatballs, for the most part differing in additional ingredients. You can add onions and carrots to meatballs, you can put rice, meatballs with mushrooms or vegetable filling, which are wrapped in minced meat, are delicious. Various sauces for meatballs can also be prepared and they will drastically affect the taste. Well, and most importantly, the meatballs themselves can be made from various types of meat. I don’t want to see meatballs, but meatballs in a variety of cooking all take the main prize.

Of course, I cannot cover all the options, but I will share many delicious ones with you.

Meatballs with tomato sauce and sour cream

It seems to me right to start with simple and classic recipes... They are usually the most requested and popular. We are so accustomed to meatballs since childhood that very often we look for recipes for their preparation very similar to those that were prepared by our mothers and grandmothers, as well as hardworking cooks in kindergarten... And all this is not for nothing. Incidentally, I will clarify that meatballs can be cooked for children and they really like them, both in taste and in shape, and how many kids love gravy, I don't need to tell you. You can choose any garnish according to your taste, but now let's learn how to cook delicious meatballs with gravy.

For meatballs you will need:

  • minced meat - kg,
  • egg - 1 pc,
  • onions - 1-2 pieces,
  • garlic - 1-2 pieces,
  • sour cream - 4 tablespoons,
  • flour - 2 tablespoons
  • salt, pepper and spices to taste.

Preparation:

1. For meatballs can be used as ready-made minced meat, and wind it yourself from the selected meat. Choose between pork, beef, or a mixture of two minced meat. One of my advice is not to make the minced meat too lean, that is, completely fat-free. A little fat in the minced meat will make the meatballs more juicy, and at the same time it will practically melt during heat treatment.

2. Chop the onion into smaller pieces, especially if cooking for children. Adjust the amount yourself, you can put one or two onions. The onion itself also helps to make the meatballs softer and more juicy. Combine the onion and minced meat in a large, convenient bowl. Chop on a grater or with a knife and garlic, also add it to the minced meat.

3. Break into a bowl of minced meat one a raw egg and stir. The egg will help to achieve good stickiness of the minced meat so that future meatballs do not crumble in finished form. Season the minced meat with salt and pepper to your liking.

4. Form the minced meat into medium-sized even balls. Dip them in flour so that a delicious golden brown crust is obtained during frying, and all meat juices are sealed inside. Heat a skillet with vegetable oil and fry the meatballs over medium heat from all sides until light blush.

5. Preparing the future gravy. This recipe is the simplest - mix tomato paste with sour cream, dilute with one glass of warm water.

6. Pour the meatballs in a frying pan with the resulting sauce, cover and simmer for fifteen minutes.

7. As it boils, the gravy will acquire a richer red color thanks to the tomato sauce. Fifteen minutes later, covered over medium heat, the meatballs will be ready and soaked in a delicious sauce.

Delicious meatballs with gravy are ready. The most versatile and simplest recipe. If you put cream instead of sour cream, then the taste will be more delicate and with less acidity. Serve with a hot side dish such as mashed potatoes, sprinkle with fresh herbs. Bon Appetit!

Delicate meatballs with rice baked in gravy in the oven

Almost all of us have tried meatballs with rice, and many even know them under the name "Hedgehogs". They can also be cooked in a pan in a thick gravy, or you can bake them in the oven, which will only make them more tender, because there will be no drying frying in a pan, but only uniform heat from all sides. We'll add onions and carrots to the gravy for flavor.

You will need:

  • mixed minced meat - 600 grams,
  • boiled rice - 1 glass,
  • egg - 1 pc,
  • onions - 2 pcs,
  • carrots - 1 pc,
  • garlic - 2 cloves,
  • tomato paste - 2 tablespoons
  • sour cream - 2 tablespoons,
  • flour - 2 tablespoons
  • salt and black pepper to taste.

Preparation:

1. Scroll the meat through a meat grinder or take the prepared minced meat. Put it in a bowl and add the finely chopped onion and garlic. We need the second onion for gravy. Also break the egg into the minced meat. Season with salt and pepper. Stir the minced meat first with a spoon and then with your hands, this is how it mixes best.

2. Grate the carrots on a coarse grater.

3. Combine sour cream and tomato paste in a separate bowl. Add two tablespoons of flour to these and stir until a smooth paste.

4. Pour cold boiled water into a glass and gradually pour it into the future sauce in a bowl. Pour in a little and stir, then add more water and stir until all the water is gone.

Flour is needed in such a sauce to add thickness. It also gives rise to the same characteristic taste that we remember from childhood in the gravy that was served in the cafeteria of the kindergarten and school.

5. Heat a skillet with oil. Chop the second onion small cube... Fry the onions in oil until transparent, then add the grated carrots to the skillet and fry them over medium heat until the carrots are tender.

6. Now pour the prepared tomato and sour cream sauce... Stir, add a little salt and simmer over low heat for 2-3 minutes. Salt and pepper the future gravy of your choice. This is how it will be ready-made in salinity.

7. Turn on the preheat oven 180 degrees. Take a baking dish and start shaping the meatballs. To do this, slightly moisten your hands with water and roll out fairly large balls from the minced meat. Place ready-made meatballs in a mold. When everything is blind, take a skillet with gravy and pour the meatballs on top. If the sauce is not enough, then add a little water, it will mix with the sauce while boiling in the oven.

8. Place the meatballs and gravy in the oven and bake them for about 30 minutes at 180 degrees.

After half an hour, the meatballs are ready. Far cooks very quickly, but we already had rice ready. You will get very tender and tasty meatballs with a fragrant thick gravy with onions and carrots. It is highly nutritious and hearty lunch or dinner. Choose a side dish at your discretion. Eat to your health!

    Let's prepare products according to the list.

    Rinse the rice to clean water, fill it with boiling water and leave for 5-10 minutes. Then put the rice on a sieve.

    Put the minced meat in the container, add the onion, egg, rice, salt, pepper and garlic squeezed through a press, chopped through a meat grinder. Knead well.

    With hands dipped in water, we form meatballs. Pour oil into the pan, heat and fry the meatballs until golden brown, about 2-3 minutes on each side.

    Cooking tomato cream sauce. Put the grated tomato into a saucepan or saucepan, pour in the cream (instead of a tomato, you can take tomato paste). Add salt, pepper and basil (or your favorite spices).

    Almost every housewife knows the meatball recipe. The highlight of my recipe is the delicate creamy sauce that gives the dish unforgettable taste and is the best gravy for a side dish.

    The recipe uses cream, you can replace it with milk or sour cream. The taste, of course, will change a little, but nothing catastrophic will happen. Pets will be satisfied in any case.

    To prepare meatballs in creamy tomato sauce, I used:

    • 0.5 kg of ground pork and beef;
    • a handful of long-grain rice;
    • 1 chicken egg;
    • 200g cream (fat content does not matter);
    • 2 tbsp tomato paste;
    • salt pepper.

    Preparation:

    Boil the rice until cooked so that it is crumbly. Let cool. Remember that you need to cook rice in a 3: 2 ratio of water to rice; do not open the lid during cooking.

    Salt and pepper the minced meat, add the egg and boiled rice. The egg is necessary so that the meatballs do not crumble during cooking and keep their shape. My minced meat already contained onions. You can finely chop the onion and put it fresh in the minced meat, or fry it, or scroll it with the meat through a meat grinder.

    Mix everything thoroughly until smooth. If desired, you can pre-soak a bun in milk and add the crumb soaked in milk to the minced meat.

    Form meatballs of the same size from minced meat (about 4 cm in diameter). Arrange in a tins or skillet without handle with high sides. The meatballs must be laid in one layer.

    Pour cream into a bowl, season with salt and pepper, add tomato paste.

    Beat the creamy tomato sauce, mixing everything thoroughly.

    First, pour the resulting sauce over each meatball, then fill the mold so that only a small part of the meatballs is visible on the surface. This is necessary so that the meatballs come out with a golden brown crust. If the sauce is not enough, add some cold boiled water and stir well again.

    Preheat the oven. Bake meatballs for 40 minutes at 170-180 degrees.

    Most likely, it will not be possible to cook such a dish on the stove, since the cream and sour cream begin to curdle when boiling. In addition, in this case, the meatballs will need to be constantly stirred, as a result of which they may lose their shape.

    The dish is best served with mashed potatoes or cereals. Garnish when serving meatballs fresh vegetables and greens.

    I hope that the recipe for meatballs in creamy tomato sauce will please you and your loved ones. Good appetite!
