One of the favorite cakes in our family is the Count Ruins cake with sour cream. This cake is very simple to prepare, the main thing is that you do not need to worry that the biscuit will not work or that it will not be perfectly even, in this cake the biscuit will be cut into cubes.

A distinctive feature of the "Earl Ruins" cake from similar brethren is that its basis is white biscuit, and the "ruins" themselves are made from chocolate biscuit. Previously, fruits were not added to this cake, as, for example, to the Pancho cake, but in my version I nevertheless decided to add a gag and added a layer of tangerines for juiciness.

So let's go in order ...

To prepare the "Count ruins" cake with sour cream, prepare the necessary products.

Break eggs into a bowl, add sugar, beat very thoroughly with a whisk.

Extinguish the baking soda and add it to the dough. Sift flour. Knead the dough thoroughly with a spoon.

Pour 1/3 of the dough into a mold with a diameter of 23 cm, covered with parchment.

Preheat the oven to 180 degrees and bake a light sponge cake for 15 minutes.

Add 2 tablespoons to the remaining 2/3 of the dough. cocoa and 1 tbsp. sour cream. Mix the mixture thoroughly again.

Pour out chocolate dough in another form, covered with parchment.

Bake the chocolate sponge cake for 20-25 minutes. I got it a little uneven, but in this case it doesn't matter, the most important thing is that it is very soft and tasty!

Cool both biscuits. Chocolate - cut into cubes.

Put the light biscuit on a plate, soak in syrup or diluted sweet liqueur, grease with sour cream. Cut the tangerines into slices, spread over the cream.

Then dip the pieces of chocolate biscuit in sour cream and spread in a heap in a chaotic manner. Press the cubes a little from above so that there are no voids in the cake.

When the cake is assembled, prepare the icing. To do this, pour sugar and cocoa into a ladle, add sour cream and butter. Stir the mixture over low heat until smooth. Pour the icing on top of the cake, then sprinkle with chopped walnuts.

Put the cake in the refrigerator for a few hours to soak.
