Airy puffs with gentle custard- the dream of every hostess! It's amazing delicious treat It is very simple to prepare for tea, but it will be able to compete with gourmet baked goods!

Ingredients:

- 4 sheets of ready-made puff pastry;

- 2 chicken eggs + 1 egg for greasing baked goods;

- 0.5 tbsp. Sahara;

- 1 sachet vanilla sugar;

- 3 tbsp. l. vanilla flour;

- 0.5 liters of milk;

- a little oil to grease the baking sheet.
1. The first step with the custard is to prepare the dough. If the dough did not have time to defrost on the way home from the store or was waiting for its "fate" in your freezer for a long time, then it must be defrosted and preferably at room temperature. If you want to save time and defrost the dough in microwave oven, then it simply may not rise when baking. Each sheet of dough must be thawed separately or transferred with polyethylene.


2. In the meantime, the dough is "resting", let's make a custard for our delicious puffs... For this chicken eggs drive into the bowl of a blender or food processor.



4. Then add the specified amount wheat flour without forgetting to sift it first.


5. Then turn on the blender and turn everything into homogeneous mass.


6. Pour milk into a heavy-walled saucepan and bring to a boil. As soon as the milk begins to boil, pour in the egg mass in a thin stream, stirring constantly.


7. Brew the puff cream over low heat until thickened, stirring vigorously with a whisk or spoon. Remove the finished cream from the stove and cool.

What shape will the puffs be? You can make them different: with a cream inside, and, conversely, first bake, and then fill with cream. I chose the second option. You can make puffs with cream round, like volovanov, but I decided to try a new form of puff, with a square window.

Defrost puff pastry at room temperature, unfold on a table covered cling film or crushed with flour so that it does not stick, and cut into squares.

We bend the square in half obliquely, cut the resulting triangle on both sides, but not completely. We unfold and bend the resulting strips: the right one - to the left, the left one - to the right.


Put the puffs on a baking sheet, greased vegetable oil, and bake at 200C until golden. So that the middle of the puffs does not rise and there is room for the cream, you can poke them with a fork.


Cool the finished puffs and fill with custard.


The cream is prepared like this: beat milk, sugar, egg, flour with a mixer and heat on small fire whisking from time to time to prevent lumps from forming. When the cream thickens, remove from heat and cool. Add butter to the cooled cream and beat with a mixer.

Roll out the dough (if necessary) and cut into 10x10 cm squares.
Prepare the cream: boil milk with half the sugar norm and vanilla. Bake in an oven preheated to 190-200 degrees for about 20-30 minutes (it took me 20 minutes, baked at 200 degrees in "Hot air" mode on a medium level). Cool the puffs on a wire rack or wooden board. Sprinkle the finished cakes. icing sugar.

N.B. Sometimes it can turn out Little dryish (by the way, when baking from home test such a lack was not observed), so I would recommend putting on the dough, for example, pieces of fruit or thick jam(in this case, literally sprinkle the dough with a drop of starch, and then lay out the fruit / jam, then cream. Bake as indicated in the recipe. Or, alternatively, you can serve with some sweet sauce (vanilla milk, chocolate, berry). BUT if you put a little more cream, the puffs will turn out juicy inside, and then there will be no need for jam and fruit!

Custard puff pastry

Ingredients:

  • Frozen puff pastry 500 g.

For the custard:

  • Milk 300 ml.
  • Sugar 100 g.
  • Vanillin to taste.
  • Starch 30 g.
  • Egg 1pc.

Cooking process:

Let's prepare the ingredients. Defrost the puff pastry at room temperature. At the same time, we are preparing a cream.

Beat the sugar and egg with a whisk for 1 minute. V classic recipe it is cooked on yolks, but I took 1 egg instead of 2 yolks.

Add starch and vanillin to the eggs

and continue to beat for 1 minute.

Next, pour in to egg mixture 1/2 cup milk and continue whisking.

Pour the remaining milk into the resulting mixture, mix well and put on fire.

We cook the cream, stirring constantly, and make sure that it does not burn. As soon as the custard starts to simmer, reduce heat and continue stirring vigorously for 1 minute. Remove the cream from heat and cool. As it cools, it thickens even more.

Roll out the defrosted puff pastry a little and divide into squares, and in the resulting squares we make cuts as in the photo (stepping back from the edge 1 cm inside the square, cut out the corners of the inner square).

Put Patissier cream in the center of the resulting squares, for each cake - 1 tablespoon.

We fasten the opposite corners.

We mold the corners over the filling well, and send them to the preheated oven (180-200 degrees).
