Today I decided to make cinnamon pretzels for the first time. I usually bake often, but I haven’t had pretzels yet. I was wondering what a pretzel is, why it has this shape, and why it is so popular.

Here's what I learned: the word has German roots and translates as twist (bend). In northern European countries, the pretzel is the emblem of shop signs and bakeries. The monks once baked it as a token of gratitude to the Creator, and it symbolizes the praying hands crossed on the chest.

So this pastry is not only delicious, but also with a deep meaning.

To prepare cinnamon pretzels, we will prepare the products according to the list.

Take flour, sugar, sour cream, soda, honey, room temperature butter, an egg, a pinch of salt. Just combine all the products together and knead a soft, obedient dough.

And roll the flagella with your hands. And you can roll out the dough into a rectangular layer, cut it into strips and roll flagella from the strips.

Fold the flagella into a pretzel shape, as shown in the picture.

Mix sugar and cinnamon and dip each pretzel in this mixture on one side.

Put the cookies on a baking sheet with the "clean" side and bake in an oven preheated to 180 degrees for 15-20 minutes, until lightly blushed.

Sugar pretzels are very easy and quick to make. A minimum of ingredients, a minimum of time, even a novice in cooking can handle it - solid pluses. They eat up just as fast. Cooking method

Softened butter is rubbed with sugar and vanilla until the sugar is completely dissolved. We recommend taking butter out of the refrigerator 1-2 hours before use.

Add chicken egg. Beat into a homogeneous mass with a whisk.

Add flour and knead into a smooth soft dough.

There is no need to keep it in the cold. Let's start cutting right away. We divide into four equal parts.

We take one piece, form a thick sausage out of it and cut into six parts. Thanks to these proportions, we get cookies of the same size. Next, take one piece, roll it into a thin tourniquet, cut in half. We form two pretzels. We cut all the dough in the same way.

We lay out the products on a baking sheet with tails down at a small distance from each other. Cookies do not expand during baking, so they can be placed quite close to each other.

We heat the oven to 200 degrees. Break the quail egg into a bowl, mix with a spoonful of milk. Quail eggs are small, so it is convenient to use them for greasing pastries, as the mixture will be completely used up. If there are no quails, then you can use half a chicken. Brush the pretzels with the mixture.

Sprinkle with sugar on top.

Bake for 15-20 minutes until golden brown.

Ready-made sugar pretzels are served with tea, coffee, milk or hot chocolate.

Let's start preparing dough for homemade cookies by preparing a deep and convenient container for kneading. Sift wheat flour into it. Add the right amount of salt and soda. We mix everything thoroughly.

Then, in another deep container, mix kefir, egg and granulated sugar. Thoroughly mix everything.

Mix the above ingredients until sugar and salt are completely dissolved.

Separately knead the creamy margarine with a wooden spatula. We do this for 7-8 minutes.

The mashed margarine will look something like the one in the photo.

Gradually, we begin to introduce a mixture of sour cream with granulated sugar and an egg into the mashed creamy margarine.

Then add flour to this mixed mass and mix very quickly. Why is it important to mix the dough quickly? Because soda, in contact with acid in kefir, forms carbon dioxide. And this gas can evaporate with a long kneading. And because of this, the product will turn out to be solid, dense and not loosened.

Our dough is ready. Let's make a ball out of it. Yes, by the way, kefir can be replaced in the dough with sour cream, curdled milk or another fermented milk product.

Now, to sprinkle our homemade cookies in a pan, lightly dry the sesame seeds over low heat, stirring constantly with a wooden spatula.

Prepare a cookie sheet. Cover it with parchment paper. Lightly dust the work surface with wheat flour. Then roll out a thin layer with a rolling pin. Cut it into strips about 1 cm wide.

We form “pretzels” from the strips, as shown in the photo. Lay them out separately on a parchment-lined sheet.

Sprinkle the top of the cookies with sesame seeds.

  • 50 gr hazelnuts
  • 270 gr wheat flour
  • 2 tbsp corn starch

  • 130 gr sugar
  • 2 tbsp lemon peel
  • 200 gr butter
  • 3 pcs. egg yolk
  • 50 gr powdered sugar

Cooking method

    Grind the nuts to a state of flour. The skin may not be peeled. Lightly fry the nut flour in a pan until a light nutty flavor appears. Cool down.

    To prepare the dough, it is best to use a blender so that the dough does not have time to warm up from the heat of your hands. Put wheat flour, nut flour, corn starch, baking powder, sugar into a blender bowl. Wash the lemon thoroughly and use a fine grater to remove the zest from it (only the yellow layer). Cut cold butter into pieces. Add butter, zest and egg yolks to flour.

    Knead the dough in a blender bowl. At first, it will acquire the consistency of loose, wet crumbs.

    Put the dough on the table and quickly gather it with your hands into a ball, then shape it into a cake. Wrap the dough in plastic wrap and refrigerate for at least 1 hour (or longer).

    Turn on the oven to warm up to 175 degrees. Separate pieces of the same size from the chilled dough, approximately 12 g each.

    Roll the dough into a thick sausage and shape into a horseshoe. It is desirable to do everything very quickly, while the dough is still cold and plastic enough.

    Lay the pretzels formed in this way in rows on a baking sheet covered with baking paper.

    Bake in preheated oven for 20 minutes until done and light golden brown. The finished cookies are initially very fragile, so you need to let it cool for 2-3 minutes, then carefully remove it from the baking sheet. While still warm, roll it gently on all sides in powdered sugar with vanilla flavor.
