Thai pad thai recipe. Pad thai: a recipe for oriental delight

I decided to replenish the collection of your recipes with Thai Pad Thai noodles. This is one of the dishes in Thailand that has earned worldwide fame. And really fast and delicious. Pat thaya rice noodles are gluten-free and low in fat, making them easy to digest and non-allergic. Most restaurants serve such a dish, they drive along the streets where pad thai is fried.

In rice Thailand, noodles have been known for a couple of hundred years; Vietnamese traders and Chinese immigrants brought the noodle culture. For example, in Phuket Town, where part of the population is Thais of Chinese origin, there is even one where they cook Phuket-style noodles: and another, but more on that, perhaps, another time. The real boom in pad thai began back in Siam in the 30s and 40s, when, in order to reduce the consumption of rice by the population, which made it possible to increase its exports, the government distributed plain and inexpensive recipe cooking noodles in Thai style. The second wave of popularity came to pat thai after the Second World War, the government of the Kingdom, fighting unemployment, increased the number of noodle restaurants and taught Thais how to cook pat thai on their own. And the well-deserved fame does not leave Pat Thai so far. Not only Thais fell in love with this dish, but also the menu of European and American restaurants fast food with Asian dishes speaks of tender feelings for pat thai.

Pat Thai literally means fried in thai style noodles. The whole harmony of Thai cuisine is contained in a plate with pat thai - a balanced combination of four basic tastes: sour (vinegar, lime), spicy (chili), sweet (sugar) and salty (salt, soy or fish sauce). In Thailand, depending on the province, the recipe will change, but remain unchanged fresh herbs, spices and, of course, rice noodles. Pat thai is usually cooked on a flat circle or in a wok (cone-shaped pan). Additional ingredients may vary: chicken, pork, beef, shrimp, tofu or squid.

Now in Thailand there are a lot of ways to cook "lazy" pat thai from well-known companies. Thai Choice, which also produces a lot of healthy "lazy" sauces, offers dry rice noodles not only in different sizes, but also in flavors: classic, carrot, pumpkin and vegetable. Therefore, your Pat Thai will have a special flavor. Boxes, special sauces and rice noodles are sold in large stores. Read my, which are sold in stores in Thailand.

To prepare 4 servings of Thai noodles, you will need:

250 grams rice noodles
3 tablespoons fish or soy sauce
4 tablespoons tamarind sauce
1 tablespoon palm sugar
150 grams of fresh peeled shrimp
3 garlic cloves, finely chopped (I usually omit this from the recipe)
150 grams firm tofu, diced
2 teaspoons chili powder
3 eggs
200 grams fresh bean sprouts
4 tablespoons vegetable oil
a few stalks of green onions
a few sprigs of cilantro
2 handfuls chopped unsalted roasted peanuts
2 limes, cut into wedges

Cooking process

1. Soak dry rice noodles in warm water for 20-30 minutes until they start to soften but still firm.
2. At this time, mix fish and tamarind sauces with palm sugar to melt the latter, heat the mixture.
3. Heat up in a frying pan vegetable oil, and, sprinkled with fish sauce, fry on both sides until the shrimp is pinkish.
4. Remove the shrimp and add another tablespoon of oil to the pan. Fry until golden brown tofu cubes, garlic (if you're adding it), and chili powder.
5. Strain the noodles, add them to the pan and fry, stirring for 2-3 minutes. Move the noodles to the edge of the pan, and pour 1 tablespoon of oil and lightly beaten eggs into the middle, evenly distributing them over the entire surface.
6. Cut the resulting pancake with a spatula into small pieces and mix with noodles. Add the tamarind and fish sauce mixture with sugar and stir-fry for 2 minutes.
7. Lastly, add bean sprouts, onions, peanuts and shrimp, mix everything well and fry for 4 minutes. And voila - you're all set! Arrange the finished noodles on plates and garnish with cilantro, pour lime juice over each serving before eating. I recommend serving pad thai noodles with to feel the whole taste of Thailand

Little tricks

1. Let's go over the ingredients you need to buy. I don’t know at all if they sell rice noodles at home, but with a stretch you can replace it with wheat linguine.
2. If desired, shrimp can be replaced with some kind of meat. Then it can be fried with tofu.
3. You can't get the tamarind sauce out of the song, but I think Blue Elephant is everywhere. If you can't find tamarind sauce, replace it with 3 tablespoons of 5% white vinegar.
4. Fish sauce can be easily replaced with vegetarian soy, the taste will be slightly different, and the cooking style is purely Chinese, palm sugar - for refined, peanut, olive or coconut oil - for any vegetable, wok - for flat-bottomed.
5. We leave peanuts, bean sprouts, tofu and shrimp in the recipe, and you can replace the latter with whatever you like.
6. If you are allergic to peanuts, you can replace the nuts with cashews, only it will turn out sweeter. If desired, peanuts can be completely omitted.

Bon Appetit!

What is pad thai noodles

Noodles called "Pad Thai" is one of the national dishes inherent in Thai culture. This type of noodle is made from rice flour with a small amount of water. Noodles are prepared using the “stir-fry” method, that is, they are fried in sauce in a pan called “wok”.

The pan must be hot. Thanks to its high temperature and constant stirring, the dish cooks very quickly, which is why it has gained recognition among street food lovers. The history of this noodle is still not exactly known.

Someone says that the dish fried noodles was invented in China and brought to Thailand when the kingdom of Ayutthaya still existed. They say that these merchants, not wanting to put up with the Thai culture, prepared Pad Thai noodles for themselves, and the local population, having tasted and positively assessed the dish, accepted it into their culture, eventually making it national.

There is another, more possible version of the appearance of this noodle in Thailand. During the World War of 1941-45, despite the fact that Thailand was a neutral territory, food was scarce and people were starving. Stocks of rice ran out quickly. But most of all, the people were crippled by the flood, which became a real collapse for the whole country. Most of the fields that were planted with rice were literally washed away.

In order to save food, the government offered residents to consume noodles instead of rice. The consequence of this was the creation of noodles, which were referred to as "sen chan", after the name of the province of Chanthaburi. Even after the war, this dish did not leave the diet of people. They began to add meat in the form of chicken or pork to the favorite dish, although the government was against pork, since it was believed that this meat was Chinese.

Until now, some manufacturers that create food products retain the same recipe, that is, they do not use pork.

Most of the indigenous people of Thailand who are involved in the street food trade do not recognize machines for making noodles, but use exclusively their own hands. They stretch the dough, fold it in half, then stretch it again. And so hundreds of times, until the noodles acquire their traditional form of thin strips.

After that, the noodles are placed in boiling water and cooked like regular pasta, but until the state, which the Italians also call “al dente”. What is it for? Unlike ordinary cane or beet sugar, coconut sugar contains a large amount of nutrients, trace elements, which is why it has become famous in the field. diet food. Its main advantage is the high content of vitamin B, which makes it an unprecedented leader among the list of existing types of sugar.

The Thai street food vendors chop one of these ingredients finely, so they don't show up very well in the dish, but without them, the dish would be bland. An unusual ingredient is tamarind pulp.

Tamarind is a fruit that belongs to a variety of legumes. Another name for tamarind is "Indian date". It grows on a huge tree, the height of which exceeds 3 meters.

The fruit of the tamarind tree itself is a fruit that looks similar to a date. It also has a stone, but it is radically distinguished by differences in green color and taste. Tamarind has a sour-sweet taste, in contrast to the sugary-sweet date.
