It is unlikely that there will be a garden plot where raspberries will not be grown, or rather not "grown", but grow, because this is the most unpretentious berry bush (more precisely, a semi-shrub). All raspberry care can be minimized to one operation: in the spring, cut out last year's dry shoots. Care for blackberries is not at all more difficult, and the question is which of these sisters is more useful. But for some reason, blackberries are planted much less often, maybe due to the fact that blackberry bushes are very prickly.
However, there is one more small minus, berries are very fond of wasps, which hardly anyone loves and is not afraid of their bites.
In my garden, there is a small plot (a couple of square meters) of blackberries, bringing every year from 5 kg of wonderful berries. We eat a couple of kilos "alive", the rest I process for the winter.
First of all, I freeze, both with whole berries, and in the form of mashed potatoes without sugar or with a little addition of it.

If the year is fruitful and you managed to collect more than a bucket of this wonderful berry, you can prepare pureed blackberries without boiling and without seeds.

Wash the berries. Even blackberries picked with clean hands from your own garden can be dirty. Dust, wasps, flies...

Add the remaining sugar.
The next step depends on how much granulated sugar is put in:
If 0.6 kg: heat to a boil, put in sterile jars, roll up.

If 1 kg - cover, put in a dark place, often take it out and stir until the sugar is completely dissolved. We transfer it to sterile dry jars, close it with ordinary lids, send it for storage in a refrigerator or a good cool cellar.
If sugar is 1.5 kg, we proceed in the same way as in the previous case, but such a pureed berry will also be stored at room temperature.

  • The prepared and washed berry must be dried before preparing “cold jam” from it.
  • It is possible to lay out ready-made blackberries, wiped with sugar, only in sterilized jars, the lids for which should also be sterilized.

Classic recipe for blackberries mashed with sugar

Composition (per 2.5 l):

  • blackberries (peeled) - 1 kg;
  • sugar - 1.75 kg.

Cooking method:

  • Prepared, that is, sorted out, cleaned of "tails" and washed blackberries, dried, put in an enameled bowl. The bowl can also be made of a material other than aluminum, which, when oxidized, releases toxic substances.
  • Pour the berry with 1.5 kg of sugar.
  • Place the container with the berry in a cool place for 2 hours.
  • After the specified time, mix the berries with sugar and leave for another hour.
  • After this time, rub the blackberries with sugar through a sieve, armed with a wooden pestle. You can just carefully knead them with a berry.
  • Stir the resulting delicacy, arrange in sterilized jars, pouring a large spoonful of sugar into the bottom of each jar.
  • Top each jar with another spoonful of granulated sugar.
  • Close the jars with any lids (even plastic ones will do), after boiling them and drying them. Store in a cool place.

Ideally, blackberries mashed with sugar, if prepared according to the classic recipe, should be in the refrigerator in winter. It will not deteriorate in the cellar, where the temperature is low. At room temperature, "cold jam" made without sterilization cannot be stored.

Composition (per 3 l):

  • blackberries (peeled) - 2 kg;
  • sugar - 1 kg.

Cooking method:

  • Sort the berries, rinse, peel off the “tails” and measure out the required amount.
  • Strain the blackberries through a sieve using a masher or stainless steel spoon.
  • Pour the berry puree with sugar and put it in a "water bath" for better separation of the juice and dissolution of sugar.
  • Mix thoroughly and arrange in sterilized jars, cover with clean lids.
  • Place a kitchen towel in the bottom of a large saucepan. Put jars of blackberries on it. Pour water into the pot so that it reaches about the middle of the jars.
  • Put the pan on a quiet fire and wait until the pan begins to boil. After this point, sterilize half-liter jars for 20 minutes. If the jars are 0.25 liters each, it takes 10 minutes to sterilize them, and for liter jars it takes more time - half an hour.
  • Carefully remove the jars from the pan and roll tightly. When they have cooled, put them in the pantry for the winter.

The advantages of blackberries mashed with sugar according to this recipe include economy (less sugar is needed) and the possibility of further storage at normal temperature. The disadvantage is that not all vitamins are preserved, since vitamin C, for example, is destroyed by heating.
