  6. On the 5th day, add the rest of the sugar to the wort (50 grams per 1 liter of juice). We do it as in the previous step, mixing sugar with a liter of the cast wort.
  7. The fermentation course is usually completed in 35-50 days. If fermentation is not completed, the wine must be separated from the sediment and left to ferment.
  8. We separate the young wine from the sediment layer at the bottom, and, if desired, sweeten it or fix it with vodka. The volume of strong alcohol added to wine should not exceed 40-200 ml.
  9. Pour the wine into a bottle (jar) under the very neck, seal and keep in the basement (cellar) for 4-6 months.
  10. We separate the finished pomegranate wine from the sediment collected at the bottom and seal it in glass bottles.

  • clean water at the rate of 50 ml for each liter of juice obtained or 2-3 liters;
  • sugar - 300-400 g for each liter of wort obtained by mixing water with juice. The amount depends on the desired sweetness and acidity of the fruit itself;
  • raisin sourdough - 0.5 l or wine yeast as indicated on the package.

Preparation:

  • Prepare a raisin sourdough 4-5 days before buying and processing pomegranates. Pour 200 grams of raisins into a half liter bottle and add a third of a glass of sugar. Pour over the hangers with slightly warmed water. Leave the bottle covered with a cotton stopper or gauze out of the light. The sourdough is ready when it is clearly fermented.
  • Extract the seeds from the pomegranates and extract the juice. The usual way is to rub them with a spoon on a metal strainer. Alternatively, place the mass of grains in a stainless saucepan and pound for a long time with a pestle. Then use the whole mass together instead of juice.
  • There will be some pulp in the juice - this is normal. Dilute it with water according to the recipe and add 150 g of sugar per liter of wort. Pour in the starter with the raisins or add yeast.
Attention. Do not use bakery or alcohol yeast. You'll get mash, but not wine.
  • Cover the container with gauze and leave it in the room for several days, stirring the contents a couple of times a day.
  • After three days, signs of fermentation will appear (sour-alcohol smell, foam). Strain the wort, squeeze the pulp through cheesecloth to it.
  • Add sugar to the fermented wort again (100 g per liter) and secure a water seal or a medical glove with a punctured finger.
  • Leave until complete fermentation in room conditions, without sun exposure.
Important. A stable temperature is required, without sudden changes, so do not leave the suley outside, even if it is warm during the day.
  • Add the remaining sugar twice in equal portions to the wort every 4 days. To do this, drain a little wine material, dissolve the sugar (it is allowed to warm it up a little, but not higher than 30 ° C) and pour it back, closing the wort with a water seal.
  • Fermentation takes from a month to 50 days. If, after the maximum period, the bubbling of the water seal has not stopped or the glove is still inflated, drain the wine from the sediment through a thin tube and leave to ferment. Otherwise, excessive bitterness in the finished product cannot be avoided.
  • When the shutter no longer gurgles and the glove is deflated, drain the young wine from the sediment. After the test, either leave it as it is, or add sugar, or fix it with alcohol (vodka). In terms of 40-degree alcohol, take no more than 15% of the available wine. Pour into containers (you can - cans) under the very throat and close tightly with lids, take them into the cellar for ripening.
  • The aging period is from 3 months to six months. The longer, the softer and more balanced the taste of the wine. Remove the sediment every month.

How to make with barley

The recipe came to us from the USA. For him, you need to take large and very ripe sweet pomegranates.

You will need:

  • 15 pomegranates of the specified quality;
  • juice from 1 medium lemon;
  • 220 g of cereals or 250 g of whole barley;
  • 4 liters of water;
  • 1.3-1.5 kg of sugar;
  • 200 ml raisin sourdough or wine yeast according to the instructions.

Cooking method:

  • Make a raisin starter or make yeast.
  • Remove the seeds from the pomegranates into a suitable bowl.
  • Boil the barley in 2 liters of water. Whole cereals need to be cooked longer than cereals.
  • Strain the hot broth through a colander (sieve) directly onto the grains. Add sugar, freshly squeezed lemon juice and the remaining 2 liters of water to this.
  • Add raisin sourdough or yeast to the cooled wort.

How to make with orange, raisins and lemon

For 10 large ripe pomegranates, take:

  • 0.5 kg of raisins;
  • 2 lemons;
  • 2 oranges;
  • a glass of raisin sourdough and wine yeast;
  • 1.5 kg of sugar;
  • 4 liters of water.

Preparation:

  • Remove the zest from the lemons with a thin flake.
  • Peel the zest off the oranges and squeeze out the juice.
  • Add slightly warmed water to mashed pomegranate kernels, add sugar, juice, zest, yeast and sourdough. Let it ferment with a glove on the neck or a water seal.
