As you can see, there are no additional ingredients in minced turkey, except for butter for juiciness and eggs for viscosity. Let's now try to add bread to it, but we will do it so that the cutlets do not become too dense.

  • We soak a couple of slices of white bread in 50 ml of 20% cream, and prepare minced meat from 500 g of fillet.
  • Bread, without squeezing, grind, mix with meat, salt, pepper and leave to brew in the refrigerator or at room temperature.

  1. Grind the fillet into minced meat and add the rest of the ingredients to it. If necessary, the amount of melted butter, sour cream or cream can be increased, as the semolina will still swell and take moisture.
  2. Leave the minced meat at room temperature to infuse for 20 - 25 minutes.
  3. Then heat up 2 tbsp. vegetable oil in a frying pan and spread cutlets with a spoon. Fry them on both sides for about 7 - 10 minutes each over low heat.
  4. If you like more stewed cutlets, pour ¼ cup of water into the pan, cover with a lid and hold for another 10 minutes. If you want a golden brown, turn off.

Serve with any side dish of your choice. If there is gravy left in the pan, semolina patties are best served with rice or mashed potatoes and pour the side dish on top.

An excellent addition to turkey cutlets will be cheese and mushrooms. They can be added together or separately.

Option 1 - with cheese

First, let's deal with the "surprise", that is, the filling for our cutlets.

  • We send 100 hard cheese or feta cheese to a blender along with ½ bunch of greens and 1 clove of garlic - we need to get a smooth pasty mass without large inclusions.
  • When everything is ready, we roll it with a film into a sausage with a diameter of 2.5 - 3 cm and put it in the cold - it should freeze.

Minced meat preparation

  1. In the meantime, prepare minced meat from 500 g of fillet. Add to it 70 g of fat twisted through a meat grinder or smoked brisket- choose the product at will, to achieve the desired taste.
  2. We mix 2 yolks - they will make the minced meat more elastic than if we put a whole egg, salt, pepper and mix until smooth.
  3. We can add 2 slices of white bread soaked in milk and squeezed out, but this is not necessary, cutlets will not mold worse without it.

We take out the cheese sausage from the refrigerator and cut it into "patch", about 1 - 1.5 cm thick.

From minced meat in the palm of our hand we form a cake, in the center of which we lay out a cheese slice. We close it on all sides to make a cutlet, and put it on a preheated oil pan or baking sheet.

Fry the cutlets on both sides over low heat, first covering them with a lid so that they warm up properly or bake at 200 ° C for 25 - 30 minutes.

Serve them with any side dish: cereals, steamed or stewed vegetables, mashed potatoes or french fries.

Option 2 - with mushrooms

We also prepare the filling first.

  • Very finely chop 300 g of mushrooms or oyster mushrooms and 1 onion.

From 500 g of turkey we make minced meat, salt, season with basil and paprika, rub on a very fine grater or chop 1 medium-sized carrot in a blender and mix into the meat along with 1 egg.

From the resulting minced meat we make a cake on the hand, put 1 tsp with a slide of filling in the middle and carefully align the edges, making sure that it does not crumble.

We fry on butter on both sides or bake. Serve hot cutlets on lettuce leaves, sprinkled with chopped herbs.

Chopped turkey cutlets

Very tasty cutlets from turkey, cooked not from minced meat, but from minced meat. In conclusion, we present you just such a recipe.

  1. We put 500 bird fillets in the freezer for 20 minutes so that it grabs - it will be much easier to chop it, and the pieces will turn out to be smaller and even.
  2. Finely chop the onion, put it in a large sieve or colander, put it in a deep plate and pour boiling water for 2 minutes to get rid of bitterness. Then drain the water, let the onion drain and mix with the meat.
  3. Season with dry basil or a mixture of Provence herbs, add ½ tsp. balsamic vinegar and insist at room temperature for 15 - 20 minutes.
  4. Then we stir in the egg, beat the minced meat well.
