Well, and spices to your taste, although it is quite possible to limit yourself to only black pepper and lavrushka. It is better to choose pork ribs for cabbage with layers of bacon, fatty, this is just the case when the more fat, the tastier it will turn out ready meal... However, if you prefer lean meat, then there is another option: take a piece of bacon, finely chop and melt the fat. The cabbage will be stewed on this fat.
The recipe is simple, but cooking can take up to two hours, plan the time so that there is a small margin. As a rule, cabbage is stewed over minimal heat so that it rejects, soaked in meat juice, fat, and gradually softens. When braised cabbage with pork ribs will be ready, it is left to brew under the lid. By the way, the next day it tastes even better. You can also replace pork ribs with poultry and then you will get just as tasty.

Ingredients:
- pork ribs - 600 gr;
- White cabbage- 1.5 kg;
- carrots - 1 large or 2 medium;
- onions - 3 large onions;
- lard unsalted - 100 gr (if necessary);
- tomatoes - 4-5 pcs (or 3 tablespoons of tomato sauce);
- ground sweet paprika - 1 tbsp. spoon;
- black and red pepper (hot) - 0.5 tsp each (to taste);
- salt - to taste;
- any greens - for serving.

First rinse the rib tape under cold water, dry and separate the ribs from one another. If there is a lot of meat on them, we cut off part, divide into portioned pieces.





Fat ribs can be put directly into the skillet. If the meat is lean, almost without fat, then first melt the fat out of the pieces of bacon (we will make cracklings).





We take out the greaves with a spatula. We send ribs and meat cut from them to the boiling fat. Fry over medium heat for about ten minutes, until golden brown on all the pieces. Season with black pepper, add a little salt.





While the ribs are fried, chop the onion and carrots. Add the onion to the ribs in the pan - there should be a lot of it - and mix immediately, saturate the onion with fat.







We fasten the fire - do not forget that the onion tends to burn out imperceptibly. Fry the onions until soft, at the same time cut the carrots into strips, not very thinly. Pour into the onion with meat. Simmer the carrots for a few minutes, saturate them with fat.





Shred the white cabbage with a shredder or cut it with a knife. Add portions to the ribs with vegetables, cover with a lid to settle faster. As soon as the cabbage decreases in volume, add the next portion and so on until we send everything to the pan. If you cook in a large cauldron, then lay it all at once.





Stir in cabbage, ribs, carrots and onions. We make the fire almost minimal. Cover with a lid, leave to simmer for 40-50 minutes, until the cabbage is soft. Stir several times during cooking. If the cabbage is not juicy, then you need to pour in a little water, otherwise everything will burn. As soon as it becomes soft, season with spices - ground paprika and red hot pepper or use another set of your choice.





Grind the tomatoes into a homogeneous thick puree with a blender. If there are no fresh tomatoes, you can replace them with canned ones (chop them too) or add ready-made tomato sauce.







Pour into cabbage, mix. Warm up, add salt to taste and simmer for another half hour, still on a very low heat. At the very end of cooking, before turning it off, add lavrushka (if you wish, you can cook without it).





If time permits, leave the ready-made cabbage to infuse, and warm it up before serving. Sprinkle the stewed cabbage with ribs with finely chopped parsley or cilantro, serve. Bon Appetit!

3. Shred cabbage. Then we put it in a colander and pour over it with boiling water. Then the cabbage becomes more tender and soft. In addition, its volume is slightly reduced and it fits easily into the pan.
