With this delicious dish I met through the book Best Recipes Moscow Chefs. The cream soup recipe belongs to the great chef Dolph Michel. original recipe I have, however, changed a little. In the original version, the soup is proposed to be made with the addition of smoked salmon and without potatoes. I did not add salmon, but with potatoes, in my opinion, the soup turns out to be thicker and richer. You can either do it like mine, or just don’t add potatoes, and at the end of cooking soup, decorate it with a piece of smoked salmon. The soup has the most delicate texture with a pleasant, barely noticeable aroma of fresh spring peas. Cream is perfect for dressing, giving the soup an even more delicate taste. The dish takes only about 25 minutes to prepare. It is best to cook it at one time, as the warmed soup will not be as tasty.

Ingredients:

Ingredients:

  • 3/4 cup dry peas
  • 1 carrot
  • 1 onion
  • 3 medium potatoes
  • 1 teaspoon salt
  • 3-4 tablespoons vegetable oil
  • 1 celery stalk
  • 1/4 cup 10% cream
  • spices: pepper, nutmeg to taste
  • 0.5 teaspoon baking soda

Preparation of creamy pea soup

  1. Sort dried peas, rinse in running water.
  2. Then pour the washed peas hot water with the addition of baking soda and leave to swell for 2-3 hours. This will significantly speed up the process of boiling peas and reduce gas formation in the intestines after eating it.
  3. Rinse swollen peas with running water, transfer to a saucepan, pour 1.5-2 liters of cold water and put to boil. Until the water boils, it is necessary to mix the contents of the pan so that the peas do not stick to the bottom.
  4. When the water with peas boils, remove the foam, reduce the heat and cook the peas until softened, about 40-50 minutes. Do not salt the broth.
  5. Peel the potatoes, cut into strips, pour cold water to wash off the starch, then put in boiling peas.
  6. Peel the carrots, grate on a coarse grater and lightly fry together with chopped onions for vegetable oil.
  7. 5-7 minutes after laying the potatoes, add fried carrots and onions to the pan, pea soup salt to taste.
  8. Cut the washed stalk of celery into pieces and add to the boiling pea soup. Cook everything for another 10 minutes.
  9. Add a pinch to 10% cream nutmeg and ground black pepper to taste, mix.
  10. Remove the finished soup from the heat, let it cool to about 50 degrees and use an immersion blender to turn it into a liquid puree.

  • Chicken parts - 300 grams;
  • Carrots and onions - one each;
  • Potato - 2 pcs.;
  • Dry split peas - 400 gr.;
  • Water - 3 liters;
  • Cream 20% fat - 100 ml;
  • vegetable or olive oil- 1 tablespoon;
  • Salt, pepper mixture Bay leaf- taste.

From the proposed number of ingredients, at least 15 servings of soup will be obtained. It will take three and a half hours to prepare. Most of the time is spent on soaking peas. It must be left in cold water for 2 hours.

After this period, it is necessary to drain the liquid. By that time, the peas will be soaked and will be completely ready for cooking. It is filled with a new portion of water and put on fire. Washed and chopped chicken parts are also added there.

The finished soup must be chopped with a blender, after pulling out the pieces of meat. Serve this dish with crackers or salted crackers. There are secrets that will help make the soup even tastier:

1. Peas go well with spices, so you should add turmeric, coriander or suneli hops to the soup.

2. To achieve perfect consistency, you can additionally wipe the cream soup through a sieve after processing with a blender.

3. If the cream soup is too thick, add a little boiling water to it while whipping with a blender.

Fragrant pea soup with smoked meats

Pea cream soup with smoked meats is the most popular recipe after the classic version. For its preparation, smoked pork ribs, bacon or brisket. You also need to take the following ingredients:

As in the previous recipe, first you need to soak the peas for 2 hours. While it is cooking, you can cut the onion into half rings and grate the carrots. Potatoes are cut into cubes, all vegetables are sent to a saucepan. Potatoes, onions and carrots are fried in a small amount of oil until a golden hue appears. Smoked meat is also added there.

After that, peas are added to the vegetable-meat mixture, water is poured. The soup is cooked for 70-80 minutes until fully prepared meat and peas. Then the smoked meats are laid out. Cream is poured into the broth, brought to a boil, and then ground with a blender. Smoked meats need to be finely chopped and returned to the pan. Vegetarian Pea Cream Soup Recipe

For those who fast or do not eat meat out of conviction, vegetarian first courses are suitable. To prepare Pea Cream Soup, you will need the following ingredients:

  • carrots and onion- one piece;
  • Dry peas - 500 gr;
  • Water - 2-3 l;
  • Baton - 300 gr;
  • Garlic - 4-5 cloves;
  • Vegetable or olive oil - 2 tbsp. l.;
  • Salt, pepper, herbs - to taste.

Soaked peas are boiled over low heat for 40-50 minutes. During this time, you can peel the onions and carrots, chop them finely, then fry in a pan. Once the vegetables are golden brown, you can remove them from the stove. For soup, you also need to wash and cut the greens.

Remaining time for cooking fragrant croutons. To do this, the loaf is cut into small cubes, fried in vegetable oil. Garlic needs to be peeled and chopped, add it to the bread, fry for another 1-2 minutes. The croutons are poured into the soup immediately before serving so that they do not have time to soak.

  • Parsley and mint - 3 branches each;

First you need to thoroughly rinse all the greens, throw out the stems and finely chop the leaves. After that, mint, parsley and peas are laid in a pan. Sugar is added there. It cannot be excluded from the recipe, since it is he who allows the peas to maintain a rich green hue.

The saucepan with the ingredients is placed on a slow fire. After boiling, you need to boil the soup for another 15 minutes, salt it. Then the liquid is drained, and the peas and herbs are crushed in a blender. When the mixture becomes homogeneous, it is again placed in the pan.
