Vinegar is hardly noticeable. The recipe is also suitable for diabetics, because there is no sugar in the composition.

Required Ingredients:

  • 500 g red beans;
  • 4 tablespoons tomato paste;
  • 3 tsp vinegar 9%;
  • salt to taste.

Step by step instructions for cooking:

1. Rinse the beans, cover with water. Leave it overnight to swell well and soften.

2. Drain the water in the morning, rinse the beans again. Transfer them to a saucepan, refill the water 1 to 2 cm above the legumes. Bring to a boil.

3. Add salt to taste and tomato paste, stir well. Check the beans periodically for completeness, on average they cook for 35 minutes.

Important: to preserve the workpiece, spread the jars and lids. Small half-liter cans can.

4. Put the product in jars on a hanger, add a teaspoon of vinegar to each.

Beans in tomato sauce for the winter, stewed with onions and carrots

This method is suitable for those who want to do the most delicious marinade and is not afraid to get confused. The sauce gives the beans a bright and rich taste; they turn out to be a little spicy, and salty, and very aromatic. What you need at any time of the year!

You will need the following ingredients:

  • 500 g white beans;
  • 500 g carrots;
  • 500 g onions;
  • 750 g bell pepper;
  • 250 g tomato paste 30%;
  • 1 liter of water;
  • 200 ml of vegetable oil;
  • 0.5 cups of sugar;
  • 1.5 tbsp salt;
  • 1 tsp citric acid;
  • 2 tsp coriander;
  • 1-2 tsp black pepper.

Preparation in stages:

1. Pour water over the dry beans and let them soak for about 12 hours.

2. Drain and rinse the beans. Transfer the beans to a saucepan, add water, boil until tender. Remember to skim off the lather.

3. Chop the onion and bell pepper chunks of medium size. Grate the carrots on a coarse grater.

4. When the beans are cooked, add the chopped vegetables to the beans. Mix everything well and add tomato paste and 1 liter of water to a saucepan. Stir again.

5. Then add sugar, salt and vegetable oil... Stir. The dish is stewed over low heat for about 40-45 minutes.

6. 5 minutes before the end of cooking, add citric acid, black pepper and coriander.

Be sure to try the sauce at this point. If sour, add more sugar.

7. Place the hot product in sterile jars and close them (the lids must also be sterilized).

The method is suitable for those who do not like vinegar and citric acid. Make more cans - then you can thank yourself when you return home tired and want to have a quick and tasty meal. A big plus of the recipe is that it does not require tomato paste, the dish turns out to be even more natural.

You will need:

  • 2 cups beans
  • 1.5 kg of ripe tomatoes;
  • 200 g onions;
  • 200 g sweet red pepper;
  • 200 g carrots;
  • 80 ml of sunflower oil;
  • 1 tbsp salt (with a bump);
  • 3 tbsp Sahara.

Cooking steps:

1. Soak the beans overnight. The next day, cook it for 30 minutes over low heat until half cooked.

2. Cut the tomatoes into large pieces and twist in a meat grinder.

3. Pour the tomatoes into a saucepan. Add butter, salt and sugar. Mix well.

4. Bring the tomatoes in a saucepan to a simmer over medium heat.

5. Rub the carrots on a coarse grater. Cut the bell peppers into thin rings. Cut the onion into half rings and pour it over the pepper.

6. When the tomatoes boil, add the grated carrots to the pan. Mix well. When it boils, simmer for 10 minutes over medium heat.

7. Add onion and pepper and simmer for 5 minutes from the moment of boiling.

8. Add beans, mix well. Cook over low heat for 20 minutes from the moment of the next boil.

9. Transfer the hot product to 1/2 liter jars and roll them up immediately. Turn the jars with the lids down, wrap them in a warm blanket and leave to cool.

Step 1: prepare the beans.

First of all, we spread the beans on the kitchen table and sort through them, removing various rubbish. Then we pour it into a colander, rinse it thoroughly, send it into a deep bowl and fill it with ordinary running water above the bean level by 10-12 centimeters... Soak the beans on 1-12 hours until it increases in volume at 1.5 2 times... If you are going to insist it for a long time, then change the liquid every 2.5-3 hours.

Step 2: cook the beans.


After the required time has elapsed, after the beans are swollen, we put them back in a colander and rinse again. Then we transfer it to a deep non-stick pan, fill it with purified water and put it on high heat.

After boiling, reduce its level to medium, season the beans to taste with salt and cook it to almost full readiness under the covered lid. The duration of the process depends on how much you soaked the beans, if for a long time, then after 30-40 minutes they will reach the desired consistency, and if not more 1 hour, you have to tinker with this ingredient 1-1.5 hours.

Step 3: prepare the rest of the ingredients.


While the beans are boiling, peel the carrots and onions from the peel using a sharp kitchen knife. We rinse them under a stream of cold running water, dry them with paper kitchen towels and grind them in turn. Onion put on a cutting board and cut into 1 centimeter cubes. Chop the carrots on a coarse or medium grater directly into a deep plate. We also put a measuring glass with tomato juice and spices on the kitchen table.

Step 4: cook the beans in the tomato.


When the beans are almost ready, use a slotted spoon to transfer them into a colander and leave them in it until use. Then we put a deep non-stick frying pan on medium heat and pour vegetable oil into it. After a few minutes, lower the chopped onion there and pass it until transparent. 2-3 minutes stirring occasionally with a kitchen spatula.

After that, add carrots to it and cook them together until soft 3-4 minutes... As soon as the vegetables are slightly browned, put the beans in the pan, fill it with tomato juice and cover with a lid so that a small gap remains.

We stew our dish on the very small fire until the beans are ready and the moisture is almost completely evaporated, about 20-35 minutes... Then add a laurel leaf, black pepper to the pan and prepare a fragrant dish for more 2 minutes... Then turn off the stove, let the beans brew in the tomato 5-7 minutes, lay it out in portions on plates and serve to the table.

Step 5: Serve the beans in the tomato.


Beans in a tomato are served warm as a side dish or as a main vegetarian main course.
