Cooking homemade bagels with cottage cheese:

It is advisable to take vanilla bagels not very small - medium in size. To prepare the filling, you will need cottage cheese, sugar, sour cream and an egg. First of all, you need to turn on the oven and heat it up to 180 degrees - this time is quite enough for the preparation of the bagels. We take all the necessary products.

Put the bagels in a convenient dish and pour a glass of water so that they are slightly covered with water. You can replace water with milk.

Grease a convenient baking sheet generously with vegetable oil so that the finished cheesecakes do not stick to the bottom. You can use special baking paper, then we also grease it with oil.

Put slightly softened bagels on a sheet of paper or a baking sheet.

Cottage cheese, preferably fatty, put in a bowl, where it will be convenient to mix the resulting filling.

Knead the curd lightly and add a fresh chicken egg. If you are preparing a double serving, you can use two eggs.

After that, you can add granulated sugar. If you're adding cinnamon or vanilla sugar, add along with the sugar.

To make the curd filling more juicy, add a little fresh sour cream.

Mix the cottage cheese very well - it is desirable that all the sugar is completely dissolved. You can use honey or fruit syrup instead of sugar.

By this time, the oven should have already warmed up to the required temperature. Therefore, it's time to put the cottage cheese filling on the bagels.

Put the prepared bagels stuffed with cottage cheese in the oven and bake until tender for about 10 minutes.

Take the finished bagels out of the oven and cool a little. Ready-made cheesecakes can be served at the table.

Step 1: Prepare the dough.

To prepare this dish, we need cottage cheese, preferably fresh homemade. If this is not at hand, then take any with a high fat content. Cottage cheese must be passed through a meat grinder or simply put in a deep bowl and thoroughly crushed with a fork so that there are no lumps.
After that, add granulated sugar, fresh homemade sour cream, a chicken egg, extinguish baking soda in a tablespoon of vinegar and pour into a bowl.
The flour should be sifted through a sieve and added a little at a time into a deep bowl, stirring constantly.
The dough should be soft, but not very tough, and it should not crumble and stick to your hands. We put it aside, cover it with a towel and let stand for 10-15 minutes.

Step 2: Form the cottage cheese bagels.


We pour a little flour on the table so that the dough does not stick, and we begin to roll the dough into a layer, its thickness should be about one and a half centimeters, but not thinner than 0.5 to make the bagels the way they want.
We take any glass with a rim width 7-8 centimeters, cut out the circles on the dough, how many will turn out. Then in each of the circles we make another circle with a smaller diameter with any other utensil, you can use a glass or a bottle cap. Thus, we get bagels. We collect the rest of the dough, roll it out again into a circle and make more bagels until the dough is over.

Step 3: Fry the bagels.

Pour vegetable oil into a deep fryer and heat. We send our bagels there in parts and fry until golden brown.
Put the finished curd bagels on a napkin and be sure to let the excess fat drain.

Step 4: Serve the cottage cheese bagels.


Put our bagels in a plate with wide brim and sprinkle with a mixture of powdered sugar and vanilla sugar. Also, to taste, you can mix a few pinches of cinnamon into powdered sugar, which will give the products an absolutely unique aroma. Good appetite!

  5. 1-2 cloves of garlic
  6. 1 teaspoon baking powder
  7. sesame seeds, flax seeds for sprinkling
  8. a bunch of dill
  9. salt to taste

Recipe for curd cheese bagels

  • Peel and finely grate the garlic cloves, finely chop the dill or other herbs to taste. Combine grated garlic and chopped herbs with cottage cheese and mix well, salt to taste.

  • Add the egg, grated cheese, baking powder and flour. I like using rice flour, but any flour will work.

  • We mix all the ingredients thoroughly to get a mass like for cheese cakes.

  • We divide the mass into four parts, from each we roll a ball. We spread the balls on a baking sheet covered with parchment, press down and carefully make a hole in the middle. Thus, we form the bagels.

  • Lubricate the bagels with a beaten egg, sprinkle with grated cheese, sesame and flax seeds on top. You can also use pumpkin and sunflower seeds, poppy seeds, or finely chopped nuts. We put in an oven preheated to 180 degrees and bake for about 35-40 minutes.

  • Already during baking, a seductive aroma will be felt, what can we say about the taste! Serve ready-made bagels warm, with hot tea or coffee.

Curd bagels are tasty, healthy baked goods that do not harm your figure. These treats differ from ordinary bagels in that they do not contain margarine, white refined flour or sugar.

The dough for these wonderful bagels is made on the basis of cottage cheese. And as you know, cottage cheese is an important source of calcium and protein.

Instead of wheat flour, a mixture of corn and rice flour. This mixture is healthier because it does not contain and has a lower glycemic index.

Curd bagels. Ingredients:

  • cottage cheese in briquettes - 2 pcs (200 g each).
  • chicken eggs - 2 pcs.
  • Corn flour - 5 tablespoons.
  • Rice flour, whole grain - 5 tablespoons.
  • Coconut sugar - 1 tablespoon.
  • salt - 1 pinch.
  • agave syrup - 2 tablespoons.
  • 2 tsp poppy (for decoration).

Preparation:

Grind cottage cheese with an egg. Salt, add coconut sugar (we wrote about it in detail), corn and rice flour.

Knead the dough.

Usually, 10-12 tablespoons of flour is enough, but if the cottage cheese was very moist, then you will need more of it. In consistency, the finished dough should be homogeneous, moist, but not very sticky to your hands and confidently gather into one whole.

So, divide the resulting dough into equal parts, roll sausages out of them, and then give them ring-shaped shapes, blind the bagels.

Bake curd bagels in the oven at 180 - 190 degrees for about 20 minutes, until lightly browned.

When done, drizzle over the agave syrup and sprinkle with poppy seeds.
