To make sour cream sauce, you need to combine sour cream with water and add spices. Sour cream can be of any fat content, but natural good quality is desirable, and not a sour cream product.

Spices can either be any to your taste, or those that suit the chosen side dish, or different each time to get a new taste for this unpretentious dish. Choose a composition of aromatic herbs and / or peppers, or use a ready-made mixture of "Provencal herbs", "Italian herbs", "suneli hops", "curry", "adjika".

A portion of curry is added here and as a result, the meatballs will turn out in a spicy sour cream sauce of a yellowish hue.


Combine minced meat and cooled cooked rice, lightly salt. Additionally, various chopped or chopped vegetables can be added to the minced meat: onions, garlic, carrots, spinach, etc. Stir all the ingredients so that you get a uniform or, more precisely, a homogeneous teftel mass.


From the resulting mass, form balls of the desired size, the optimal size for the meatballs that will be stewed in the sauce is about the size of a walnut.
Roll the meatballs in flour or starch, so it will be more convenient to fry them, and then the flour breading will add thickness to the sour cream sauce.


Use a stewpan or skillet with high sides. Fry the meatballs in a pan over medium heat in butter (or vegetable) oil on all sides with constant stirring for about five minutes.


Then pour in the sour cream sauce. If you wish, you can prepare more sauce if sour cream sauce is suitable for the chosen side dish. As soon as the sauce begins to boil, reduce heat to low, cover the pan with a lid and simmer until tender. The stewing time depends on the size of the meatballs, but on average it is about twenty minutes.


The most suitable side dishes for meatballs in sour cream are mashed potatoes, stewed potatoes or buckwheat. Alternatively, for a change, you can serve meatballs in sour cream sauce with a side dish of pasta. Sprinkle ready-made meatballs in sour cream if desired and to taste, sprinkle with grated cheese and fresh chopped herbs.

  1. Peel the onion and garlic first. Rinse them under running water. Rinse the greens as well and spread them out - let them drain. Chop the onion as small as possible. Crush the garlic with a knife or chop finely. Place the minced chicken in a deep container. Minced meat should be fresh, and, of course, it is better to cook it yourself.
  2. Add chopped onion to the minced meat and beat in 1 egg.


  3. Now add the bulk ingredients: 1/2 teaspoon each of salt, black pepper, turmeric.


  4. Knead the minced meat. You can beat it lightly on a bowl. Take a little from the minced meat with a tablespoon and with your hands moistened with water, form small balls - meatballs.


  5. Pour breadcrumbs into a plate and roll each meatball in breadcrumbs.


  6. Put a frying pan on the stove and pour 20-25 ml of vegetable oil into it.


  7. Fry the meatballs in a pan on both sides until a beautiful golden crust. The fire should be medium, otherwise the meatballs risk burning.


  8. At this time, turn on the oven at 200 ° C so that it warms up well. Transfer the fried meatballs to a baking dish, greased with a little vegetable oil.


  9. Do not pour out the oil in which the meatballs were fried, do not even turn off the fire. Pour 200 ml sour cream into a frying pan and mix the contents well. Also add the crushed garlic to the pan, stir and turn off the heat.


  10. Pour the meatballs with the resulting sauce. Gently spread the sauce over the surface of the meatballs so that they are all covered in liquid.


  11. On a fine grater, grate 150 g of hard cheese and sprinkle them with meatballs with sauce on top.


  12. Chop the herbs finely and sprinkle with cheese (1 tablespoon chopped parsley).

Let's start with a classic recipe, which is often present on the menu of kindergartens, and just in home cooking.

Ingredients:

  • minced meat - 500 gr
  • rice - 150 gr
  • chicken egg - 1 pc
  • medium onion - 1 piece
  • salt, pepper - to taste
  • flour - 2 - 3 tbsp. spoons
  • carrots - 1 pc
  • tomato paste - 4-5 tablespoons
  • sugar - 1 tbsp. spoon
  • paprika - 1 tbsp. spoon

The difference between meatballs with rice and the same is that they require pre-frying to maintain their shape and density. And hedgehogs do not need this, they should look lush with well-visible rice, a kind of mess, and in my opinion, they are prepared much easier. But the meatballs are a bit tastier.

So, to cook them, finely chop the onion. I take half a medium onion to add to the mince and leave the other half for the sauce. My husband is not a big fan of onions, so I put it to a minimum. If you like onions, you can take more.

I have minced pork + beef. I mix it with chopped onion, rice and egg. I do not forget to salt and pepper.

As for the rice. Some people prefer to pre-boil the rice for 10 minutes until half cooked. But I don't, because rice will be cooked so in those half an hour while the dish is stewed.

Therefore, you can safely add uncooked, the only thing this leads to is that the meatballs will turn out to be slightly drier inside. For example, this does not bother me, because it will still be unrealistically tasty.

But, decide for yourself, as it is more convenient for you, and do it, just see that the rice does not boil at all and remains dense.

Mix everything into a homogeneous mass. You should get a beautiful, fragrant minced meat.

We begin to form meatballs.

We collect the minced meat with a spoon and roll a ball out of it between the palms. They should be about the same size so that it doesn't turn out that some of them will be ready, and too large ones will remain soggy.

If you moisten your hands with water or oil before sculpting, the minced meat will not stick to your hands.

Then each ball must be rolled in flour and put on a cutting board. Roll lightly, without fanaticism.

So my delicious landing is almost ready for further cooking. The meat balls will need to be fried with a little oil so that they “grab” and keep their round shape. If you don't, you will end up with hedgehogs. 😊

We put our meatballs in the pan. Fry over low heat, turning over to another barrel.

We have no purpose to fry them until tender. Just brown a little. Turn it off and leave it that way for now.

It's time to make tomato sauce. I don’t really like to dirty a lot of dishes while cooking, but the recipe requires cooking the sauce in a separate container.

To do this, put chopped onions and finely grated carrots in a pan, fry until soft and light golden brown.

When this happens, add the tomato paste. Since tomato paste itself is neutral and just has a tomato flavor, we immediately add sugar to it and salt it.

You can pepper to taste. And add paprika here. It will give the sauce an even more intense red color, so don't be sorry. You can put a tablespoon with a hill.

Pour boiling water into the frying about 2-3 glasses. When you’ve already zoomed in on the recipe, you’ll know exactly how much water to add to your cookware.

Next, be sure to try it (!) And add salt and pepper to taste. You can also put fragrant seasonings. For example, I like to add some suneli hops or dried basil and garlic. You can add fresh crushed garlic, but its smell is not for everybody.

And pour our fried meat balls with gravy.

The gravy should completely or almost completely cover them. At first it may seem like a lot, but I assure you that after 30 minutes of stewing, even with the lid closed, it will at least halve.

So, cover the meatballs filled with gravy with a lid, set the smallest fire and simmer until tender. This process takes about 25-30 minutes, the minced meat is cooked very quickly and the rice that we put inside will just have time to cook.

If the rice was previously boiled until half cooked, then the cooking time can be reduced to 20 minutes. This should be enough.

In half an hour, the meatballs are ready. My sauce thickened and it didn't work out that much. More could have been done.

For a side dish, you can take crushed or whole-boiled potatoes, and buckwheat, pasta, pea puree are also suitable. How fragrant and beautiful they are!

I'll break one ball to show you. The rice is completely cooked inside. The meatballs keep their shape, they are plump and deliciously delicious! Both adults and children will be delighted.

Minced meatballs in sour cream sauce

Whoever has never tried meat balls in sour cream sauce has lost a lot! It is fantastically delicious and if you are positive about sour cream then this is the dish for you. They are so delicate, they just melt in your mouth. 👍

Ingredients:

  • Homemade mince - 500 gr.
  • Dry rice - 50 gr.
  • Egg - 1 pc.
  • Onion - 1 piece small.
  • Carrots - 1 pc.
  • Sour cream 15% - 300 gr.
  • Boning flour - 2 tbsp. l.
  • Salt and pepper to taste.
  • Hops-suneli (or other seasoning for meat) - 1 tsp. with a slide.

In the previous recipe, I did not boil the rice until half cooked. But this time I decided to boil it to make a very tender and juicy dish.

Boil the rice as follows - rinse it through a sieve with running water and then place it in a saucepan.

Pour water, preferably boiling water, so that it is completely covered. Add a little salt and put on a small fire. Bring to a boil, stirring constantly, the rice is inclined not only to "run away" from the dishes, but also to stick to it from below and to the walls. Therefore, we stir actively, do not let him vandalize.

After boiling, cook for 7-10 minutes.

As soon as the rice has absorbed all the water, turn it off. Let it stand for 10-15 minutes, let it cool down at least to a very warm state.

We mix minced meat (I have pork + chicken), semi-boiled rice in one bowl, break one egg, salt, pepper and I add a spoonful of hops-suneli. It will be very fragrant!

Mix everything together until smooth. Next, pick up the minced meat with a spoon and, rolling between the palms, form balls.

They should be small. Approximately 4-4.5 cm in diameter. And I immediately put them in a skillet with high boots, with a little oil. And I start frying over medium heat. It is necessary that they "grab", so I additionally close them with a lid.

Fry until a little gold and turn over to another barrel. I do it with these silicone kitchen tongs, very convenient.

You do not need to fry until tender, just brown.

Put the finished balls in a separate bowl. Or you can take a separate frying pan for gravy, as I did in the first recipe.

I rub the carrots finely, chop the onion.

I send them to the pan, add a little oil again. By the way, instead of vegetable, you can add creamy, it will be even tastier.

Fry until lightly golden, not allowing the vegetables to fry too much. You need to stir. And we spread the sour cream.

I've seen recipes where only 3 tablespoons of sour cream are added. In my opinion, this is not enough, it turns out water-water, not sauce. Add more, there won't be much, but the sauce will turn out to be rich and incredibly tasty.

Mix sour cream with vegetables.

And we add cold water, I added 2 cups, but I have a large frying pan. Add enough water so that the meatballs are almost completely covered. Be sure to salt the sauce, pepper if desired and try to correct the taste.

Awesome sauce, in it the meatballs will turn out great and very juicy!

We put them in the sauce and put them on the stove, under the closed lid. After boiling, simmer over the lowest heat for 20 minutes.

During this time, the gravy will thicken a little, saturate our minced meat balls.

It remains only to submit. I have pasta on a side dish, which I pour with sour cream sauce, and put meatballs on top. A little fresh cucumber and a great lunch is ready!

We take the minced meat, season it with salt, pepper and nutmeg. And also I always have frozen mushrooms in the fridge, just in a hurry. I don’t even defrost them, they will melt during cooking.

I make meatballs from this mixture. This recipe is without rice, making cooking much easier.

I cut the potatoes into slices, add a little olive oil to it (you can take sunflower oil), salt and add a little potato seasoning. Stir and place it in a high-sided foil-lined baking dish.

On top are meatballs with mushrooms. In this form, we send them to the oven at 200 degrees, to the lowest level for 40-50 minutes. We put them in them so that the round pieces do not brown before the potatoes are baked.

And when they are browned, take out and sprinkle with cheese grated on a fine grater. By the way, if you add a mayonnaise mesh to the cheese, it will turn out to be generally unrealistically tasty! But this time I didn’t do it, it’s a pity for the figure. It is not easy to be a culinary blogger, you are constantly rushing in breadth because you have to eat all your high-calorie "masterpieces". 😄

The potatoes by this time should already be ready, its readiness is checked as follows: try to break a slice with a fork, if this is easy, then the potatoes are ready.

Ingredients:

  • Semi-boiled rice - 50 gr.
  • Cream 20% - 500 ml.
  • Butter - 40 gr.
  • Cream cheese - 120 gr.

  • Onion - 1 piece small.
  • Carrots - 1 small piece.
  • Hops-suneli or other spices - 1 tsp.

How I make the meatballs themselves can be seen in recipes 1 and 2. I will not repeat myself.

Here, after the last preparation, I left extra ones that did not fit into the pan, and I froze them until the next time. It is very convenient to stick it on, freeze it, and then use it in haste.

Frozen ones also keep their shape well.

Fry chopped onions with grated carrots in a pan until light golden. I put the meat balls in the same place.

I need them to melt a little and grab. It will take about two minutes, I will not fry until black.

Like this, I roll them from side to side until a slight blush. I fry in butter so that the taste is creamy.

Now I'm making the sauce. Pour all 500 ml of cream into a frying pan. Salt and pepper the sauce, add your favorite seasonings to it. I take some hops-suneli.

Be sure to try the gravy. It should be creamy, tasty and not bland. I will not dilute the gravy with water, I like it. when it is saturated.

You can take cream of a lower fat content, it will also work out well, although not so thick.

Over low heat, stirring regularly, bring our gravy to a boil. It is imperative to stir, the cream loves to stick to the walls and to the bottom of the dishes and will try to fry it.

At the same time, pour in finely grated cheese, it will harmoniously complement the taste of the sauce. Cover with a lid and cook over low heat for 20-25 minutes.

Continue stirring occasionally during cooking. The finished gravy will slightly decrease in volume and thicken - that's what you need.

Serve the meatballs hot, with a lot of delicate creamy gravy.

Option of meatballs without rice in tomato sauce in a pan

Are meatballs without rice? It's over. In principle, any of the recipes that I showed above can be used without adding rice to the minced meat. And it will turn out awesome!

It's all about the gravy, it is she who allows you to diversify this dish so that it will never get bored.

See what other recipe I have. I usually always cook it without rice and in haste. Yummy!

Ingredients:

  • Any mince with onions.
  • Tomatoes in their own juice - 650 ml. (1 can).
  • Onion - 1 piece small.
  • Dried basil - 2 pinches.
  • Ground coriander - 1/2 tsp
  • Bay leaf - 2 pcs.
  • Salt and pepper to taste.
  • Dried garlic - 1 tsp

So, we take minced meat, any homemade. I have pork + chicken + onion. Everything is twisted together. Unsalted minced meat.

Before making meatballs, I salt it, pepper it, I can add nutmeg or seasoning for meat to taste, right into the minced meat. Mix well. I don't add rice.

I roll the balls and finely chop the onion and start frying. The meatballs come first, I roll them over and fry them in a little oil until they lightly blush.

And immediately I spread the onion to them. I fry them together for another minute or a half, the onions also turn golden.

Stir, bring to a boil and taste. Having tried it, I'm already looking at how to correct the taste along the way - maybe I need to add a little salt or, on the contrary, add sugar. Don't be afraid to use it for flavor correction.

And necessarily all sorts of aromatic herbs - basil (I rub it dry between my fingers), a bit of ground coriander, a couple of allspice peas, black pepper and dried garlic. This is my standard set for this recipe. You can add or subtract something at your discretion, except that it just has to be basil here. And, of course, Lavrushka.

I stir it and try again. If all is well, then my meatballs are quietly boiling over low heat for 20 minutes under a closed lid. Their aroma spreads throughout the apartment!

After the specified time, the gravy will slightly boil off and thicken, but the tomatoes in it remained intact.

These are such beautiful, with a rich tomato sauce, fabulously delicious meatballs turned out! With any side dish, you will simply eat away the mind.

A wonderful recipe that allows you to cook a dish right away with a side dish.

Baked in the oven with sour cream sauce, they will lie on a delicious cabbage pillow.

This is a recipe without rice. But if you wish, you can add it to the minced meat.

Ingredients

  • any meat - 300 gr
  • white loaf - 1 slice
  • white cabbage - 600 gr
  • onions - 2 pieces
  • salt, pepper - to taste.

For sour cream sauce:

  • sour cream - 5 full tablespoons
  • milk - 1.5 cups
  • flour - 3 tbsp. spoons
  • butter - 3 tbsp. spoons
  • salt, pepper - to taste

For sprinkling:

  • cheese - 50 gr

Preparation

Cooking minced meat: we pass meat with a loaf soaked in milk, onion through a meat grinder. Salt and pepper.

We roll small balls.

Cut the cabbage into such slices. The sheets should stick to the stump so that they do not break apart during cooking.

Fill the cabbage with water, add some salt and cook until almost cooked. Then it will still come in the oven with us.

When the cabbage reaches the desired condition, it will be soft enough, turn off the heat, and drain the water from the pan.

Grease a baking dish with oil.

We spread our cabbage to the bottom, meatballs on top of it.

Place flour in a dry frying pan, add butter to it.

The flour will be fried in oil until light golden brown, be careful not to burn it, otherwise the sauce will be spoiled. You need to stir intensively so that lumps do not form.

If you want the sauce to acquire a more piquant taste, add ground nutmeg.

Add sour cream and milk warmed to a high temperature, as well as spices to the pan. The mixture must be constantly stirred.

Slowly bring the mixture to a boil (stir constantly), let it bubble slightly for 5 minutes, then turn it off. The sauce will thicken slightly.

Pour it into a baking dish, it should completely hide the cabbage and meatballs.

Top with breadcrumbs and grated cheese.

Preheat the oven to 180 degrees, put all this beauty there for 30 minutes. Cooking time may vary depending on the oven.

The surface of the dish should be nicely browned.

Beat eggs, milk, bread crumbs in a separate bowl.

Then add to the minced meat. Knead everything thoroughly together.

We form small balls and spread on a baking sheet, on a sheet of foil, greased with oil.

We bake at 210 degrees for 15-20 minutes, until golden brown.

This recipe has a delicious milk gravy. While the meatballs are baking, we will cook it.
