Carrot salad with raisins is a well-known and familiar recipe. Probably many remember it from childhood: grated carrots with raisins and honey (and many of us did not like this taste), sometimes with apple, walnuts, prunes and other options. Ingredients

We will need:

  • 1 st. carrots, grated on a coarse grater or on a grater for Korean carrots
  • 1/4 cup raisins
  • 3-4 sprigs of fresh cilantro
  • 1/4 tsp ground cumin
  • 1/2 red pepper, finely chopped or to taste
  • a pinch of cinnamon
  • a pinch of ground paprika
  • salt pepper

For refueling:

  • orange or lemon juice to taste
  • olive or coconut oil

Salad of fresh carrots with raisins and spicy spices

  1. Rinse carrots, peel. Grate for Korean carrots or chop with a food processor.
  2. Finely chop the cilantro.
  3. Raisins, if dry, pour for half an hour drinking water so that the berries are nourished and become soft.
  4. Mix carrots with spices hot pepper, add raisins and coriander. Salt and pepper.
  5. Refuel spicy salad from carrots with orange juice and vegetable oil.

The salad is now ready to be served. But it is better to put it in the refrigerator for 15-20 minutes so that the carrots marinate a little and soak in the aromas of spices and sweet juice.

This magnificent carrot salad, walnuts and raisins, I would call fast, on duty and very simple and easy to prepare. Just a few minutes - and you can serve it on the table, and it can be prepared both every day and for holiday table. Salad with nuts and carrots is very tasty, quite satisfying and nutritious. If you have a choice, then it is best to use raisins with a slight sourness, it will not give the dish cloying and make it more tasty. As a salad dressing, you can also use sour cream or natural thick yogurt without additives.

Ingredients:

  • 2 fresh carrots
  • 50 gr walnuts shelled
  • 50 gr raisins
  • 1 - 2 garlic cloves
  • mayonnaise or sour cream for dressing
  • salt, pepper, spices to taste

Cooking method

You can determine the amount of ingredients in a salad with nuts as you wish and to your taste. We clean the carrots from the skin and three on a Korean or on a regular coarse grater. Mix it with chopped garlic, add raisins washed and dried with a paper towel (if necessary, it can be soaked in advance), chopped walnuts, a little mayonnaise or sour cream. Salt, pepper, add spices and mix well. This salad is served on the table immediately after preparation and it is best to eat it all, without leaving it for later, so as not to lose its benefits and vitamin content. Bon appetit.

Listen, someone thought to add one single non-standard ingredient to the recipe, and I literally rediscovered carrots with raisins as such! The boring stuff of my entire childhood suddenly turned into an unknown, almost gourmet dish! So what is this miracle ingredient?

PINK PEPPER!!!

Pink pepper is not even a relative of paprika and all sorts of cayenne and allspice. It belongs to the sumac family, its "peas" do not grow inside juicy pods, but in clusters of independent small berries. Pink pepper is made from two plants similar to each other - Peruvian and Brazilian peppers - these same ones, not with pods, but with berries. The spice was known even to the pre-Columbian Indians, but they made from it mainly liquid seasonings or flavored drinks. In modern cooking, pink pepper is more used in dry form. It is fragrant, like normal capsicums, but not as hot. Well, beautiful, of course.

I can't guarantee that S7's ready-made menu supplier made his salad according to this recipe. These are just my guesses on how to achieve all the things I liked about their carrots and raisins.

So, for one HOME portion (on the plane, of course, this is much less) it makes sense to take 150 gr. carrots, 15 gr. raisins, lemon or orange, 5 pink peppercorns and a little vegetable oil (simply because carrots without oil - beta-carotene in the wind)! Maybe someone will want to sweeten it more, but I had enough sweetness from raisins. In general, it turns out a kind of glorious carrot diet salad, for the post is also suitable. Vitamins in carrots and trace elements in raisins ... Just solid advantages!

I wonder how I could like it so much healthy dish- usually I somehow prefer everything fatty-smoked-sweet. In general, I think that the whole thing was really in this very pink pepper.

Squeeze juice from half a lemon.

Soak raisins in citrus juice for 1 hour (sourness in raisins should be clearly felt).

Carrots in three thin strips (naturally, those who don’t have a vegetable cutter can use a coarse grater, but I have a Burner for Korean carrots, in my opinion, it’s just perfect for industrial cutting, isn’t it?)

We crush pink pepper with a pestle.

We mix carrots with crushed peppers and vegetable oil, pickle them until the raisins are saturated with lemon juice.

Well, and then we catch the raisins from the juice, mix it with the carrots and let everything stand together for another hour (it can be more, under the film - you yourself understand that airlines do not serve food an hour after cooking).

Here we have got such a carrot with raisins, bright both in appearance and in taste.

If you are on a low calorie diet, delicious, bright salad from carrots with raisins will be most welcome. Its rich and fresh taste with a slight hint of garlic goes well with meat and chicken dishes. It is rich in vitamins, minerals and plant fibers - everything you need for healthy eating. You can make the salad ahead of time and store it in the refrigerator until it's time for dinner.

Ingredients:

  • 450 gr. carrots (about 2 large pieces);
  • ½ cup raisins (dark or light - to your taste);
  • 1 large clove of garlic, passed through a press;
  • 3 art. tablespoons of vegetable oil;
  • 2 tablespoons of apple cider vinegar;
  • 1 ½ teaspoons of sugar or honey;
  • salt and freshly ground black pepper to taste.

How to cook carrot kale with raisins and garlic

1. First of all, soak the raisins in hot water for 20-30 minutes.

2. Wash, peel and grate the carrots. It is very convenient to use a grater for these purposes.

3. Prepare dressing for carrot salad. In a small bowl, combine garlic, oil, vinegar, sugar (or honey), salt, pepper and mix thoroughly.

4. Drain the bowl of raisins and wring out any excess moisture.

5. Combine raisins, grated carrots and dressing in a large bowl, mix thoroughly, cover and refrigerate for 30 minutes or more. The longer carrot salad with raisins and garlic is in the refrigerator, the more bright and saturated its taste becomes.

  • Olive oil - 2 tbsp. spoons.

Cooking method carrot salad with raisins and honey:

Sort the raisins, rinse well under running water, pour hot water to swell and leave for 10 minutes.

Rinse the carrots thoroughly, grate on a coarse grater.

1 tablespoon lemon juice beat with honey, add olive oil to the mixture.

Drain the water from the raisins, dry them a little. Add raisins to the grated carrots, mix the ingredients. Dress the salad with a mixture of lemon juice, honey and olive oil.

Carrot salad with raisins and cheese

Ingredients:

  • Carrots - 2 pcs.
  • Raisins - 0.5 cups
  • Hard cheese - 100 g
  • boiled - 1 pc.
  • Peeled walnuts - 0.5 cup
  • Mayonnaise
  • Garlic - 2 cloves.

Cooking method carrot salad with raisins and cheese:

Rinse raisins, soak in water to swell.

Peel carrots and beets, grate on a medium grater.

Pass the garlic through a press, crush the walnuts with a knife.

Cheese grate on a medium grater.

Spread the salad in layers on a flat plate, smearing each layer with mayonnaise: a layer of carrots, raisins, cheese, garlic, beets and nuts.

Ingredients:

  • Raisins - 2 tbsp. spoons
  • Citric acid or lemon juice
  • Carrots - 4 pcs.
  • Sugar - 1 tbsp. the spoon
  • Sour cream - 0.5 cups
  • - 3 pcs.

Cooking method carrot, raisin and apple salad:

Rinse raisins under running water, pour boiled water and leave for half an hour to swell.

Rinse carrots, peel, rinse apples. Cut carrots and apples into thin strips.

In a bowl, combine apples, carrots, add raisins, sugar, salt and sour cream. Mix all components.

Garnish with apples and carrots before serving.
