To begin with, we prepare a wine sourdough. Usually I take raspberries for wine sourdough, but if the season has passed and there are almost no raspberries in the garden, it doesn't matter. In spite of everything, you need to collect and use all the remnants of raspberries and strawberries. And as the main source of wine yeast at this time, I use rose hips. So, we collect the berries (about 2 glasses) and unwashed! put in the jar. If the berries are washed, then all natural yeast that is on the surface of the berries will disappear.

Fill in 2 tablespoons of granulated sugar, pour 0.5 liters of cold water, tie the neck with 4-layer gauze and leave for 3 days. Stir occasionally. After 3 days, the wine leaven will begin to ferment actively and can be used to make wine.

Grind 3 kg of black chokeberry (I don't wash it either) in a food processor (you can crush it with a crush), pour the mixture into a bucket, add wine sourdough.

Now you need to add sugar and water.

You need to take 3 liters of water. I always filter the water, let it settle. If possible, it is better to take well water.

We measure 2 kg of sugar, cook sugar syrup with a little water from the already measured measure. Pour into a bucket of chokeberry only cooled down, so as not to damage wine yeast! Thus, we have prepared a wine must.

We tie the bucket with 4-layer gauze and leave for 8 days for active fermentation. During this time, you can stir the wort 2-3 times a day. the berries float to the surface and form a crust that prevents oxygen from reaching the surface.

Scandinavian legend says that the first woman was created from mountain ash. These healthy berries are shrouded in many legends, which will take more than one day to read. It is enough for us to know that mountain ash is useful for colds, respiratory diseases, as the prevention of cancer and much more.

There is no particular difference between chokeberry and red mountain ash, except that chokeberry is considered a more cultivated variety. It is no less useful than red, but for the preparation of juices, compotes and fruit drinks, chokeberry is more convenient. It is not as hard as its red cousin, and gives much more juice.

Red and black chokeberry can be mixed, and prepared rowan fruit juice for the winter according to the same recipe. Rowan ripens by the beginning of autumn, but it is better to wait for the first frost. After that, rowan acquires greater sweetness, astringency, and becomes more intense.

To prepare fruit drink you need:

  • 0.5 kg of mountain ash;
  • 2 liters of water;
  • 100 grams of sugar, or honey.

In fact, this is an approximate dosage, and you need to select the amount of one or another ingredient individually.

Wash the berries and pick them off the twigs. If there are a lot of rowan berries, pass the berries through a meat grinder, or pound them with a blender if there are few berries.

Put the mountain ash puree in a sieve, let the juice drain and squeeze out some cake. The cake can be grated with sugar and get "live jam", or made. If you do not like jam, fill in the cake cold water, add sugar and put it on low heat.

Bring the water to a boil and boil for 3-5 minutes, then cover the pan and let the cake brew for 5-6 hours.

Strain the broth, mix it with the juice, and the fruit drink is ready, you can drink it warm, or with ice cubes. In order to preserve the rowan fruit juice for the winter, it should be additionally pasteurized.

Put a saucepan with rowan fruit juice on the fire, bring it to the stage "is about to boil", but do not let it boil for 3 minutes. After that, turn off the heat very quickly, pour the rowan juice into bottles, and seal them with corks.

It is not worth pasteurizing the rowan fruit drink for more than three minutes, otherwise, most of the vitamins contained in the rowan will die.

If you are not sure that such pasteurized fruit drink is healthy, freeze fresh rowan berries in the freezer and prepare fruit drinks as needed.

How to cook blackberry and cranberry juice
1. Sort out blackberries, bad berries, remove the twigs, wash the berries.
2. Sort fresh cranberries, peel from bad berries and twigs, do not defrost frozen before cooking.
3. Put blackberry, cranberries in a saucepan, pour a liter of water, cover the pan with a lid.
4. Place the chokeberry and cranberry saucepan on medium fire, let it boil.
5. Reduce heat to low, cook the cranberry-black fruit juice for 10 minutes, when using dried blackberry, cook longer - until the berries are soft.
6. Remove the pot of fruit drink from the stove.
7. Remove the berries from the fruit drink with a slotted spoon, transfer them to a sieve.
8. Using a spoon, grind the black chops and cranberries into mashed potatoes.
9. Transfer the puree from the berries back to the saucepan.
10. Place a saucepan with fruit drink over medium heat, let it boil.
11. Boil fruit drink for 1 minute.
12. Remove the fruit drink from the burner, open the lid, let the fruit drink cool to a warm state.
13. Put honey in a saucepan with warm (but not hot) fruit drink, mix or put honey in a warm fruit drink already poured into cups.
