  • 0.5 tsp ground cinnamon
  • a pinch of salt
  • 100 g almond crumbs
  • 250 gr. candied or dried fruits
  • 1 h. l. baking powder
  • 100 ml brandy
  • lemon zest

Cooking method:

  1. Beat eggs with sugar.
  2. Mix m uku with spices, baking powder and salt.
  3. Pour the candied fruit with cognac and leave for 15 minutes.
  4. Combine all the ingredients in a bowl, knead the dough.
  5. Grease cake tins with butter and sprinkle with breadcrumbs.
  6. Put the dough into molds.
  7. Bake the New Year's cake for about an hour at 180 degrees.

Chocolate Christmas Cupcakes Recipe

Ingredients:

  • 4 egg whites
  • 150 g butter
  • 150 g icing sugar
  • 2 tbsp. flour
  • 100 g cores walnut
  • 2 tbsp. l. cocoa powder
  • 1 p. vanilla sugar
  • a pinch of salt
  • icing sugar for decoration
  • chocolate in pieces by the number of molds

Cooking method:

  1. Chop the nuts finely.

  • Flour 125 gr;
  • icing sugar 125 gr;
  • baking powder 1/4 tsp;

And now let's see how easy they are to prepare - even a child can handle it. To make it more convenient for my son to take flour, I poured it into a bowl. We needed a scale on which Alexander measured 125 grams of flour, powdered sugar and butter. And this is already basic mathematics - the definition of mass. And if you also have a scale like ours, you have to count the divisions by 20 grams and add the numbers.


Step one - sift

You need to sift the flour icing sugar and baking powder in the mixer bowl. It is no secret that these actions are difficult for children. It is necessary to control the movements of your hands so that the sifted product falls only into the bowl. At the age of 5 years 2 months, the son coped with it perfectly.

This is where I will refer the measurement with measuring spoons. We measure baking powder (bulk product), and then milk with vanilla (liquid products). Fractions we are already in the thematic lesson about the moon, but so that the child understands what measuring spoons are equal, I used the usual ones. Explanations based on their example are sufficient for a five-year plan.

Alexander coped with bulk products remarkably, and with liquid products, which should be poured into such a small container, you still need to practice.

Step two - kneading the dough

So, all the ingredients are prepared in the right amount. Put in the mixer bowl, where there are already dry foods, soft butter and 2 eggs.

We turn on our mixer at a slow speed so that the flour does not fly away. As soon as we see that all the ingredients are mixed, switch to medium speed and let the machine run for another 1 minute.

Mix vanillin extract and milk in a glass. We reduce the speed to a minimum so that we are not doused with spray, and pour this mixture in a thin stream. Increase the speed again and mix on medium for another 1 minute. That's all - the dough is ready! Simple, isn't it?

Step three - bake

Now Alexander chooses the colors of the paper cupcakes and puts them in the baking tins. If you have silicone, then skip this step.

This recipe makes it possible to fill 9 molds out of 12 available. If you cook on big company or decorate in one of the ways that will be discussed below, then increase the amount of ingredients based on your needs. Let me remind novice housewives that the molds need to be filled 3/4 full, as the dough will rise.

We preheat the oven to 170 degrees Celsius, place our blanks in the center and bake for 22-25 minutes. Allow to cool completely after removing.

Cupcake Cream Recipe

To make our cupcakes for the New Year have an elegant look, we will decorate them on top. At this stage, my assistant was already taking an evening bath, leaving me alone in the kitchen.

Components of the cream for the cupcakes:

  • Proteins of 2 eggs;
  • Sugar 115 gr;
  • Unsalted butter 110 gr;
  • Vanillin extract 1 tbsp a spoon;
  • Salt on the tip of a knife.
  1. Mix sugar, salt and proteins with a whisk in an aluminum or glass bowl.
  2. Pour water about 2-3 cm from the bottom into a convenient container. We are waiting for the water to boil, reduce the heat to a minimum - this is important, otherwise the proteins will cook.
  3. Place a bowl of protein on top of the saucepan, the bottom of the bowl should not touch the boiling water! Now we stir with a whisk without stopping. This will take approximately 5-7 minutes. When protein mass will turn white, and the sugar will completely dissolve, remove from heat.
  4. Now you need to beat the protein-sugar mass well. To do this, we transfer it to the mixer bowl. Add vanillin and beat at full speed for 5-7 minutes.
  5. We leave it all for 20-30 minutes to cool down. If we don't, the oil will just dissolve!
  6. After the air mass has cooled, turn on the mixer at medium speed and add one tablespoon of butter every 30 seconds. When all the butter has been added, switch the mixer to full speed and beat for another 2-4 minutes.

How to decorate cupcakes for the New Year

Well, it remains to decorate our fragrant cupcakes which have already completely cooled down.

For decoration I use:

  • Wilton dyes;
  • Wilton nozzles (in this case numbers 2 and 27);
  • a set of disposable bags 30 cm (I confess that I wash them in hot water).

We divide our cream into 3 parts. With a white cream using a pastry spatula, apply the first layer at random. We paint the second part green, and using the nozzle number 27 we make flowers in a circle. We paint the third part in red, and with the help of the nozzle number 2 we apply the middle of the flower and the bow. I was decorating at night, after I put all the household to bed. And in the morning Alexander asked me:

- Mom, did you make the Christmas wreaths?

So it looks like! - I thought with relief.

Add sifted flour, a pinch of salt, baking powder and matcha powder. If you don't have one, it's okay, you can add finely grated lime zest and juice from it, or a few drops of green dye. But just a white Christmas tree against the background of a chocolate muffin base will look beautiful and contrasting in section. In this case, I advise you to add a couple of tablespoons of lemon juice. Chocolate and lemon are the perfect combination! I limited myself to just matcha powder, it has its own, very peculiar pleasant taste, so all other additives are simply unnecessary here.

Stir in flour with a spatula or on low speed mixer. Add softened butter. Actually, the butter should have been added before the flour, but I happily forgot about it. When I was preparing the chocolate dough, I took into account the mistake, although, by and large, I did not see the difference.
Pour in the milk and mix again, briefly, at low mixer speed or with a spatula, folding upwards.

Pour the dough into a parchment-lined pan. The larger the shape, the thinner the Christmas tree. So see for yourself, which is more convenient for you. My dough rose very well, the Christmas trees turned out to be plump, but it was not very convenient to cut them out, the mold sank in the dough without cutting to the bottom. The size of my form is 16x22 cm.
Bake in an oven preheated to 180 C for about 35 minutes.

About 5 minutes before the end of the baking of the green crust, start cooking the main chocolate dough. The algorithm is the same, the ingredients are the same as in the green dough (only 2 times more), but instead of matcha powder, add sifted cocoa. And yes, add butter before flour! Do you remember?

We get green dough, turn over (so the cake is easier to cut through) and quickly cut it out with a Christmas tree mold. As much as you can get. I even have one extra one left. Well, there were scraps, but we ate them wonderfully with evening tea.

I got distracted. Arrange the Christmas trees in a row in the center of your cupcake pan. If the trees are not stable, pour some dough on the bottom.

And carefully fill the Christmas trees to the very top of the head with chocolate dough. You level it if it works out, but if it doesn't, you don't need it. The dough will spread itself during baking, filling all the voids. In the photo - half chocolate dough... The size of my cake pan is 24x10 cm.
We bake for 60 minutes at the same 180 C. Do not overdry!
