Here's how to make vodka dough for lush kefir brushwood. Pour baking powder (or soda) into warm kefir. Shake lightly. The liquid will begin to bubble. Pour in lightly beaten eggs and vodka. Add granulated sugar and vanilla. Mix well. Let stand for 5 minutes. Sift flour separately. Pour into the kefir mixture in portions. Knead the dough with a spoon, and then switch to hand kneading. You should get an elastic, soft, pliable and non-sticky mass. You may need to add a little more flour.

  • 4 tbsp. l. powdered sugar plus about the same for sprinkling.

Cooking process:

So, the recipe. Warm kefir to room temperature. Sift the flour onto a table or cutting board. Add salt and powdered sugar to it. Stir. Form a slide. Mix kefir with yolks and vanilla sugar... Shake it up. Make a depression in the flour slide. Pour liquid ingredients into it. Knead to a smooth and uniform dough. If sticky, add a spoonful of flour until you achieve the desired consistency. Knead the dough vigorously with your hands for a few minutes (3-5). Then put it in the refrigerator to "rest", wrapping it with cling film.

Roll out the dough, "cooled" for 30-60 minutes. Cut into strips and shape into brushwood. Turn on the oven to warm up to 180 degrees. Place the pieces on a baking sheet lined with baking paper. I don't really want to "transfer" sunflower oil for deep frying for the sake of a large number brushwood, so here's a classic recipe for brushwood on kefir, indicating the classic amount of ingredients for its preparation. And yes, I cooked brushwood on kefir from just such an amount of kefir and flour, and we (me and two children) ate the resulting mountain delicious brushwood in a day and a half.

  • 2 eggs
  • 1 teaspoon baking soda
  • 4 tablespoons sugar
  • 3 cups flour (and maybe some more)
  • 0.5 l refined sunflower oil
  • 3 tablespoons caster sugar

We measure out 250 ml of kefir of any fat content, pour it into a bowl for kneading the dough. Add two eggs and sugar and soda to the kefir. Also add two tablespoons of sunflower oil. Using a regular fork, mix the ingredients slightly (just stir for about a minute).


As a result of these simple actions, we get a liquid mass. This was the first step of several that will give us soft, lush brushwood. All further cooking steps will be as easy and quick as this one.


We measure out a glass of flour and add to the kefir-egg mass. Mix everything again with a fork. The first glass of flour will easily dissipate in the dough. Then add a second glass and mix again. And, of course, the third glass of flour. The dough will now become thick and not easy to stir with a fork. We transfer the dough for brushwood on kefir on a work surface crushed with flour and continue to knead it with our hands. Add a little more flour if necessary. The dough for brushwood on kefir should turn out to be soft, but not sticky, while absolutely homogeneous, without flour lumps. To do this, it must be kneaded with high quality for at least 3-4 minutes.

The dough for making brushwood on kefir turned out to be quite a lot and we will not be able to roll it out and cut it right away, so we divide the dough into three parts for convenience. We put two in a bowl and cover with a towel or simply send in a bag to avoid airing it.


Roll the first part of the dough into a layer 5 mm thick and cut it into pieces in the form of rhombuses or rectangles. The dimensions of my blanks for brushwood on kefir are about 3 cm by 7 cm. To do this, we send blanks for brushwood in small batches of 4-5 pieces in boiling oil and boil them over medium heat until golden brown on all sides. It is usually enough to hold the brush in oil for 1-1.5 minutes on each side. Using a slotted spoon, remove the prepared kefir brushwood from the oil and put it on a paper towel, which will absorb the excess oil in the brushwood. Next, we send the next batch of brushwood into the oil, and so on until we cook everything.

I want to warn you right away, if you need real thin crispy brushwood, then this recipe will not work. For such baking, the dough is kneaded with sour cream, vodka or yeast. We offer an easy and quick option cooking brushwood on kefir. It won't crunch, but its delicate taste will definitely not leave you indifferent.

Such lush brushwood on kefir, due to its softness, is well suited for the smallest baking lovers, although there is one small drawback - it is cooked in a large amount of oil, which is not very useful. But sometimes you can still pamper both adults and kids with delicious food.

Pour kefir into a bowl; it should be a little warm. Pour in the baking soda, mix well and set aside for now so that it goes out under the influence fermented milk product... Instead of kefir for this recipe, you can use sour milk.

Beat eggs into a separate bowl and add sugar. If you are a lover of very sweets, then you can take a little more sugar (4-5 tablespoons), and vice versa, those who do not like sugary pastries can reduce the amount of granulated sugar. In general, focus on your taste preferences.

Use a fork or whisk to beat the egg and sugar mixture.

Combine the kefir and egg masses, add a pinch of salt, vanillin and mix until smooth.

Sift flour into the resulting mixture and begin to slowly knead the dough. Do not neglect the sifting process, the flour must be saturated with oxygen so that the finished baking turns out to be airy and tender.

The dough for brushwood on kefir should be steep and at the same time rather soft, not sticky to your hands and keep its shape well. As for the amount of flour, you may also have to take a little more or less, it all depends on the size of the chicken eggs, how thick or liquid kefir is.

Grind the work surface with flour, transfer the dough and roll it into a layer a little less than 1 cm thick. Cut the dough into strips with a knife or a special wheel, and cut them into diamonds in turn. Make a hole in the middle of each piece and pull one edge of the diamond into it. In this way form all the blanks for the brushwood and lay them out on the sprinkled surface.

In a deep frying pan or stewpan, heat the vegetable oil well, dip the brushwood in it and fry on both sides until golden brown. The fire should be slightly above average. Keep in mind that during frying, the pastries become fluffy and grow in size, so do not put the dough pieces close to each other, otherwise it will be inconvenient to turn them over later. Kefir brushwood requires very little time for frying (even less than a minute), so do not go far from the pan.

Remove the finished baked goods from the butter with a slotted spoon and transfer to a paper towel to drain off excess fat.

Soft brushwood on kefir is ready, put it on a large flat dish, crush it with powdered sugar through a strainer on top and serve with milk or freshly brewed aromatic tea.

Ingredients:

  • Fatty kefir - 200 ml.

  • Natural honey - 4 tablespoons
  • Dry yeast - 14 gr.
  • Salt - 0.5 tsp
  • Flour - 3 tbsp.
  • Butter - 100 gr.

Cooking process:

  1. The flour must first be sifted, the kefir must be heated to 40 degrees, and butter melt.
  2. Pour kefir into a deep container, add dry yeast to it and mix thoroughly. Introduce liquid honey.
