The recipe that we offer today is a simplified version of the famous English buns, which are sold in England at every turn and without which no feast is complete - neither everyday nor festive. We call the recipe simplified, mainly because we will use instant yeast (such as Saf-Levure). This will make making buns really easy and pretty quick. We will need 15 minutes to prepare the dough, 20 minutes to rest the dough in the refrigerator and 15 minutes to bake.

Ingredients (for 12 buns)

Flour - 220 g

Butter - 50 g

Salt - 5 g

Milk - 150 g

Ham - 100 g (cut into cubes)

Hard cheese - 40 g (grate)

Sugar - 1/2 teaspoon

Instant yeast - 10 g

For brushing: 1 tbsp. spoonful of milk + 1 egg

Cooking

Pour instant yeast into milk (in milk at room temperature or slightly heated, the yeast will dissolve faster).

Mix flour with salt, grated cheese, sugar in a bowl. Make a well and pour in the milk with yeast (1). Add butter softened at room temperature (2). Knead the dough with your hands (but you can also use a mixer) (3).

Roll out the dough, pour the ham on it, mix gently (4), wrap with cling film or foil and refrigerate for 20 minutes.

Roll out the rested dough with a rolling pin on a lightly floured surface into a layer 1-1.5 cm high (5).

Cut out buns with a cookie cutter or glass (6).

Place them on a baking sheet lined with baking paper (7).

Lightly beat the egg and milk in a bowl and brush over the buns (8).

Bake for about 15 minutes at 200 degrees - the buns should rise and brown beautifully (9). When the buns have cooled down a bit, you can remove them from the pan.

Serve buns warm or cold as a base for cheese sandwiches, as a separate dish (for tea, beer), or instead of bread.

Advice:

Ham in buns can be replaced with any, including smoked, sausages, boiled chicken, veal, pork.

For a change, try sprinkling grated cheese on top of the buns. If you do not like fried cheese, then sprinkle the buns with cheese 5 minutes before the readiness. Then the cheese will have time to melt.

Adjust the salt in the buns as you wish. If buns are served instead of bread or prepared for a school lunch, add a little salt. If the buns are going to be an appetizer at a beer party, it makes sense to make them more salty and even peppery.

Bon Appetit!

  1. Dough: In a medium saucepan over low heat, heat the milk and 0.5 tbsp. water to a temperature of 37°C (but not higher than 43°C). Remove the saucepan from the stove and pour the yeast into the liquid. Sprinkle a pinch of granulated sugar on top and set aside, without stirring, for about 5 minutes. Then stir in the butter and egg yolk.
  2. In a large bowl, whisk together flour, remaining granulated sugar and salt. Make a well in the center and pour in the yeast mixture, stirring with a wooden spoon until you have a thick, slightly sticky dough. Turn the dough out onto a floured work surface and knead until soft and elastic, about 6 minutes. Form a ball from the dough.

  3. Brush the inside of the bowl with butter. Place the dough ball in the bowl, turning it to coat with oil. Cover the bowl with plastic wrap, draw a circle the size of a dough ball on the plastic wrap, and note the time. Let the dough rise in a warm place for about 1.5 hours, so that it doubles in volume.
  4. Remove the dough from the bowl and knead a little to release excess air; Form the dough into a ball again and place it in the bowl. Lightly butter a large piece of plastic wrap and place it on top of the dough. Wrap the entire bowl tightly in another piece of cling film and refrigerate for 4 hours or overnight to allow the dough to rise.
  5. Prepare the filling: Melt the butter in a medium sized skillet over moderate heat. Add the leeks and cook, stirring often, until soft and lightly caramelized, about 5 minutes. Sprinkle flour on the onion and cook, stirring constantly, for about 1 minute, until browned and browned. Then stir in the wine and 1/4 tbsp. water, and let the mixture thicken, stirring constantly, for about 1 minute. Remove the pan from the stove and stir in the cheese, 0.5 tsp. salt and a little pepper. Transfer the filling to a medium bowl and let cool completely. (The filling will firm up a bit, but if it's too warm, you'll have a hard time forming the buns.)

  6. Form the burgers: Lubricate 2 tbsp. l. softened butter 22 x 32 cm baking dish. Place the dough on a floured work surface and press it down. Roll a 25 x 45 cm rectangle out of it so that it lies with the long side towards you. Spread the cooled filling evenly over the dough, stepping back about 2.5 cm from the edge opposite to you. Sprinkle the filling with ham. Starting on the side closest to you, roll the dough into a tight roll. Lightly brush the empty edge of the dough with water and continue rolling to seal the roll. Bend the ends slightly, and if the roll looks thicker in some places, smooth it out with your hands.
  7. Use a serrated knife to cut the roll into 4cm buns for a total of 12 rolls. Place the buns cut side down (except for the ends) in the prepared pan, 2.5 cm apart. Cover the buns with plastic wrap. Put in a warm place so that they double in size, and there are no gaps between them, for about 1.5-2 hours.
  8. Place a rack in the center of the oven and preheat the oven to 175°C. Bake the buns until golden brown and springy when pressed lightly, 25 to 30 minutes. Cool in the mold for 10 minutes.
