Today we baked Fallen Leaves Cake. Delicate, light, the cake turned out and, as always, I want to share the recipe with you. Cake "Fallen Leaves" is very easy to prepare, the products for its preparation are all available. A very tasty cake, especially when it is soaked with cream. And even if it is not very chic in appearance, but after tasting it, you will forget about everything. And you can decorate the cake with your ingenuity and imagination.

Cake Ingredients:

  • 1.5 cups sugar
  • 6 eggs
  • 1 pack vanilla (2 grams)
  • 1 teaspoon soda quench with vinegar 9%
  • 2 cups of flour
  • 1/2 cup blackcurrant
  • 3 packs of sour cream 15%, 450 grams
  • 5 st. spoons of sugar

Prepare the ingredients for the cake. All ingredients must be at room temperature.

We take a bowl in which we will knead the cake, break 6 eggs into a bowl and add 1.5 cups of sugar, beat it all, you can use a mixer, or you can use a whisk.

Then I add one sachet of vanilla (2 gr.)

Now you need to extinguish the soda with vinegar. We collect a teaspoon of soda, pour it into a tablespoon and add one teaspoon of 9% vinegar.

Now I mix everything well with a whisk and gradually add flour, you need 2 cups of flour, add half a cup and stir the dough.

This is how my dough turned out. The consistency of the dough resembles thick sour cream.

Now we take a baking sheet. I line it with parchment paper. We will spread the dough on a baking sheet with a teaspoon, it is better not to spread it with a tablespoon, because there will be very large "leaves" for the "Fallen Leaves" cake. We spread our "leaves" at a distance of about 2-3 cm from each other.

We put the baking sheet with the dough in the oven preheated to 230 degrees, the dough is baked very quickly, about 7 minutes, make sure that it does not burn. Here are the first leaves ready.

Now spread a teaspoon on a baking sheet with more dough and put in the oven until all the dough is finished. That's how many "leaves" I got. To be honest, we did not count how many of them we got.

Now we are preparing the cream for the cake. I have sour cream in bags of 450 grams 15%. I pour sour cream into a bowl and add sugar, I add sugar 5 tablespoons for 3 packs, if you like sweet, you can add more sugar, just try the cream and if it seems not sweet to you, add sugar. Beat sour cream with a mixer until the sugar is completely dissolved, you can do this with a whisk. You can add a bag of vanilla sugar to sour cream.

Each "leaf" must be completely dipped in sour cream.

Now we decorate our cake by laying leaves in sour cream in layers on a dish. Plus, you can decorate the cake with berries, I have frozen blackcurrant, you can use pitted cherries or, for example, strawberries. The berry gives a certain sourness and piquancy to this cake. I spread a layer of "leaves" in sour cream and add black currants, it's also delicious with strawberries, I just didn't have strawberries in my freezer.

In total, I got three baking sheets of cookies. While they are baking, we do not grind the nuts very finely on a blender and, after mixing sour cream and sugar, beat the cream until the grains of the latter dissolve.
