How to cook oozy

This is not difficult to do. But you need to know that the dish is soothing has its own subtleties that must be taken into account. The main secret in a special way of cooking cereals. It is somewhat different from the traditional one: pour a glass of rice (preferably steamed) with a glass of water and boil it for twelve minutes over very low heat. Place the cookware on the stove and cook for twenty minutes, stirring constantly. Cool the poppy. Gradually adding liquid honey, use a wooden pestle to crush the poppy seeds into a homogeneous mass.

Transfer the cooked and cooled rice to a large bowl and mix thoroughly with the honey poppy seeds. Then add the nut crumbs and mix well again. Add steamed raisins. Then squeeze the juice out of the lemon and orange slice and stir again. Place on a dish or a large flat plate, fill it with the resulting mass, carefully remove the form and decorate with candied fruits and nuts on top. The dish is ready!

Sochivo: made from wheat

First you need to buy whole (not crushed!) Wheat grains. The fact is that

they are the basis of the original taste of this ceremonial dish... It is advisable that the grains were previously peeled and steamed. In this case, they will boil faster. Cooking is being prepared, the recipe for which is quite simple, only on water. In no case do we add milk or cream: the dish is lean, and that says it all.

So, pour cold water over the wheat grains and boil them under the lid until soft over low heat. Check if all the water has boiled away, add boiling water if necessary. Before the end of cooking, you should have a semi-liquid mass in the pan. In this case, we do not need crumbly porridge... The pot can be removed from the stove and finely chopped dried apricots, prunes, steamed raisins can be added to the wheat. You can add and raw fruit: apples, pears - it depends on your preference. Cover the saucepan with a lid and steam it well together.

Add nuts

Without nuts, there is no such dish as juicy. The recipe involves the use of a variety of nuts, it depends on your taste. You can use forest, walnuts, cashews, almonds, peanuts, etc. Grind them into not too small crumbs and fry a little in a pan. Do not add oil, and stir the nuts constantly.

How to cook poppy seeds

Now is the time to make the poppy seeds. Pour boiling water over it, and let it stand under a closed lid for thirty minutes. Then drain the water, add honey or sugar and rub it thoroughly so that a white juice appears. Add poppy seeds and nuts to the finished wheat with dried fruits. Mix all the ingredients well, add more honey if necessary. Now put everything nicely on a plate, decorate with nuts.

How to make juicy if wheat is not prepared in advance

Sochivo is a type of kutya, lean porridge, which is traditionally put on festive table on the eve of the Nativity of Christ. It is made from wheat grains, rice, barley, pearl barley and even peas, and seasoned with honey or honey water, nuts, poppy seeds or raisins.

It is not difficult to make a simple pomace from rice, but there are subtleties. The main one is a special way of cooking cereals.     Grind the poppy seeds until smooth with a wooden pestle.

    Transfer the finished cooled rice to a cup and mix thoroughly with the honey poppy seeds.

    Add nut crumbs and mix well again.

    Stir in the steamed raisins into the rice mass.

    Squeeze the juice from the orange and lemon slice, pour into the juice and stir one last time.

    Install a culinary ring on the dish, fill it with the resulting mixture, remove the form, and decorate it with nuts or candied fruits.

According to one of the versions, the name of the dish comes from the word "Christmas Eve", according to another, the oil made from sunflower seeds, poppy seeds and hazel - kernels of nuts - was called soic. Do not open the lid for another twelve minutes, letting the rice steep. The ratio of all components for the rice syrup is preserved. Sometimes raisins are added, but this is not necessary.

It can also be prepared without nuts and poppy seeds. The main thing in this dish is wheat and honey.

Epiphany eve, or The Eve of the Epiphany- this is the time when everyone is preparing for the holiday. On January 19, the Epiphany of the Lord is celebrated. On Christmas Eve, water is consecrated in the Temples, which has all the properties of Epiphany water.

In Russia, on this day, the following order existed: after the family returned home from the Church, bringing the water consecrated in the Temple, everyone sat down at the table and broke their fast with the traditional sochis (kutya).

Recipe for sochiv (kutya). 1 cup of whole (peeled) wheat grains, a symbol of resurrected life, must be cooked so that you get a thin crumbly porridge. It is cooled, after which about 4 - 5 tablespoons of poppy seeds are added (a symbol of family wealth), which is preliminarily kneaded and mixed with 3 - 4 tablespoons of honey (a symbol of health and well-being). Before that, you can soak the poppy, and then crush it with a wooden pestle. Or grind in a coffee grinder. Instead of wheat, they sometimes take rice (less often barley), and replace poppy with almonds. Too thick porridge is diluted with water. At the very end, 100 g of chopped walnuts and steamed raisins are poured into the porridge. To prepare classic sochiv, you need: 1 glass of wheat, 100 g of poppy seeds, 100 g of peeled walnut, 3 tablespoons of honey.

Epiphany water

On the Eve of the Epiphany (Epiphany Christmas Eve), a liturgy is performed and the blessing of water is carried out. Water is consecrated on this day in the Temple. This is the first consecration of water. The second consecration of water takes place, according to Russian custom, on January 19. “The rite of consecration of water can be performed on the eve of the Epiphany and on the very day of the holiday. Among the beneficial properties of holy water, its healing properties are especially appreciated. They drink it (at least by a sip) in the morning on an empty stomach with prayer “In the name of the Father, and the Son, and the Holy Spirit. Amen".

Orthodox Christians sprinkle this water on their homes to protect them from evil spirits. Previously, it was customary for the head of the family to take a few sips of the consecrated water, then take out a willow branch from behind the icons and sprinkle the house.

Folk traditions, fortune-telling

The eve of the Epiphany, or Epiphany evening, was rich not only in fortune-telling, but also in various rituals protecting the family, home, cattle, etc. from all kinds of trouble. The rituals associated with Epiphany snow are interesting. Crosses were applied to them on windows and doors to protect dwellings, barns and other outbuildings from evil spirits. Chalk was sometimes used instead of snow. Epiphany snow was thrown into the well so that it did not dry out, and the water always remained fresh. The snow was collected and allowed to melt. The melted water was stored for a long time and was used for treatment and washing. It was believed to bleach canvas well. For this, snow was collected not somewhere, but from haystacks. Moreover, the collection of Epiphany snow was assigned to old women. The girls also did not miss the opportunity to collect snow from haystacks and wash themselves with melted water. They wanted to have white skin on their face. In some provinces, that evening, amulets were hung in the house - crosses made from joined torches.

There was also such a fortune-telling, in which the owner of the house himself took part. On Epiphany evening, he took out into the courtyard several bowls filled with different grains. I put them so that the chickens would not peck. In the morning I looked at which of the bowls had frost and which did not. Hoarfrost pointed to a grain crop that would be fruitful.
