To keep the finished baked goods soft and crumbly, place the prepared dough in the refrigerator for half an hour, then divide into portions, roll them out in a thin layer and cut into triangles. Place the cherries with sugar on a wide edge and slightly wrap the corners inward, then carefully roll the bagels with cherries.

Preparation:

Let's make a dough for bagels. Crumble fresh yeast into warm milk.


Add a spoonful of sugar to make the yeast come to life faster in a sweet environment. Now you need to wait for the dough to foam. During this time, we will prepare the second part of the dough. It is necessary to sift the flour through a sieve.


Add about half of the sugar to flour.


The butter will need to be melted over low heat until liquid and added to the flour.


Then pour in the foamed dough and knead the dough.



He needs to be allowed to stand for about two hours. When the bagel dough has risen, make the cherry filling. You should rinse and remove the pits from the cherries. For this I have a special device.


Sprinkle the cherries with sugar and boil over the fire.


Dissolve the starch in water and add to the cherries.


The filling is prepared.

Divide the finished dough into several equal parts and roll out into a layer 4–6 mm thick.

Step 1: prepare the dough.

In order to start making the dough, we need to warm up the milk. You do not need to bring it to a boil, the temperature should be about 35 - 40 degrees... This temperature is optimal for raising the yeast. So, in a deep plate or bowl, mix the yeast and 4 tablespoons Sahara. Then pour this mixture with warmed milk, mix and leave for a while, but for now let's start preparing the eggs. We rinse them under running water and wipe them with kitchen towels, then put two small deep plates in front of us and, breaking one egg, separate the yolk from the protein. We break the second egg into a plate with protein, but do not separate it anymore. Add 1 tablespoon of milk to the yolk and mix thoroughly until smooth, we will need this mixture later. We return to the yeast, pour the egg with protein into it, add the required amount of sifted wheat flour and salt to taste. After that, we begin to knead the dough until a homogeneous consistency without lumps.

Step 2: melt the butter.


Put a piece of butter in a small saucepan and put it on the burner. We turn on the temperature of the stove to a low level and, with constant stirring, melt the butter. Leave the liquid to cool to room temperature.

Step 3: knead the dough.

After the butter has cooled slightly, pour it onto our kneaded dough and, with clean hands, mix the fat into the dough right in a bowl. This process should take you about 7 - 10 minutes.

Step 4: preparing the cherries.

Put fresh cherries in a colander and rinse them under running water, then wipe them with a kitchen towel and transfer them to a cup or other convenient container. Add the remaining 2 tablespoons of sugar and mix thoroughly with the berries. If you use as a filling Cherry jam, then it is not necessary to add sugar.

Step 5: shape the bagels.

The filling for our bagels has been prepared, so we can proceed directly to baking. We spread our dough on a flat surface and cut it with a knife into 3 equal parts. After that, we arm ourselves with a rolling pin and roll each part into a round-shaped layer with a thickness of about 1 centimeter... Then we cut it into 8 about the same slices, in total, from a given amount of dough, 24 slices should be obtained, that is, 24 bagels. Then put the cherry filling on the edge of these slices with a teaspoon. We wrap the slice in a bagel, fasten the edges of our confectionery to prevent the filling from leaking out. Now we cover the baking sheet baking paper, lay out the formed bagels and leave them for 15 minutes next to the stove.

Step 6: bake the bagels.

Preheat the oven to 160 degrees Celsius and after 15 minutes, using a kitchen brush, grease the baking surface with a mixture of milk and egg yolk. Put the prepared bagels in the oven and bake on 10 minutes. During this time, they will be covered with an appetizing golden brown and fully cooked. We take out the finished baked goods from the oven, helping ourselves with kitchen oven mitts.

Step 7: Serve the airy cherry bagels.
