What is made from birch sap?

It is a little more difficult to prepare birch kvass (one of the options):

How to store birch sap

But what if you want to stock up on a wonderful drink for a longer period?

It is worth using the following methods:

  • Conservation: Heat the drink to 80 degrees, pour it into a pre-pasteurized glass container, seal it. Then additionally pasteurize containers with juice at a temperature of 90 degrees for 20 minutes. This method will keep the birch sap for six to eight months.
  • Freezing: A regular freezer will not work. This method will negatively affect the composition of the product. All that is needed is a quick, so-called shock freeze. Only fresh juice is needed for preservation and freezing. And for making kvass, one that has been stored for two days is also suitable.

Classic recipe

Ingredients:

For 10 liters of juice: 50 pieces of raisins and 0.5 kg of sugar.

Preparation:
